I love to bring this delicious salad to school gatherings. The homemade dressing couldn't be simpler, so I whip it up in advance and just give it a quick toss with the other ingredients when I get to any event. -Kris Bristol, Charlotte, Michigan

- In a small bowl, whisk the first eight ingredients. Gradually whisk in oil. In a large bowl, combine salad ingredients. To serve, pour dressing over salad; toss to coat.

The subtle sweetness of blueberries is an unexpected addition to a salad of peppery arugula.

Steps:
- In a small bowl, whisk together ginger, vinegar, lemon juice, and salt.
- In a serving bowl, combine scallions, jicama, honeydew, bell pepper, and blueberries. Pour ginger mixture over salad, and toss to combine (salad can be made up to this point 30 minutes ahead of time).
- Just before serving, add arugula to salad mixture; drizzle with the oil, and season generously with black pepper.
