10 each cherry peppers
1 (7 ounce) package mozzarella cheese
5 slices prosciutto
2 cups olive oil
3 tablespoons grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon chopped fresh oregano
1 teaspoon chopped fresh thyme
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon red pepper flakes

Steps:

  • Core out peppers by cutting a circle, at an inward angle, around the stem. Remove tops and scoop seeds and membranes out, like a tiny pumpkin.
  • Cut thumbnail-size cubes of mozzarella, varying size a little bit to fit each pepper. Cut prosciutto slices in half. Wrap each half around mozzarella cubes and stuff into the open peppers.
  • Pour olive oil into a jar or lidded container. Stir in Parmesan cheese, garlic, oregano, thyme, salt, black pepper, and red pepper. Whisk together well.
  • Add peppers to the oil mixture and seal the lid. Let marinate for 5 to 6 hours. Serve straight out of the jar.

PICKLED STUFFED CHERRY HOT PEPPERS



Pickled Stuffed Cherry Hot Peppers image

One day my hubby and I were at one of our local grocery stores which has a lot of nice things on their salad bar. I saw these and tried them and wow they were amazing but so expensive. So I took one home and took it a part and this is what I came up with. We grew Cherry Hot Peppers this year so that even made them cheaper!

10 fresh hot cherry peppers
3 oz italian prosciutto
1 c extra virgin olive oil
3 large fresh garlic cloves, peeled and smashed
3 Tbsp balsamic vinegar, good quality
3 Tbsp apple cider vinegar or white vinegar
3 sprigs of fresh oregano
1 tsp kosher salt

Steps:

  • 1. Combine the oil, garlic, vinegars, oregano and salt in a small sauce pan. Bring to just a simmer and simmer for 2 minutes and turn off the heat. This will help the flavors marry. Set aside to cool.
  • 2. In the meantime take a small knife, cut the top off as you would a pumpkin. Remove the seeds by either using your knife or a small measuring spoon.
  • 3. Now cut a cube of provolone and a piece of the prosciutto to the size of your hot cherry pepper. This will most likely change for each pepper depending on their size and shape.
  • 4. Wrap the prosciutto around your cubed cheese and place inside the cherry pepper. Continue with all the remaining peppers.
  • 5. Place your stuffed peppers in a container which has a secrued lid. Pour the cooled vinegar and oil mixture over your peppers. If you do not have enough liquid you can always add additional olive oil. My peppers were a little small so I didn't have to add any liquid.
  • 6. Put the lid on and gently tip your container upside down af few times. Place in the frig for at least 24 hours the longer the better as the flavors will improve!

4 slices cappicola (hot Italian ham) cut in half
8 hot cherry peppers, tops cut off and seeds removed
2 slices Prosciutto di Parma
3 ounces herb and garlic spreadable cheese or goat cheese
1 rib celery, cut into 1/2-inch pieces
8 sweet peppers, tops removed and seeded

Steps:

  • For hot peppers: Wrap cheese cubes in half of one slice of hot ham. Stuff ham wrapped cheese cubes inside the cherry peppers and reset caps with a toothpick.
  • For sweet cherry peppers: Spread each slice of prosciutto with a thin layer of herb and garlic cheese. Cut each slice of ham in four pieces, then wrap a piece of celery inside each strip of ham. Stuff the meat and cheese wrapped celery into each cherry pepper.

2 small red bell peppers (5 to 6 ounces each), halved lengthwise through stem, seeds and ribs removed
1 heaping cup cherry tomatoes (about 6 ounces)
1 1/2 ounces feta cheese (preferably goat's milk), crumbled
1 teaspoon fresh thyme, coarsely chopped
8 basil leaves, torn into pieces
Freshly ground pepper
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees, with rack in top third. Place bell pepper halves, cut sides up, in a baking dish. Toss together tomatoes, feta, thyme, and basil in a medium bowl; season with black pepper. Fill each pepper with tomato and feta mixture, dividing evenly. Drizzle each with oil.
  • Bake stuffed peppers, covered with aluminum foil, until they begin to soften, about 30 minutes. Remove foil; continue to bake until tomatoes begin to burst and cheese turns light brown, 13 to 15 minutes more. Remove stuffed peppers from oven, and serve warm.

