4 slices 2% American or part-skim cheddar cheese slices ((0.7 ounces each))
1 pound 93% lean ground turkey
1 teaspoon kosher salt
black pepper (to taste)
4 whole wheat 100 calorie hamburger rolls (I use Martins potato)
4 crisp Iceburg lettuce slices
red onion (sliced and separated)
sliced ripe tomatoes
sliced pickles
ketchup and mustard (optional, if desired)

Steps:

  • Set grill to medium heat. Clean and oil the grates.
  • Fold each slice of cheese into quarters to create 4 short stacks.
  • Divide the ground turkey into 8 equal balls then flatten into 1/4 inch thick patties.
  • Place a stack of cheese in the center of 4 patties and top with the remaining 4 patties. Pinch the edges to seal, then push the up the sides so they are an even thickness. Season both sides with salt and black pepper.
  • Place patties and oiled grill and cover, cook about 6 minutes per side over medium heat, or until the center is cooked through. Transfer to buns with toppings and be sure to let it cool before biting into the center so you don't burn your mouth.

1 pound lean ground turkey
1/2 teaspoon garlic powder
½ teaspoon onion powder
1 1/2 Tablespoons ketchup
1 Tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
¾ teaspoon salt
½ teaspoon freshly ground pepper
1/3 cup bread crumbs
1 egg
4 buns
1 tablespoon canola oil (, or use pan spray)
Condiments: ketchup, mustard, mayonnaise, BBQ sauce
Toppings: lettuce, tomato, onion, pickles, avocado

Steps:

  • Mix together: To a mixing bowl add turkey, garlic powder, onion powder, ketchup, mustard, Worcestershire sauce, salt and pepper, egg and breadcrumbs. Using a fork, mix together-try not to mix it too much.
  • Shape into 4 patties about ½ inch thick- they will be really moist.
  • Use your thumb to make a depression in the center of each patty. If grilling, place the patties on a parchment lined plate and freeze for 20 minutes.

1/2 cup shredded part-skim mozzarella cheese
1/4 teaspoons salt

Steps:

  • Divide turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Sprinkle 4 of the patties with 2 tablespoons red peppers and cheese, and top with remaining patties, working the turkey around the edges to seal burgers closed. Season with salt and a few grinds of pepper. Grill or broil until cooked through, about 5 minutes per side.

1/2 medium onion
1 pound lean ground turkey
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
3/4 teaspoon salt
Freshly ground pepper to taste
4 hamburger buns, preferably whole wheat
1 tablespoon canola oil, or use pan spray
Sliced tomato
Sliced onion
Iceberg lettuce
Pickles
Sliced red pepper

Steps:

  • Grate the onion on the fine holes of a grater. You should have about two tablespoons of grated onion (and a lot of juice, which you can discard). Place in a bowl with the ground turkey, Worcestershire sauce, ketchup, salt and pepper. Using a fork, mix together well. Shape into four patties - the mixture will be quite moist - and press the patties into ½-inch thick rounds.
  • Heat the canola oil in a nonstick griddle or large nonstick frying pan over medium-high heat. (Alternately, spray the griddle or pan with pan spray.) 1 egg, lightly beaten

Steps:

  • Combine the turkey, salt, pepper and parsley in a large bowl and mix with a fork or clean hands to season evenly. Add the egg and milk and stir to combine.
  • Divide the meat into four portions with damp hands and gently pack into four round patties, about 3/4-inch thick. (It will feel very sticky because of the egg, which helps burgers hold their shape as they cook.) Place burgers on a parchment-lined baking tray or plate. In the final 2 minutes of cooking, add the remaining 4 cheese slices to the burgers, to melt.
  • Remove the burgers from the heat and layer onto the buns with the avocado and any other burger toppings you desire. Serve warm.

1 large jalapeno
1 1/2 lbs ground turkey
4 slices muenster cheese
4 -5 pimento stuffed olives, sliced
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon oil

Steps:

  • Place jalapeno in cast iron skillet.
  • Cook over low heat till skin is blisterd and blackened slightly.
  • (10 or 15 minutes) Remove from skillet and let cool.
  • Peel off skin and remove seeds (if you like heat leave them),.
  • Coarsely chop.
  • Divide turkey into 8 pieces.
  • Gently press or pat to make rounds about 4 in in diameter.
  • Layer cheese, pepper and olives on the 4 patties.
  • Top with the remaining 4 patties.
  • Pinch edges together to seal.
  • Season with salt and pepper.
  • Heat oil in large non-stick skillet over medium heat.
  • Add patties and cook until brown on first side, about 3 to 4 minutes.
  • Flip and cook till browned, 2 to 3 minutes more.
  • Reduce heat to low and cook till meat is no longer pink but juicy, 6 to 8 minutes.
