Since I am dieting and have to watch my sugar, I came up with this staple and have many versions of the guilt free french toast-this is my new favorite...yummy! This recipe uses gluten-free bread Ezekiel 4:9 Whole Wheat/Cinnamon Raisin. I usually do overnight soaking them in the egg wash to soften them up, so they can retain the goodness and yumminess of the ingredients since the bread is very chewy-hard to begin with. This process does not make it soggy, makes it better to cook with!! This recipe is enough for four slices of the bread. Preparation includes overnight soak. Food.com does not recognize a new item on the market called Ideal Confectionery-Its a powdered sugar substitute that is almost the real deal-great on anything!! No after taste and all natural!!

1 egg white
1/4 teaspoon vanilla extract
2 tablespoons sugar substitute (granular)
1/4 cup skim milk (sometimes I use Almond milk)
1/2 teaspoon cinnamon
1/4 cup torani sugar-free caramel syrup or 1/4 cup vanilla syrup
4 slices whole wheat bread, cinnamon raisin (Ezekiel's 4 ( 9)
sugar-free syrup
sugar-free jelly or sugar-free jam

Steps:

  • Mix all ingredients together-whisk thoroughly in a small dish.
  • Dip both sides of the bread and set in a small overnight dish.
  • Add remaining of the egg wash to the french toasts.
  • Cover and refrigerate overnight.
  • Uncover and cook on stovetop with non-stick spray.
  • Serve warm with Ideal Confectionery (substitute powdered sugar), sugar free syrup or sugar-free jelly/jam!

8 Eggs
1 ½ cups Milk (- see post for details and alternatives.)
1 ½ cups Heavy Cream (- see post for details and alternatives.)
2 tsp Vanilla Extract
1 tsp Cinnamon
½ cup Surkin Gold (- see post for alternatives and details)
1 cup Sliced Strawberries

Steps:

  • Prepare the baking dish by coating it with nonstick spray. Then set the baking dish aside. Tear the bread into bite sized pieces (about 1 ½"). Then place the pieces into the baking dish. Spread the bread out to cover the entire dish.
  • In a large mixing bowl, use a whisk to mix together the eggs, milk, heavy cream, vanilla extract, and brown sugar alternative. Pour this over the bread that is in the large baking dish. Use the backside of a tablespoon to gently press the bread into the bread. Then distribute the strawberry pieces into the bread. Cover the baking dish and refrigerate from a half hour to up to overnight.
  • When you are ready to bake your French toast casserole, take the casserole dish out of the refrigerator, remove the cover, and allow it to get to room temperature.
  • Preheat the oven to 350 and bake until it begins to turn golden brown and the eggs are fully cooked (about 30-35 minutes). Allow this to cool for five minutes before serving.

Here's a super tasty and yummy low fat French toast recipe. My family loves French toast and this recipe is good for you as well as quick and easy. My mom always fixed French toast for us in the skillet. For those that aren't worrying about weight, you could use 6-8 eggs and regular milk.... We always topped this with powdered sugar when growing up.

2 (4 ounce) containers Egg Beaters egg substitute
1/3 cup skim milk
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 tablespoons margarine
10 slices French bread
maple syrup

Steps:

  • In shallow bowl, combine EGG BEATERS Original, milk, cinnamon and vanilla.
  • In nonstick skillet, over medium heat, melt 2 teaspoons margarine.
  • Dip bread slices in egg mixture to coat; transfer to skillet.
  • Brown about 3 minutes on each side.
  • Top with syrup if desired.