1 lb prosciutto (1 lb sliced is ~37 slices)
1/2 lb provolone cheese (sliced ~ 1/2" thick)
2 lbs cherry peppers (~ 2 pt or 49 peppers)
1/2 gallon white vinegar
1 quart extra virgin olive oil
1 quart canola oil
1 small onion, thinly sliced
rosemary
bay leaf
dill weed
basil
chopped garlic
parmesan cheese

Steps:

  • Wash cherry peppers and place whole, stems intact, in 1 gallon jar.
  • Fill jar with white vinegar.
  • Let stand at least one week.
  • I've let them soak as long as 3 weeks.
  • You may need to add more vinegar to keep the jar full as the peppers soak it in.
  • The peppers will float, make sure to keep them covered.
  • After soaking for at least a week, pour out vinegar and rinse peppers in cool water.
  • Remove stems and seeds.
  • Expect to lose 3 or 4 peppers during soaking.
  • Cut provolone to the appropriate size to fill the peppers.
  • (~1/2" cube) Cut the Proscuitto slices in half.
  • Wrap the provolone with a 1/2 slice of Proscuitto (or 2 for larger peppers) and stuff into pepper.
  • Add some Olive Oil to the jar.
  • Add Onion, Rosemary, 2 or 3 Bay Leaves, Dill Weed, Basil and chopped Garlic to oil.
  • Place the peppers in the jar and fill the jar with 50% Olive Oil and 50% Canola Oil.
  • Top off the jar with a sprikle coating of Parmesan cheese.
  • Let soak a minimum of one week.
  • I let them soak and store them at room temperature.
  • You may want to refrigerate for longer shelf life.
  • (I've had shelf life in excess of one month) ENJOY!

  • Preheat oven to 425°F and lightly oil a large shallow baking pan.
  • Halve bell peppers lengthwise and discard seeds and ribs. Arrange peppers, cut sides up, in baking pan and lightly oil cut edges and stems. Halve tomatoes and chop onion and basil. Finely chop garlic and in a bowl toss with tomatoes, onion, basil, 2 tablespoons oil, and salt and pepper to taste. Divide mixture among peppers and roast in upper third of oven until peppers are tender, about 20 minutes.

Saw something like this served at an Italian restaurant and decided to make them at home. Always get requests to make them. You can also use the Sweet pepper variety, but I prefer a little heat. :)

8 -10 slices salami
8 slices prosciutto
1/4 lb fresh mozzarella cheese
1/4 cup grated parmesan cheese

  • Remove stem and seeds from cherry peppers and rinse peppers under cold water.
  • Cut meat slices into halves or quarters Cut cheese into appropriate sizes for cherry peppers (pieces should be about half the size of pepper cavity) Add a little grated cheese to bottom of pepper Add half slices of salami and prosciutto Stuff cheese into meat so all fits snugly Sprinkle grated cheese on top Salt and pepper to taste Garnish with fresh parsley.

2 teaspoons coarse salt
1/4 teaspoon freshly ground black pepper
Crusty bread, for serving

Steps:

  • Stuff each pepper with cheese and a sprig of marjoram. Transfer stuffed pepper and pepper tops to a glass loaf pan.
  • Whisk oil, vinegar, garlic, salt, and pepper in a small bowl. Pour over peppers. Let marinate at room temperature 1 hour.

6 (4 ounce) bone-in chicken thighs with skin
1 tablespoon ground black pepper
2 teaspoons ground cumin
1 teaspoon salt
18 cherry peppers in brine (such as Peppadew®)
6 ounces fresh Italian sausage
2 tablespoons olive oil
1 onion, sliced
1 pinch salt
4 cloves garlic, crushed
1 tablespoon herbes de Provence
½ teaspoon crushed red pepper flakes
1 cup sliced pepperoncini peppers, with liquid
2 cups chicken stock
1 (14 ounce) can artichoke hearts, drained and chopped
½ cup pitted kalamata olives
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh marjoram

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken thighs in a large bowl; season with black pepper, cumin, and 1 teaspoon salt. Set aside.
  • Stuff each cherry pepper generously with Italian sausage. Set aside.
  • Heat olive oil in Dutch oven over medium-high heat. Place chicken thighs, skin-side down, in pan and brown, about 5 minutes. Turn chicken over and brown other side, about 1 minute. Remove chicken from pan.
  • Cook onion in the Dutch oven with pinch of salt over medium-high heat; cook and stir until caramelized, about 5 minutes. Reduce heat to medium; stir in garlic, herbes de Provence, and crushed red pepper.
  • Stir in pepperoncini and juices; cook until warmed through, about 2 minutes. Remove from heat.
  • Place chicken, skin-side up, in a single layer on top of the onions and pepperoncinis in the Dutch oven. Pour stock into the pan until almost covering the chicken.
  • Sprinkle artichoke hearts, olives, and stuffed cherry peppers over top of chicken.
  • Return to medium-high heat and bring to a simmer.
  • Cover and roast in preheated oven until sausage is cooked through and liquid is bubbling, about 1 hour.
  • Garnish with chopped basil, oregano, and marjoram.

