BACON WRAPPED STUFFED JALAPENO PEPPERS



Bacon Wrapped Stuffed Jalapeno Peppers image

This recipe is always a crowd favorite. I got the original from food network with a slight modification. You can play with the ingredients to suit your taste. Enjoy!

12 -24 large jalapeno peppers (as large as possible)
16 ounces cream cheese, room temp. (2 packages Philadelphia works best)
4 large garlic cloves, minced
1/4 cup finely chopped sun-dried tomato
2 tablespoons finely chopped fresh cilantro
1/2 teaspoon coarse sea salt (to taste)
1 lb bacon
toothpick, soaked for about 15 minutes in water

Steps:

  • Mix cream cheese, garlic, sundried tomatoes, cilantro and salt until well blended. You can now set the mixture aside or even freeze for up to a couple of months in a freezer bag.
  • You'll want to wear some kitchen gloves for this step! Slice the jalapeños lengthwise, being careful not to slice them in half. Then slice at the top along the width of the pepper just about a quarter inch below the base of the stem until you cut through the core, again being careful not to cut completely through the pepper (This step will probably take some practice). Now you need to decide whether you want to keep the seed webbing for those that like it really hot, or remove them for a lot less heat. I like to do about half and half so that you can please everyone. Anyway, if removing the seeds, gently remove the core using a paring knife by spreading the pepper carefully, you may need to shake some of the remaining seeds out.
  • Separate the strips of bacon and cook in the microwave for about 5 minutes on high, just enough to give it a head start. Then pat dry with paper towels. Just to soak up some of the grease. Set it aside to cool.
  • Fill either a pastry bag or just a freezer bag (cutting one corner out), and pipe some of the filling into each pepper until full but still able to almost close the pepper.
  • Wrap each pepper with a strip of bacon then use two or three toothpicks to secure the pepper closed.
  • Place the jalapeños on a medium heat grill and cook until the bacon is crisp. you'll need to turn frequently to heat them evenly. you may even want to use foil to prevent the mess. I find that by cooking the bacon a little first and not over filling that you'll get minimal mess however.
  • Let them sit for about 5 to 10 minutes and serve them up! Don't forget which ones have the seeds!

10 large jalapeno peppers, with stems
1 (8 ounce) package Philadelphia Cream Cheese
3/4 cup shredded cheddar cheese
1 ounce hidden valley ranch dressing mix
1 (12 ounce) package bacon

Steps:

  • cut a slit in each jalapeno pepper so that you can open it up. Remove the entire contents of the inside of the pepper. Leaving some of the placenta and seeds will result in a hotter pepper, so how much you clean on the inside is totally up to your taste. I recommend using disposable latex gloves while doing this, because failure to do so may result in unintended pains later -- particularly if you are a male :).
  • Preheat oven to 375 degrees.
  • Soften the cream cheese in the microwave for about 20 seconds.
  • Place the cream cheese in a bowl.
  • Add the ranch dressing powder and the grated cheese to the bowl with the cream cheese. MIx well.
  • Fill the jalapenos with the creame/ranch/cheese mixture.
  • Trim any excess fat from the bacon, preferably with kitchen scissors.
  • Wrap all of the peppers with the bacon.
  • Cook at 375 degrees for about 40 minutes. Keep an eye on them, because depending on the fat in the bacon, thickness of the bacon and so on, your time will vary. This can also be put on a grill -- it will take far less time but will demand your constant attention.
  • Enjoy the best stuffed jalapeños you have ever had.

My husband and his friends love to munch on these when they get together to watch basketball or football. Warning!!! These are NOT for the taster who's mild at heart!! 4 cloves garlic, minced
¼ cup chopped sun-dried tomatoes (not oil-packed)

1 pound thinly sliced bacon

Steps:

  • Preheat a grill for medium-high heat. When the grill is hot, lightly oil the grate. Soak toothpicks 20 minutes in water.
  • Place the cream cheese in a bowl, and mix in the garlic, sun-dried tomatoes, basil, and salt until evenly blended.
  • Make one slit from end to end in the side of each jalapeno pepper, and scoop out the seeds. Spoon the cream cheese mixture into the center of each pepper. Wrap 1 piece of bacon around each pepper, and secure with a toothpick.

