We have an annual strawberry festival in our town, so recipes with strawberries are popular here. I've served this salad at luncheons and have always received a lot of compliments.

2 cups sliced fresh strawberries
1 medium apple, diced
1 cup seedless green grapes, halved
1/2 cup thinly sliced celery
1/4 cup raisins
1/2 cup strawberry yogurt
2 tablespoons sunflower kernels

Steps:

  • In a large bowl, combine strawberries, apple, grapes, celery and raisins. Stir in the yogurt. Cover and refrigerate for at least 1 hour. Add sunflower kernels and toss.

Arugula Salad with Candied Sunflower Seeds and Strawberry Vinaigrette image

3 tablespoons strawberry jam
2 teaspoons sherry vinegar
Zest of 1 lemon
Juice of 1/2 lemon
1 clove garlic, minced
1 teaspoon Dijon mustard
1/2 teaspoon sriracha hot sauce
1/4 teaspoon sea salt
1/4 cup extra-virgin olive oil
1 teaspoon butter
2 teaspoons agave syrup
1/2 cup sunflower seeds, toasted
7 cups arugula (5 ounces)

Steps:

  • Preheat the oven to 400 degrees F.
  • To a blender, add the strawberry jam, sherry vinegar, lemon zest and juice, garlic, mustard, sriracha and salt. Blend well. With the motor running, slowly add the oil in a steady stream until the vinaigrette is emulsified and thick.
  • Melt the butter with the agave in a skillet over medium-high heat. Add the sunflower seeds, stirring to coat. Transfer to a parchment-lined baking sheet and sprinkle with the sea salt. Roast for 5 to 7 minutes, stirring halfway through. Remove from the oven, and let cool completely.
  • Arrange the arugula on a large serving platter. Scatter with the candied sunflower seeds, and drizzle with 1/2 cup of the dressing. Serve immediately.

2 tablespoons finely chopped onion
1 tablespoon sunflower kernels
1/2 teaspoon sesame seeds, toasted
2 tablespoons canola oil
2 tablespoons red wine vinegar
4-1/2 teaspoons sugar
1-1/2 teaspoons snipped fresh dill or 1/2 teaspoon dill weed
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon ground mustard

Steps:

  • In a salad bowl, combine the spinach, strawberries, onion, sunflower kernels and sesame seeds. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over salad and gently toss to coat. Serve immediately.