1/4 cup red wine vinegar
1 teaspoon chopped garlic
1/2 cup chopped fresh herbs (rosemary, basil, thyme, marjoram, oregano, chives, etc.)
8 cups washed arugula leaves
1/2 cup thinly sliced red onions
8 very thin slices proscuitto
1/2 pound homemade goat cheese, recipe follows
Salt and white pepper
16 marinated cherry peppers (canned variety works best), drained, rinsed and dried
1 cup extra virgin olive oil
1 gallon goat's milk (unpasteurized)
1 quart buttermilk
3/4 teaspoon rennet liquid or 1 tablet rennet (available in health food stores)
Olive oil, for seasoning
Salt
Pepper

Steps:

  • Whisk marinade ingredients together in a non-reactive bowl and set aside.
  • With a sharp paring knife, remove stem and core of peppers and dry them well with paper towels.
  • In a small bowl, mix goat cheese with salt and pepper, to taste. Carefully fill each pepper with goat cheese and place in a shallow non-reactive casserole dish or bowl. Cover with marinade and refrigerate overnight before serving. (For an interesting twist, dip in beer batter and fry)
  • When ready to serve, remove cherry peppers from marinade and set aside. Using a spatula, transfer marinade to a large bowl, add Arugula and sliced onions and toss well to combine. Divide salad between 8 salad plates, top with a piece of proscuitto and garnish with stuffed peppers.
  • In a large non-reactive saucepan, combine goat's milk, buttermilk, and rennet. Heat over low heat to 180 degrees. Transfer to a non-reactive bowl and allow to sit overnight, covered, until curd and whey separate. Line a colander with several layers of cheesecloth and ladle curds into colander. Discard whey. Fold cheesecloth over top of curd and allow to drain overnight, refrigerated. Remove from cheesecloth and season to taste with olive oil, salt and pepper.

1 can (2 ounces) anchovy fillets

These lovely round small peppers come in red, yellow and green, they are sweet but range in heat, from mild to medium hot, sold fresh or pickled they make a very flavourful appetizer, can be filled with almost anything, Delicious!!

Number Of Ingredients 7

8 sweet red cherry peppers (fresh or pickled)
1/3 cup crumbled feta cheese
1 tablespoon mayonnaise
3 tablespoons chopped black olives
3 tablespoons chopped green onions
1 tablespoon toasted pine nuts
1 dash cayenne pepper

Steps:

  • Cut red cherry peppers in half, vertically, leaving stem for presentation.
  • Remove seeds.
  • Drain well on paper towel.
  • In a small bowl combine all remaining ingredients and mix well.
  • Spoon filling into pepper halves.

Hot Stuffed Cherry Peppers image

Some like it hot, some not so hot! These little (about 2 1/2" x 1 1/2" high) red peppers are just right for medium hot. They look lovely on your plate. I served them with broccoli. cauliflower, browned potatoes and lamb chops. They also come as green cherry tomatoes and are great served as an appetizeer - perhaps only an inch across & an inch high - The green ones i found were hotter than the red!

8 cherry peppers
4 tablespoons onions, minced fine
2 medium mushrooms, minced fine
2 garlic cloves, minced fine
1 teaspoon Worcestershire sauce
1/2 teaspoon dried oregano
8 teaspoons sour cream or 8 teaspoons yogurt

Steps:

  • Cut the top off the peppers and remove the membranes and seeds.
  • Sauté the onion, garlic and mushrooms on a non stick skillet (use a bit of oil if you wish but not necessary) about 4 minutes. Sprinkle in the oregano.
  • Sprinkle with the Worcestershire sauce and remove.
  • Stuff the peppers with this filling.
  • Top with a tsp of cottage cheese (or other).
  • Sprinkle with a little parsley.
  • Bake for 30 minutes around 350°F and serve.

12 cherry peppers, stemmed, seeded, and rinsed
1 cup water
1 cup white wine vinegar
2 tablespoons olive oil
4 bone-in, skin-on chicken legs (separated into thighs and drumsticks) or 8 chicken thighs
Salt and freshly ground black pepper
1/3 cup white wine
One 3-inch sprig of fresh rosemary
1 1/4 cups sliced onion (1 large)
1 tablespoon minced garlic
1 large (6 inch) Italian sweet sausage
1/2 cup chicken stock
2 tablespoons chopped flat-leaf parsley, for garnish (optional)

Steps:

  • In a medium pot, combine the cherry peppers, water, and vinegar. Bring to a boil over medium-high heat and cook until the peppers lighten in color, from red to bright orange, and are pliable, about 5 minutes. Drain and set aside.
  • In a large skillet, heat the oil over medium heat. Season the chicken with salt and pepper to taste. Add to the skillet and cook until browned all over, about 20 minutes, turning once or twice. Add the white wine and rosemary and cook until the wine has mostly evaporated, about 5 minutes. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  • Remove the casing on the sausage. Roll the sausage meat into little balls about the size of marbles and stuff them into the cavities of the cherry peppers. Add the stuffed peppers and the stock to the skillet with the chicken. Cover and cook over medium-low heat for 15 minutes for the flavors to meld and the pork to cook. It will be pale in color. Uncover and cook until the sauce reduces by about half, 10 to 15 minutes longer.
  • Serve garnished with parsley, if you'd like.