1 (10 ounce) can whole pickled jalapeno peppers, drained,divided
2/3 cup pimento cheese
3/4 cup all-purpose flour, divided
1/4 cup cornmeal, plus
2 tablespoons cornmeal

1 cup buttermilk
vegetable oil

Steps:

  • Cut stems from peppers.
  • Remove seeds, using a small sharp knife (do not split peppers).
  • Stuff each with pimiento cheese.
  • Cover and chill at least two hours.
  • Combine 1/4 cup flour, 2 tablespoons cornmeal, and next 3 ingredients; set batter aside.
  • Combine remaining 1/2 cup flour and 1/4 cup cornmeal.

  • For the stuffing: Mix all and chill for 1 hour.
  • Spoon or pipe in about 1 tablespoon (don't over fill--chili should close). Refrigerate until ready (this could be done the day before).

4 ounces cream cheese, room temperature
3 tablespoons onions, finely chopped
1/2 cup cheddar cheese, shredded
1/4 teaspoon black pepper

1/4 teaspoon Old Bay Seasoning

Steps:

  • In a two-quart sauce pan, bring one quart of water to a rolling boil.
  • While it is reaching a boil, Cut a long flap in each jalapeno, starting from the shoulder and running close to the tip; this should be an elogated"V" shaped flap.
  • Lift the flap and clean out the fibers and seeds (this is where most of the heat is); I use either a round-tipped peeling device or a teaspoon.
  • When water reaches boiling point, immerse cleaned peppers in the water and reduce heat to medium.
  • Let peppers parboil for about 10 minutes-- better that they be a little undercooked then overcooked.
  • Mix the rest of the ingredients together, turning and blending until the cream cheese is well mixed into the rest of the ingredients.
  • If the mixture seems too dry, add a little sour cream, pickle juice, vinegar, anything in the fridge you think might add a touch of individuality.
  • Remove peppers, dump into a strainer, and run cold water over them.
  • Lift the flap of each pepper and stuff the cheese mixture into the pocket; fold the flap backdown over the stuffing.
  • A little overstuffing is OK.
  • Place the peppers on a sprayed pan and bake at 400 degrees for about 10- 15 minutes; just until the cheese begins to melt out of the peppers.
  • Remove and let cool for about 4- 5 minutes so the cheese sets up a little.
  • Serve with a few crackers or tortilla chips, and your favorite beer.
  • Parboiling the peppers removes a substantial portion of the raw heat, but leaves enough to give a nice burn to the mouth.

Great chili dish. You can make this without the chorizo and it's like a chili relleno.

8 large jalapeno peppers
8 ounce(s) chorizo casing removed
2 cup(s) queso chihuahua shredded and divided you can use monterey jack cheese instead
1/4 cup(s) butter
2 tablespoon(s) flour
1 1/2 cup(s) chicken broth
6 ounce(s) tomato paste
1 tablespoon(s) oil
1 medium onion diced
4 clove(s) garlic minced
3 large eggs
1/4 teaspoon(s) salt
1/3 cup(s) flour
3 tablespoon(s) oil

Steps:

  • Roast the jalapenos in broiler until blistered. Place in paper bag and let sweat until cooled. Gently peel off the outer skin and slit down one side. Gently remove the seeds from the stem to the bottom. Set aside.
  • Brown the chorizo. Drain and add half the cheese and cook until cheese is melted. Fill each Jalapeno with mixture and secure with toothpick. Set aside.
  • Saute the onions and garlic in 1 tbsp oil until softened. Set aside.
  • To make the sauce add the butter to a saucepan over medium heat. Add the flour and make a roux. Stir in the chicken broth. Add the tomato sauce. Cook until thickened. Stir in the onions and garlic. Set aside.
  • Separate the egg yolks from the egg whites. Beat the whites until soft peaks. Add the salt and one egg yolk at a time. Dust each jalapeno with flour and dip into the egg mixture. Fry in 3 tbsp oil until browned. Do in batches to not crowd the pan.
  • Place the jalapeno's in baking pan. Top with sauce and the remaining cheese. Broil on high until cheese is melted.

