Simple, savory, sweet, spicy (that is up to you)... I can't even guess how many times I have whipped up this quick spread for guests with rave reviews. This is one of my favorite appetizer dishes because it is so easy and has so much flavor. I use my own recipe for cocktail sauce (#287829 Kicked Up Cocktail Sauce) with this recipe but you can also used bottled..

8 ounces cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise (or Salad dressing)
3 cups shrimp (cooked and roughly chopped) or 3 cups prawns (cooked and roughly chopped)
1 cup seafood cocktail sauce (I use this Kicked up Cocktail Sauce)
2 cups mozzarella cheese, shredded
1 green bell pepper, chopped fine
3 green onions, chopped
1 tomatoes, medium size seeded and diced
8 prawns, cooked with tails on for presentation (optional)

Steps:

  • Cream the first 3 ingredients together in a bowl. Spread over a 12 inch (30 cm) pizza pan or flat platter. (Note: I like to make a small lip around the edge so all the toppings stay inside).
  • Scatter shrimp over cheese mixture. Add the rest of the ingredients sprinkled in these layers over cheese mixture and shrimp/prawns. Seafood cocktail sauce (spread around), mozzarella cheese, green peppers, green onions and tomato.
  • Place presentation prawns over top of the spread.
  • Best served with crackers (I like Wheat Thins).

This is a favourite with friends and family and I usually have to make much more than a single recipe calls for. Wonderful for that 'something special' needed for the holidays.

2 lbs uncooked jumbo shrimp, shelled and deveined or 2 lbs frozen shrimp, thawed
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoons fresh lemon juice
4 -5 cloves garlic, minced
4 tablespoons mayonnaise
1 1/2 cups Ritz cracker crumbs (or similar)
1 teaspoon crushed dried basil leaves
1 tablespoon fresh dill, minced or 1/2 teaspoon dried dill
1/2 cup melted butter
4 tablespoons extra virgin olive oil

Steps:

  • In a medium bowl, combine salt, pepper, lemon juice, garlic, and mayonnaise; stir until well blended; place shrimp in a large resealable plastic bag, pour marinade over shrimp and close bag; marinate in the refrigerate several hours or overnight; remove from refrigerator; drain, reserving marinade in a bowl.
  • Preheat oven to 400F; in a medium bowl, combine bread crumbs, basil, and dill; coat each shrimp with crumbs and place in a single layer in a large shallow baking dish.
  • To remaining marinade, add butter and olive oil; pour over shrimp.
  • Bake for 8 to 10 minutes or until opaque in center (cut to test); remove from oven; serve with plenty of crusty bread for the sauce.

This recipe is easy, quick, and gives the impression of a gourmet chef! The ingredients are simple, but the taste is truly "succulent"!

1 lb unpeeled large fresh shrimp or 1 lb unpeeled large defrosted shrimp
3 cloves garlic, minced
1/4 cup olive oil
1/2 cup unsalted butter
1/4 cup dry white wine
crushed red pepper flakes
chopped parsley (dried works just as well)
8 ounces pasta or 8 ounces rice

Steps:

  • First, Peel shrimp and devein if desired.
  • Then, saute garlic in olive oil for about 1 to 2 minutes.
  • Next, add the butter and shrimp.
  • Cook until shrimp are somewhat pink.
  • Finally, stir in wine and red pepper.
  • Reduce heat and allow shrimp fully cook.
  • When finished, sprinkle with parsley and serve over pasta or rice.
  • A few notes: Many of the ingredients can be altered to your own taste.
  • I recommend the following: 1/4 tsp of crushed red pepper1/4 cup of FRESH or 1/8 cup of dried parsley.
  • add more butter if you'd like.
  • serve over angel hair pasta.

This is another recipe I found in a pamphlet from the grocery store. I love this served with crackers. I've also served this in a bread bowl with chunks of bread for dipping.

1/2 lb cooked shrimp, finely chopped
1 (13 ounce) can artichoke hearts, drained and finely chopped
1 cup mayonnaise
1/2 cup parmesan cheese
1/4 teaspoon lemon pepper, with dill seasoning
1/8 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • Preheat oven to 400 degrees.
  • Combine all ingredients and stir well to mix.
  • Place the shrimp mixture in a 1 quart shallow baking dish.
  • Bake at 400 degrees for approx.
  • 10 minutes or until hot and bubbly.
  • Serve with assorted crackers.

NO-BRAINER SHRIMP SPREAD



No-Brainer Shrimp Spread image

A variation of the ultimate lazy appetizer recipe from the 80's, when you threw shrimp over a block of cream cheese, poured cocktail sauce over it, and served with crackers. I do it this way for a bigger group and also because it's easier to spread on crackers. Note: Many times I use 3 cans (or 1/4 lb. fresh) shrimp, so I can satisfy greedy shrimp lovers who are there. (Note: You may not need to use the whole bottle of cocktail sauce -- use your judgement adding enough to cream cheese to make it spreading consistency and adding a layer of sauce on top of the mixture.)

2 (6 ounce) cans cocktail shrimp, drained or 1/4 lb fresh cooked shrimp, diced
2 green onions, sliced thin
1 (12 ounce) bottle shrimp seafood cocktail sauce

Steps:

  • Mix together softened cream cheese, 2/3 of shrimp, sliced onions and 1/2 bottle of shrimp cocktail sauce.
  • Mix well, adding more cocktail sauce if necessary to make mixture a spreading consistency.
  • Put in a serving bowl, put a thin layer of cocktail sauce over spread to cover top, then arrange remaining shrimp over that to decorate the appetizer.
  • Chill, then serve with crackers of your choice.
