Steps:
- Combine water and sugars in a very large saucepan over medium heat.
- Heat until the mixture is boiling and all sugar is dissolved.
- Reduce heat to low and continue to simmer for approximately 2 hours until mixture is thickened and syrupy and lightly coats a spoon.
- Remove pan from heat and allow to cool for 10 minutes.
- Add vodka and extracts and stir well.
- Pour into a bottle and seal.

Steps:
- Spread amond flour in a baking pan and bake in a preheated 325°F oven for 4 minutes or until lightly toasted. Let cool.
- With an electric mixer, beat cheese and splenda until smooth. Mix in eggs, vanilla, Amaretto and sour cream.
- Pour batter into a greased 9-inch springform pan. Sprinkle garnish almonds on the top.
- Bake in the middle of a preheated 325°F oven for 25 minutes or until just barely set. Turn off the oven, leave the door ajar, and let cool in the oven for 1 hour longer. Chill. To serve, remove pan sides and cut into wedges.

My husband loves the flavor of amaretto, but,whew, it's full of calories. This is a more "healthy" version!

Steps:
- Blend water and sugar substitute in bowl or large pitcher until completely dissolved. Add remaining ingredients and stir well. Allow to sit for a day or two to blend. I keep it in the frig. but you probably don't have to.
