BROWN-SUGAR SPICE CAKE WITH CREAM AND CARAMELIZED APPLES

Steps:
- Put oven rack in middle position and preheat oven to 350°F. Lightly butter and flour cake pan, knocking out excess flour.
- Make caramelized apples:
- Peel and core apples, then cut into 1/2-inch-thick wedges.
- Spread softened butter in an even layer over bottom of a 12-inch heavy skillet and sprinkle with brown sugar. Add apple wedges and cook over moderate heat, without stirring, until sugar is melted and apples start to give off liquid, about 10 minutes. Cook, stirring occasionally, until apples are just tender and juices become syrupy, about 30 minutes more.
- Pour syrup from skillet into a small heatproof bowl, then sauté apples, stirring occasionally, until caramelized and very tender, about 30 minutes more. Return syrup to apples and cook until heated through, about 2 minutes.
- Make cake while apples cook:
- Whisk together flour, baking powder, baking soda, salt, and spices in a bowl.
- Beat together butter and brown sugar in a large bowl with an electric mixer at medium speed until pale and fluffy. Beat in egg until combined. Add maple syrup, sour cream, and vanilla and beat until combined well. Reduce speed to low and add flour mixture, then mix until just incorporated.
- Spread batter in cake pan and bake until cake is golden brown and a wooden pick or skewer inserted in center comes out clean, 35 to 40 minutes. Cool in pan on a rack 10 minutes.
- Make cream just before serving:
- Beat cream with sour cream and sugar using cleaned beaters at high speed until it just holds soft peaks.
- To serve:
- Run a thin knife around edge of pan, then invert cake onto a plate and cut into squares. Serve warm or at room temperature, topped with warm apple mixture and cream.

- Preheat oven to 350 degrees. Coat two 8-inch round cake pans with cooking spray, line with parchment, and spray parchment. Sift flours, baking powder, cinnamon, nutmeg, cloves, and 1/2 teaspoon salt into a bowl.
- Beat butter and sugar with a mixer on medium speed until pale and fluffy, about 3 minutes. Beat in eggs, 1 at a time, then vanilla. Reduce speed to low. Add flour mixture in 3 additions, alternating with milk, beginning and ending with flour. Continue to beat until smooth, about 1 minute more.
- Divide batter among cake pans, and bake until a toothpick inserted into the centers comes out clean, about 40 minutes. Transfer pans to wire racks, and let cool for 20 minutes. Turn out cakes from pans, remove parchment, and flip right side up. Let cool completely.
- Trim tops of cakes to create a flat surface. Cut cakes in half horizontally. Spread 1/2 cup jam onto 1 layer, then spread 1 cup frosting over jam. Top with another cake layer. Repeat layering cakes with jam and frosting, leaving top layer (bottom side up) uncovered.Spread remaining frosting on top of cake, and garnish withcinnamon-sugar.

- Heat oven to 350°. Grease bottom and side of round pan, 9x1 1/2 inches, or square pan, 8x8x2 inches, with shortening; lightly flour.
- Mix flour, sugar, cinnamon and salt in large bowl. Cut in shortening, using pastry blender or crisscrossing 2 knives, until mixture is size of small peas; reserve 1/3 cup.
- Stir remaining ingredients into flour mixture with spoon until well blended. Pour into pan. Sprinkle reserved flour mixture over batter.

- Heat oven to 400°F. Spray 9-inch square pan with cooking spray. In medium bowl, stir Bisquick mix, 2 tablespoons sugar, the milk, 2 tablespoons butter and egg until well blended. Spread batter evenly in pan.
- Arrange apple slices in 3 rows, overlapping slices slightly, on batter. Brush 1/4 cup melted butter over tops of apple slices.
- In small bowl, mix 2 tablespoons sugar and the cinnamon; sprinkle over apples.
- Bake 16 to 18 minutes or until edges are golden brown. Cool 15 minutes before serving. Cut with serrated knife into squares.
