1 bottle (750 ml) vanilla-flavored vodka
9 cinnamon sticks
Marshmallow cream, for the glass
Fine graham cracker crumbs, for the glass
Cocoa powder, for the glass
1 ounce Drambuie (honey-flavored scotch)
1 ounce chocolate liqueur (preferably Godiva)
Dash of chocolate bitters
2 ounces heavy cream
1 teaspoon honey
Toasted marshmallow, for garnish (optional)

Steps:

  • Make the cinnamon-vanilla vodka: Pour the vodka into a jar; add the cinnamon sticks and cover. Store in a cool, dark place, shaking the jar every day or so, for 1 week. Strain; discard the cinnamon sticks.
  • Make the martini: Coat the rim of a martini glass with marshmallow cream (if it's too thick for rimming the glass, mix with some water). Sprinkle some graham cracker crumbs and cocoa powder on the marshmallow cream. Lightly toast the marshmallow rim with a kitchen torch.
  • Put 1 ounce of the cinnamon-vanilla vodka, the Drambuie, chocolate liqueur and chocolate bitters in a cocktail shaker filled with ice; shake until frothy. Strain into the prepared martini glass. Rinse out the shaker and refill with ice. Add the heavy cream and honey and shake vigorously (without the ice) until slightly thick. Spoon the heavy cream mixture over the cocktail. Garnish with a toasted marshmallow.

2 lobster tails, about 1/2 pound each
2 teaspoons olive oil
Salt
4 leaves lettuce
1 avocado, cut into quarters
1 plum tomato, minced
1 small ear corn, cooked, kernels cut from cob
1/4 cup minced cilantro
4 lemon wedges
4 lime wedges
4 pimento-stuffed olives

Steps:

  • Heat the grill to medium-high.
  • Cut the lobster tails in half lengthwise. Brush all sides of the tails with the olive oil. Grill the tails flesh side down for 5 minutes. Turn and grill until the lobster is opaque in the center, about 5 minutes. When cool enough to handle, remove the lobster meat from the shells and cut into 1-inch chunks. Lightly season with salt.
  • Line 4 martini glasses with a lettuce leaf. Stand an avocado quarter in each glass. Divide the lobster among the glasses. Top the lobster with the tomato, corn and cilantro. Thread each of 4 small wooden skewers with a lemon wedge, lime wedge and olive. Garnish each glass with a skewer.

1 1/2 pounds super-size jumbo shrimp -- precooked or, peeled and deveined, tail on
2 ribs celery, finely chopped
2 rounded spoonfuls prepared horseradish
1/2 lemon, juiced
1 teaspoon hot sauce
1/2 cup chili sauce
1/2 cup ketchup
1/2 cup vegetable juice (recommended: V8)
Salt and black pepper
1 lemon, wedged

Steps:

  • If you bought raw shrimp, steam shrimp until pink, about 5 minutes, then cold shock under running water. Place in freezer until ready to serve.
  • Mix celery, horseradish, lemon juice, hot sauce, chili sauce, ketchup and vegetable juice together and season with salt and pepper. Pour sauce into 4 martini glasses and surround rim with chilled shrimp. Serve lemon wedges alongside glasses on cocktail forks.

1 ounce dry vermouth
1/2 to 1 ounce lobster essence
Lemon peel, for garnish
Lobster claw, for garnish, optional

Steps:

  • Fill a shaker with ice and add the vodka, vermouth and essence (add more or less essence based on how "dirty" you like your martini). Shake vigorously until the shaker feels cold, about 20 seconds. Strain into a chilled martini glass and garnish with a lemon peel. Add a lobster claw, if using!

2 teaspoons brown sugar
1/4 teaspoon ground cinnamon
4 large or 8 small plums, halved and pitted
2 cups lemon sorbet
Candied peanuts and fresh mint for garnish, optional

Steps:

  • Coat an outdoor grill or stove-top grill pan with cooking spray and preheat to medium-high.
  • In a small bowl, whisk together melted butter, brown sugar and cinnamon. Brush mixture all over flesh side of plums. Grill plums, flesh side down, 5 minutes, until soft. Serve plums with lemon sorbet. Garnish with candied peanuts and mint, if desired.
