OREO ICE CREAM PIE
Oreo Ice Cream Pie is the ultimate summer dessert with an easy cookie crumb crust, creamy ice cream filling, and easy whipped topping!

Steps:
- Stir together Oreo crumbs, sugar, and butter until well mixed.
- Add crust mixture to a pie plate and press down evenly.
- In a large mixing bowl whisk together Oreo ice cream and crushed Oreos.
- Pour into cooled pie plate.
- Add heavy cream, powdered sugar, Oreo Cookie crumbs, and vanilla extract to a stand mixer and beat on high speed until it holds stiff peaks.
- Spread onto the pie.
- Freeze for 4 hours before serving.
- Add additional crushed Oreos or shaved chocolate over the top before serving.

My husband is diabetic and has a sweet tooth. Finding desserts that satisfy him without him being able to "taste" that it's sugar free has been a challenge. This pie was a huge hit with my entire family.

Steps:
- 1. If you choose the traditional pie crust, bake according to directions and let cool. If you use graham cracker or cookie crust, go to step 2.
- 2. Carefully slice enough cookies in 1/2 to go around the outer rim of the pie for garnish. Place the rest of the cookies in a baggie, making sure to let out the excess air, then crush the cookies.
- 3. In a large bowl, with a wooden spoon, mix 1/2 of the ice cream and 1/2 of the crushed cookies together. Add the rest of the ice cream and crushed cookies a bit at a time until fully blended. BE SURE TO SET ASIDE A PINCH OF THE CRUSHED COOKIES TO GARNISH THE TOP OF YOUR PIE.
- 4. Pour the blended ice cream into the crust and smooth out. Place in the freezer for about 15 minutes to begin to harden.
- 5. Remove the pie from the freezer and top with the whole tub of Cool-Whip. Place the sliced cookies cut side down on the outer rim of the pie and sprinkle the rest of the pie with the reserved crushed cookies.
- 6. Return the pie to the freezer for at least 30 minutes, or until ready to serve.

- For the Crust:
- Crush sandwich cookies in the food processor until fine crumbs form. Press into the bottom, and up the side of a nine-inch springform pan.
- Bake at 350'F for 10 minutes and set aside to cool.
- For the Ice Cream:
- Beat egg whites and sugar until stiff peaks form. Meanwhile, place chocolate, margarine and vanilla sugar into a double boiler (or the microwave) and stir until melted.
- Once melted, allow to cool slightly and add the seven yolks, mixing quickly so the yolks shouldn't cook. Mix until well combined.
- Fold chocolate mixture into the snow and pour over the crust. Freeze.
- For the Topping:
- Whip up the dessert topping until soft peaks form.
- Slowly add coffee and instant vanilla pudding until stiff.
- Place into a decorating bag with star tip and pipe rosettes on the top of the ice cream pie.
- Garnish with additional cookies and crumbs.
- Serve.

- Scoop 6 scoops into the crust, or enough to fill to the top.
