Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil; lightly oil the foil.

1 12-inch round Pie Crust

1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees. Lightly dust a clean work surface with flour, and roll pastry dough into a 12-inch circle. Line an 8-inch pie plate with pastry, and trim pastry so it's even with edge of plate. Decorate edge with leaf shapes cut from excess pastry. Chill.

3 large eggs

2/3 cup fresh pumpkin puree or canned pumpkin puree
1 teaspoon ground ginger
1 cup pecan halves
sweetened whipped cream as an accompaniment

Steps:

  • Roll out the dough 1/8 inch thick on a lightly floured surface and fit it into a 9-inch (1-quart) pie tin. Crimp the edge of the dough decoratively and chill the shell for 30 minutes.
  • In a heavy saucepan cook the sugar over low heat, undisturbed, until it is melted, cook it over moderately low heat, swirling the pan occasionally, until it is a deep caramel color, and stir in the corn syrup, stirring the mixture until it is combined well. Add the rum and the butter and cook the mixture for 1 minute. Remove the pan from the heat and let the mixture cool until it stops bubbling.

Pour the pumpkin mixture into the prepared shell, arrange the pecan halves decoratively on the mixture, and spoon the remaining egg mixture over the pecans. (The pecans will float to the top.) Bake the pie in the middle of a preheated 350°F. oven for 45 to 50 minutes, until the filling is set and the crust is pale golden, let it cook, and serve it warm or at room temperature with the whipped cream.

This came from my recipe #401813, in a desire to make pumpkin pie with no sugar. Here in England, we don't really have access to tinned pumpkin, and I don't buy things in tins, so I make this with fresh pumpkin or squash. It's a tasty pie, or could be baked as a custard. I bake it with a grain-free crust, mixing ground almonds, egg yolk and a bit of honey. Preparation time does not include preparing a pie crust.

200 g dates
200 ml water
2 eggs
2 tablespoons molasses
2 cups pumpkin (tinned, or steamed and processed)
1 cup milk
1 teaspoon cinnamon
1 teaspoon mixed spice
1 dash nutmeg

Steps:

  • Combine dates and water in a small saucepan and warm over low heat until the dates have softened and most of the water has been absorbed. Press through a sieve, discarding the remaining dry, fibrous bits.
  • In a mixing bowl, whisk the eggs and molasses.
  • Add the sieved dates, pumpkin, milk and spices.
  • Bake in a baking dish or pie shell in a preheated oven at 325°F/170°C for 40-45 minutes, or until a knife inserted near the centre comes out clean.

A diabetic-friendly pumpkin pie everyone can enjoy. I found this recipe in Your Health magazine. I have not tried this recipe, but I'm posting it for safe keeping.

9 inches single pie pastry
12 ounces pumpkin (1 can)
12 ounces fat-free evaporated milk
3 eggs
3/4 cup artificial sweetener
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt

Steps:

  • Roll pastry on floured surface into a circle 1-inch larger than inverted 9-inch pie plate. Ease pastry into pan; trim and flute edge.
  • Beat pumpkin, evaporated milk and eggs in a medium bowl; beat in remaining ingredients. Pour into pastry shell. Bake in a preheated 400-degree oven for 35-40 minutes or until a knife inserted near the center comes out clean.

Once you have made a pie with fresh pumpkin, you will never go back! I also mix this up the day before I want to bake it to allow the flavors to fully develop. Just store in fridge and pour in crust when you are to bake.

1 medium sugar pie pumpkin
1 1/2 tsp ground cinnamon
1/8 tsp ground ginger
1/2 tsp ground nutmeg
1/8 tsp ground mace
1/8 tsp ground cloves
1/2 tsp pumpkin pie spice
1 tsp vanilla extract
1 tsp orange zest
1/2 tsp salt
2 large eggs
14 oz sweetened condensed milk
1/4 c brown sugar, firmly packed
1 deep dish pie shell

Steps:

  • 1. Preheat oven to 425. Line a baking sheet with foil. Slice pumpkin in half. Remove seeds. Place cut side down on foil lined baking sheet. Bake at 425 for 30-45 min or until soft to touch. Turn off oven allow the pumpkin to sit in closed oven another 10-15 min. Move to counter and allow to cool for easier handling. Measure 2 cups pumpkin and set aside.
  • 2. Preheat oven to 425. In large bowl, combine spices, sugar, salt, zest and vanilla. Whisk eggs in to spice mixture. Add 2 c pumpkin and mix well. Add sweetened condensed milk and mix well. Pour into crust.
  • 3. Bake 15 min. Reduce temp to 350, bake an additional 35-40 min or until knife inserted 1 inch from crust comes out clean. Cool.

MY SKINNY PUMPKIN PIE (CRUSTLESS, LOW FAT, LOW SUGAR)



My Skinny Pumpkin Pie (Crustless, Low Fat, Low Sugar) image

I just tweaked a standard pumpkin pie recipe to use with my food program. This is "technically" a dessert but I also eat it for breakfast. I bake it in an 8" square baking pan because the batter doesn't all fit into a 9" round pie pan. Note that the more spice you use, the more sweetener is needed to balance the taste, so I don't go above 1 1/2 teaspoons of spice in this recipe.

3 large eggs or 2 jumbo eggs
1 cup vanilla almond milk, unsweetened
1 1/4-1 1/2 teaspoons pumpkin pie spice
5 drops liquid stevia extract (or to taste)
1 tablespoon agave nectar (or to taste)
1 (15 ounce) can pumpkin puree

Steps:

  • Blend almond milk and eggs. Add spices, stir until blended.
  • Add stevia and sweetener, stir until blended.
  • Add pumpkin, a few spoonfuls at a time; blend.
  • Pour into an ungreased 8 inch square baking pan.
  • Bake at 375 degrees F. about 30 min., or til small knife inserted in center comes out clean.
  • Cool in pan, then refrigerate.
  • If you want to make this richer, serve with cream or replace some of the almond milk with cream.