1 lb chorizo sausage
2 cups grated cheddar cheese
12 large jalapenos
1 lb bacon
toothpick

Steps:

  • Cut the peppers in half and remove all the membranes and seeds from each half and set aside.
  • Mix the chorizo sausage with the cheddar cheese (you could use turkey chorizo or another spicy sausage in place of chorizo, if you prefer).
  • Roll the chorizo and cheese mixture into balls (about ping-pong ball sized) and fill each jalapeno half with sausage before wrapping with a slice or 2 of bacon.
  • Stick a toothpick through the bacon and jalapeno to keep the whole thing together.

  • Rinse peppers again with cold water and dry on paper towels

4 jalapeños
4 oz cream cheese (fat-free)
2 garlic cloves minced
A dash of salt
A dash of pepper
¼ cup of shredded cheese
¼ chicken breast boiled
1 tsp smoked paprika
2 slices of turkey bacon

Steps:

  • Preheat oven to 400.
  • Slice 4 jalapeños long ways.
  • Hollow out the jalapeño halves and set aside.
  • Melt cream cheese for 30 seconds in the microwave.
  • Put cream cheese in a medium sized bowl.
  • Add all of the spices and mix thoroughly. Set aside.
  • Fry 2 slices of bacon until crispy. Crumble bacon into cream cheese mixture. Mix thoroughly.
  • Spoon mixture into jalapeño halves. Place the jalapeños into a casserole dish.
  • Place in oven for 15 minutes or until the jalapeños are tender and the cheese is melted.
  • Remove from oven, let cool for 5 minutes and then serve.

1/2 lb. (8 oz.) VELVEETA, cut into 24 pieces (about 2x1/2x1/2 inches each)
12 medium fresh jalapeño peppers (about 1/2 lb.), cut in lengthwise half, seeded
1/2 cup milk
1 cup flour
1/2 cup seasoned dry bread crumbs
1 bottle (24 oz.) peanut oil, for frying

Steps:

  • Press 1 piece of VELVEETA in each pepper half. Dip peppers in milk, then in combined flour and bread crumbs, turning to evenly coat all sides. Repeat to coat each pepper twice. Place on baking sheet.
  • Freeze 5 hours or until firm.
  • Add 6 peppers to hot oil (400°F). Fry 5 minutes or until golden brown. Remove from oil; drain on paper towels. Repeat with remaining peppers. Serve warm.

10 -12 large fresh jalapeno peppers
8 ounces mozzarella cheese
8 ounces monterey jack cheese or 8 ounces monterey jack pepper cheese
8 ounces of cabot cheddar cut in sticks (for stuffing)
2 medium sized tomatoes, wedge cut
1/2 cup purple onion, finely diced
1/2 cup white wine

Steps:

  • Bring a pot of water to a boil, and par-boil the Jalapenos for 3-4 minutes. Drain. Cool.
  • Cut a slit lengthwise along one side of each pepper, leaving the stem intact.
  • Using a teaspoon / paring knife, carefully scrape out the core and seeds of each pepper.
  • Now stuff the peppers with sticks of cheese.
  • In a casserole dish, add the sliced tomatoes.
  • Add the red onion.
  • Add the white wine. Salt and pepper to taste. (proper seasoning - important).
  • Place 8 oz. shredded Mozerella on top in the middle of the tomatoes and onion.
  • Arrange the dozen peppers in a circle, or aside each other on top of the cheese.
  • Add the remaining shredded cheese in the middle of the peppers in one large "pile".
  • Season top with paprika lightly for additional color.
  • Preheat oven to 350 degrees. Bake for approximately 25 minutes, until golden brown, and cheese is evenly melted.
