SUNNY'S BUGS ON A LOG

Sunny's Bugs on a Log image

Provided by Sunny Anderson

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 10

1/2 cup creamy peanut butter
1/2 cup cocoa powder
1/4 cup honey
1 teaspoon cinnamon sugar (or a pinch of cinnamon and a teaspoon of sugar)
2 large avocados, halved, pitted and peeled
4 to 6 stalks celery (be sure to pick ones that can hold filling), cut into thirds, leaves set aside
4 ounces raspberries (ladybugs)
10 to 20 raisins (ants)
10 to 20 dried cherries (red ants)
10 to 20 pretzels or thin pretzel sticks (worms or stick bugs)

Steps:

  • For the filling: Add the peanut butter, cocoa powder, honey, cinnamon sugar and avocado to a food processor and blend on high until smooth and aerated. Scoop into a piping bag or sealable plastic bag. Refrigerate for 10 to 15 minutes.
  • For the logs and insects: Choose a tip for piping or cut a hole in the corner of the plastic bag. Place the celery leaves in the recess of the celery stalks and pipe the filling over them, leaving a bit of the leaves sticking up on the sides of each. Top with one of each "insect"--a raspberry, raisin, dried cherry and pretzel--along the length or make logs to your liking.

FANCY ANTS ON A LOG

Fancy Ants on a Log image

I think I'm going to alternatively name it "Gentlemen Ants On A Log". This is just yummy. I made it up for my sister's bug party--we're doing something a little more adult, and a little more fancy, so I updated the recipe for grown-ups (of course, it is still kid-friendly). I used a mixture of imitation honey and splenda--so yes, fiddle with the sweetness and honey flavor as you like.

Time 5m

Yield 18 logs, 18 serving(s)

Number Of Ingredients 6

6 stalks celery
4 tablespoons cream cheese
4 tablespoons unsalted creamy peanut butter or 4 tablespoons almond butter
1 teaspoon honey
raisins (or dried cranberries, or chocolate chips, or white chocolate chips)
rum (optional)

Steps:

  • Optional Step: Soak raisins in just enough rum to cover for at least one hour, or overnight. You can cook the rum first for a nonalcoholic version for kids. Drain before using.
  • Cut the celery stalks into 2-3 inch logs.
  • Cream together the cream cheese, peanut butter, and honey (the cream cheese and peanut butter can be eyeballed to equal parts; the honey is more to taste. When I'm done, it tastes almost like cheesecake).
  • Spread the peanut butter mixture into the valleys of each log. Alternatively, fill a dessert decorator and pump the peanut butter mixture into the valley like frosting.
  • Line up raisins along the center.
  • Variation:.
  • I won't put up a different recipe for every nifty ants on a log idea I come up with, so here are a couple of ideas:.
  • Spread nutella down the valley of the celery and garnish with raisins.
  • Or, spread Recipe #120220 over the valley of the celery and garnish with raisins.

ANTS ON A LOG (LUNCH BOX SURPRISE)

Ants on a Log (Lunch Box Surprise) image

For our 5 year olds lunch box for either snack time or lunch for his first year at kindergarten that are reasonably healthy but will bring a smile to his face when he finds them. Snacks cannot have peanuts or peanut butter this year. This recipe would also be good for long car trips.

ANTS-ON-A-LOG CAKES

Ants-on-a-Log Cakes image

We turned a classic childhood snack into a big treat.

Provided by Food Network Kitchen

Categories     dessert

Time 50m

Yield 3 cakes

Number Of Ingredients 7

3 16-ounce (family-size) frozen pound cakes
2 16-ounce tubs white frosting
1 stick unsalted butter, at room temperature
1 cup creamy peanut butter
2/3 cup confectioners' sugar
Green and yellow food coloring
12 pitted prunes

Steps:

  • Trim the long sides of each pound cake at an angle using a serrated knife. Use the knife to carve out a 1/2-inch-deep, 2 1/2-inch-wide channel down the center of each cake.
  • Cover the cakes with the frosting, leaving the bottom of the channel unfrosted. Use the back of a fork to make grooves in the frosting. Put the cakes in the freezer until the frosting sets, about 20 minutes.
  • Meanwhile, make the peanut butter filling: Beat the butter and peanut butter in a large bowl with a mixer on medium-high speed until light and fluffy. Beat in the confectioners' sugar on low speed until smooth. Set aside.
  • Mix a few drops of green food coloring in a small bowl with a drop of yellow food coloring and a splash of water. Brush onto the frosting. Adjust the color with more food coloring or water as needed.
  • Spread the peanut butter filling into the channel in each cake using the back of a spoon.
  • Arrange the prunes on top of the peanut butter filling.
