I love this! Fast, easy, simple. It is not overly sweet or heavy like most cake frostings. My co-worker asks for a bowl of just this frosting for her birthday. She dips vanilla wafers or Oreo cookies into it.

1 (8 ounce) box sugar-free instant pudding mix
1 (12 ounce) container frozen whipped topping, thawed
2 tablespoons milk

Steps:

  • Pick your favorite flavor of sugar free instant pudding mix.
  • YOU MUST DO THIS! Take 2 tablespoons of milk and dissolve the pudding mix into it before adding the Cool Whip by folding it in gently. (This will get rid of any graininess). WARNING! If you over mix this, the frosting will become grainy or sticky!
  • Fold into the thawed whip topping.
  • Spread on cake or dip cookies, fruit or spoon now and eat!
  • Keep leftovers refrigerated.
  • My aunt has added drained pineapple or mandarin oranges and coconut into the frosting after step 2 (they are folded into the Cool Whip with the pudding/milk mixture).

OK so if you are HUGE carrot cake fan this will not completely satisfy you but it was seriously yummy and shoot 5 minutes from mixing to eating you just can't beat. I found this recipe on The World According To Eggface. I have not tried this recipe, but I'm posting it for safe keeping.

1 egg, beaten
3 tablespoons milk (I used Vanilla Soy)
2 tablespoons sugar free torani syrup (I used Sugar Free Vanilla)
2 tablespoons no sugar added strained carrot baby food
2 tablespoons canola oil
3 tablespoons multigrain pancake mix (I use this)
1 teaspoon cinnamon
1 tablespoon pecans, chopped
1 tablespoon raisins
1 scoop vanilla protein powder
1 pinch salt
cream cheese
ricotta cheese
sugar free torani syrup or sugar-free maple syrup
pecans

Steps:

  • In a measuring cup or microwave safe mug, Mix egg, milk, syrup, carrot and oil and combine thoroughly. In a separate bowl, mix pancake mix, cinnamon, nuts, raisins, protein powder and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes. Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices. Top with Cream Cheese Frosting.
  • Cream Cheese Frosting: Equal parts Cream Cheese, softened and Ricotta Cheese sweetened with Sugar Free Torani Syrup or Sugar Free Maple Syrup to taste. Mix in a few chopped pecans.

2 cups brown rice flour or 2 cups sorghum flour
1/2 cup tapioca flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons xanthan gum or 1 1/2 teaspoons guar gum
1/2 teaspoon sea salt
1 1/2 cups boiling water
1 cup prune
1/2 cup virgin coconut oil
1 cup maple syrup or 1 cup agave nectar
2 tablespoons apple cider vinegar
1 tablespoon vanilla
2 cups organic palm shortening (Spectrum)
1 cup arrowroot
1 cup agave nectar or 1 cup maple syrup
4 teaspoons non-alcoholic vanilla
2 teaspoons almond flavoring (non-alcoholic)
2 -4 teaspoons beet juice (optional)

Steps:

  • Preheat oven to 350 degrees F. Grease two 9-inch cake pans.
  • In a medium sized bowl place the brown rice flour, tapioca flour, cocoa powder, baking soda, xanthan gum, and sea salt; mix together well with a fork or wire whisk.
  • Place the prunes in a small bowl and pour the boiling water over them. Let stand for about 10 minutes.
  • Place the prunes and water into a blender and add the coconut oil, maple syrup, water, apple cider vinegar, and vanilla. Blend until very smooth. Pour the wet ingredients into the dry and mix well, though be careful not to over mix.
  • Immediately pour batter into prepared pans. Bake for about 25 minutes. Let stand for a few minutes in the pan and then gently invert onto a wire rack to cool. Let cool completely before frosting.
  • Frosting.
  • Place all ingredients into a mixing bowl and whip up with an electric mixer until light and fluffy. This can be made a day ahead of time, stored at room temperature Just re-whip before frosting the cake.
