3/4 cup olive oil
1/3 cup cider vinegar
1/3 cup honey
1 teaspoon pepper
1/4 teaspoon salt
3 cups sliced fresh strawberries, divided
3/4 cup pecan halves, divided
12 cups torn mixed salad greens or chopped fresh spinach
1 can (11 ounces) mandarin oranges, drained
3 green onions, sliced

Steps:

  • In a blender, combine the first five ingredients; cover and process for 30 seconds. Add 2 cups strawberries; cover and process until blended. Add 1/4 cup pecans; pulse until chopped. , In a large bowl, combine the spinach, oranges, onions and remaining strawberries and pecans. Drizzle with vinaigrette and toss to coat.

2 1/2 tablespoons strawberry vinegar
3 tablespoons olive oil
5 ounces baby spinach (8 cups)
1/2 pound strawberries, cut lengthwise into thick slices (1 1/2 cups)
1/2 cup pecan halves (3 1/2 ounces), toasted and cooled

Steps:

  • Whisk together vinegar, a rounded 1/4 teaspoon salt, and 1/8 teaspoon pepper in a small bowl, then add oil in a slow stream, whisking well. Put spinach, strawberries, and pecans in a large bowl and toss with just enough vinaigrette to lightly coat.

5 oz baby spinach
1 cup strawberry, sliced
½ cup blueberry
½ red onion, thinly sliced
1 sweet apple, cored, halved and thinly sliced
1 cup candied walnuts, chopped
1 cup strawberry
¼ cup balsamic vinegar
¼ cup extra virgin olive oil
1 tablespoon dijon mustard
1 tablespoon honey
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon pepper
⅔ cup feta cheese, as desired

Steps:

  • For the dressing, push a straw through the strawberries from the tip to the green top to remove the hull. (Or you can cut it off with a knife!)
  • Add the rest of the dressing ingredients.
  • Blend until smooth. Refrigerate.
  • Cut strawberries, apple, and onion into slices.
  • Combine all the salad ingredients in a large bowl.
  • Drizzle with desired amount of dressing and toss to coat. (Spinach wilts easily, don't add dressing until ready to eat!)
  • Sprinkle feta cheese on top and serve.
  • Enjoy!

Refreshing salad loaded with salad greens, strawberries, blood oranges, and dried cranberries. Lightly sweetened with a chopped pecan/brown sugar mixture and then drizzled with a delightful raspberry-key lime vinegarette dressing. Created for RSC #11. FYI...you can substitute mandarin oranges for the blood oranges and regular limes for the key limes. I have had good results with both substitutions.

1 (6 ounce) bag Baby Spinach
1 (10 ounce) bag italian blend salad greens
2 cups strawberries, sliced
1 1/2 cups blood oranges, segmented and chopped
1/2 cup dried cranberries
1/2 cup chopped pecans
3 tablespoons brown sugar
1/4 cup seedless raspberry preserves
1/3 cup balsamic vinegar
2 tablespoons fresh squeezed key lime juice
1/4 cup sugar
2 teaspoons poppy seeds

Steps:

  • To make the vinegarette drssing: Put raspberry preserves in a small bowl and cook in microwave at 50% power for 45 seconds or until preserves has liquified. Thoroughly mix all dressing ingredients in bowl with wire whisk. Set aside.
  • Put the spinach, salad greens, strawberries, blood oranges and cranberries in a large bowl and toss until ingredients are well blended. Mix the chopped pecans with the brown sugar. Sprinkle over the salad.
  • Whisk vinegarette again until well mixed. Drizzle the vinegarette over the salad. Use the quantity of vinegarette to your liking. Toss everything together until salad is evenly coated with the vinegarette dressing.

2 teaspoons corn oil
1 skinless, boneless chicken breast half - cut into bite-size pieces
½ teaspoon garlic powder
1 ½ tablespoons mayonnaise
½ lime, juiced
½ teaspoon ground ginger
2 teaspoons milk
2 cups fresh spinach, stems removed
4 fresh strawberries, sliced
1 ½ tablespoons slivered almonds
freshly ground black pepper to taste

Steps:

  • Heat oil in a skillet over medium heat. Place chicken in skillet, season with garlic powder and cook 10 minutes on each side or until juices run clear. Set aside.
  • In a bowl, mix mayonnaise, lime juice, ginger and milk.
  • Arrange spinach on serving dishes. Top with chicken and strawberries, sprinkle with almonds and drizzle with dressing. Season with pepper to serve.

•Cooked Quinoa
•Sliced Strawberries
•Sunflower Seeds
•Sliced Green Onions
•Crumbled Feta
•Baby Spinach
Dressing
2 T Olive Oil
2 tsp. strawberry preserves
1 T fresh lime juice
1 tsp. mustard
1 T white wine vinegar
salt and pepper to taste

Steps:

  • Depending on how juicy your strawberries are, you might want to put them down lower in the jar (before the quinoa) to keep them even further away from the spinach.
