GRILLED SIRLOIN STEAK WITH SUMMER VEGETABLE RAGOUT AND STEAK FRIES
Steps:
- Tomato mushroom sauce: Saute the garlic and shallots in olive oil until tender, about 4 minutes. Add the corn, mushrooms, and demi-glace and bring to a simmer. Reduce by 1/4. Add tomatoes and remove from heat. Swirl in whole butter and add salt and pepper, to taste.
- Tom's Steak Fries: Place potato in salted, cold water and bring to a boil. Reduce heat and simmer for approximately 20 minutes. Drain and cool potato. Quarter and deep-fry until golden brown. Season with salt and pepper.
- To assemble dish: Place grilled steak in the center of the dish. Spoon vegetables and sauce over the steak. Top with spinach and onion and drizzle with A1 dressing.
- Mix together all of the ingredients, to taste.
SIRLOIN AND SUMMER-VEGETABLE KEBABS WITH CHIMICHURRI
When you have a craving for that smoky, charred flavor, fire up the coals and thread veggies, onion, and balsamic-vinegar-marinated beef onto skewers. Serve the grilled kebabs drizzled with zesty chimichurri, a thick fresh-herb sauce.

- Marinate beef sirloin tips in 2 tablespoons balsamic vinegar, soy sauce, and freshly ground pepper in a shallow dish for 30 minutes. Soak 4 wooden skewers in water. Meanwhile, slice zucchini and summer squash into 1/2-inch rounds. Cut onion into wedges and red bell pepper into 1-inch pieces.
- Heat grill to medium-high. Thread beef onto skewers, alternating with vegetables. Grill for 7 to 8 minutes per side. Whisk together parsley, fresh oregano, garlic cloves, extra-virgin olive oil, balsamic vinegar, fresh lemon juice, and coarse salt. Drizzle sauce over kebabs.
SUMMER SIRLOIN
Tasty mushroom and steak dish. I found this in a 50's cookbook, and have been making it for a long time. Prep time does not include 2 hours marinating time.

Steps:
- Brush both sides of steak with olive oil.
- Sprinkle with 1/4 teaspoon of salt and 1/4 teaspoon of pepper.
- Place in shallow dish and pour Worcestershire over, rubbing to cover all the meat.
- Cover and refrigerate for 2 hours, then grill.
- In a large skillet melt butter over medium heat.
- Add mushrooms, 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Cook for about 5 minutes until just tender.
- Stir in half and half or cream.
- Bring to boiling, immediately reduce heat.
- Simmer uncovered for about 10 minutes or until slightly thickened.
- Keep warm while grilling steak to desired degree of doneness.
- Serve mushroom sauce with steak.
