SUPER-EASY NO-BAKE CHEESECAKE
I was looking up cheesecake recipes, and they all either seemed too hard or needed baking. I made this up, it's sort of a combination of several of the recipes I found. The consistency is lovely, and it's pretty addictive. It is very rich, that's how I like it. I suppose you could freeze it if you wanted, but I haven't tried. It was perfectly good from the fridge. Excellent topped in homemade whipped cream!!

- Mix softened cream cheese, sweetened condensed milk, and vanilla with an electric mixer until thouroughly blended.
- Spoon into graham cracker crust.

TRIPLE BERRY NO-BAKE CHEESECAKE

Steps:
- In a small bowl, mix cracker crumbs, brown sugar and cinnamon; stir in butter. Press onto bottom and 1 in. up sides of an ungreased 9-in. springform pan. Refrigerate 30 minutes., In a large bowl, beat cream cheese, sugar and lemon juice until smooth. Gradually add cream; beat until stiff peaks form. Transfer to prepared crust. Refrigerate, covered, overnight., In a bowl, gently toss berries with sugar. Let stand 15-30 minutes or until juices are released from berries., With a knife, loosen sides of cheesecake from pan; remove rim. Serve cheesecake with topping.

BEST NO-BAKE CHEESECAKE
This is an amazing recipe that I just threw together one day. Everyone loves it so much, it doesn't last long. This is good with any kind of canned or fresh fruit.

Steps:
- In a small bowl, stir together the graham cracker crumbs, brown sugar and cinnamon. Add melted butter and mix well. Press into the bottom of an 8 or 10 inch springform pan. Chill until firm.
- In a medium bowl, beat together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick. Add the sugar and continue to beat until stiff. Pour into chilled crust, and top with pie filling. Chill several hours or overnight. Just before serving, remove the sides of the springform pan.
