Browned Butter-Plum Muffins image

The sweetness of plums and the richness of a browned-butter streusel on top make these muffins perfect for breakfast or a mid-morning snack.

1/2 cup butter (do not use margarine)
2 large plums, coarsely chopped (2 cups)
1/4 teaspoon ground cardamom
1 1/2 cups Gold Medal™ all-purpose flour
3/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup milk
1 teaspoon vanilla
2 eggs, slightly beaten
1/2 cup packed brown sugar
1/2 cup chopped walnuts, toasted
1/4 cup butter or margarine, softened
1/3 cup Gold Medal™ all-purpose flour

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • In 1-quart saucepan, heat 1/2 cup butter over medium heat, stirring constantly, until light golden brown. Remove from heat; stir in plums and cardamom. Cool completely.
  • In large bowl, mix 1 1/2 cups flour, the granulated sugar, baking powder and salt. Stir in milk, vanilla and eggs just until moistened. Gently stir in plum mixture. Divide batter evenly among muffin cups.
  • In small bowl, mix brown sugar, walnuts and 1/4 cup butter. Stir in 1/3 cup flour with fork until crumbly. Sprinkle topping evenly over batter.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Serve warm or cool.

1½ cups All-Purpose flour (= 180 g)
1/4 cup granulated sugar (= 50 g)
1/4 cup brown sugar, packed (= 53 g)
1 Tablespoon baking powder (= 12 g)
1/2 teaspoon ground cinnamon (= 1.3 g)
1/4 teaspoon fine salt (= 1.25 g)
1/2 cup unsalted butter, at room temperature (= 1 stick (4 ounces) or 115 g)
1 large egg, beaten
1/2 cup milk (= 119 ml)
1/2 teaspoon vanilla extract (= 2.5 ml)
1¼ cups chopped plums (= 2 to 3 medium plums)
2/3 cup All-purpose flour (= 82 g)
1/3 cup brown sugar, packed (= 73 g)
1/2 teaspoon ground cinnamon (= 1.3 g)
1/4 teaspoon fine salt (= 1.25 g)
4 Tablespoons unsalted butter, cut into large pieces (= 58 g)
2 to 4 Tablespoons sliced almonds (= 9 to 16 g)

Steps:

  • Add dry streusel ingredients (flour, brown sugar, cinnamon, salt, and almonds) to a medium bowl. Add in the pieces of butter and rub in by hand or with two forks, until mixture comes together in pea-sized crumbs.
  • Set streusel aside in the fridge while making the muffins.
  • Preheat oven to 375° F and line a 12 cup muffin tray with paper liners or baking spray.
  • In a large bowl, whisk together the flour, sugars, baking powder, cinnamon, and salt.
  • Using a pastry cutter or 2 forks, cut in the 1/2 cup butter until mixture resembles coarse crumbs. This takes about 1 minutes to thoroughly add in the butter.
  • Stir in the beaten egg, milk, and vanilla until incorporated and a thick batter forms.
  • Using a rubber spatula, fold in the chopped plums until just mixed.
  • Spoon batter into muffin trays, filling each 2/3 full. Top each with a generous portion of the streusel topping, concentrating on the center of the muffin top.
  • Bake muffins for 15 to 20 minutes, or until golden brown and tops spring back when pressed.

Steps:

  • Preheat the oven to 400 degrees F. Line a standard 12-cup muffin tin with paper liners.
  • To make the topping, in a medium bowl, mix together the topping ingredients until crumbly. Set aside.
  • In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.

Steps:

  • Preheat oven to 325 degrees. Place twelve 2 3/4-by-2-inch panettone papers on a rimmed baking sheet; set aside.
  • Make the topping: In a large bowl, whisk together flour, brown sugar, salt, and cinnamon. Add melted butter and, using a rubber spatula, toss until large crumbs form. Set aside.
  • Make the muffins: In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
