A sugar cookie crust, cream cheese filling and topped with strawberry goodness. This is the perfect summertime treat!

16 ounces refrigerated sugar cookie dough (1 package)
8 ounces cream cheese (1 package, softened)
2 cups cool whip
1 teaspoon vanilla
1 cup powdered sugar
21 ounces strawberry glaze pie filling (1 can)
16 ounces strawberries (hulled and sliced, 1 package)

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 12-inch pizza pan with nonstick cooking spray.
  • Roll out cookie dough onto the pan and bake for 10-12 minutes, or until barely golden brown. Let cool completely.
  • In a mixing bowl, beat together cream cheese, Cool Whip, vanilla and powdered sugar until well combined and spread over cooled cookie crust.
  • Top with strawberry glaze pie filling and sliced strawberries.
  • Cut into slices and serve.

8 ounces fresh strawberries, hulled and sliced
1 tablespoon sugar
1 center-cut slice of watermelon, about 1 inch thick
1 cup whipped cream, or to taste

Steps:

  • Mix strawberries and sugar together in a medium bowl until the strawberries are thoroughly coated. Allow the strawberries to macerate for 10 to 20 minutes.
  • Cut the round watermelon slice into 8 wedges, and keep them together. Pat dry with a paper towel or clean dish towel.
  • Spray or spoon the whipped cream onto the center of the watermelon round; don't be afraid to pile it on, as the cream will sink under the weight of the strawberries.
  • Spoon the macerated strawberries and their juices over the whipped cream and serve immediately.

6 tablespoons butter, softened
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1-1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
FILLING:
1 package (8 ounces) cream cheese, softened
1/2 cup confectioners' sugar
2 cups sliced fresh strawberries
1 cup sugar
1/4 cup cornstarch
2 cups crushed strawberries

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and extracts. Combine the flour, baking powder and salt; gradually add to creamed mixture. Cover and refrigerate for 1 hour., On a floured surface, roll dough into a 13-in. circle. Transfer to an ungreased 12-in. pizza pan. Build up edges slightly. , Bake at 350° for 18-22 minutes or until lightly browned. Cool completely., In a large bowl, beat cream cheese and confectioners' sugar until smooth. Spread over crust. Arrange sliced strawberries on top., In a large saucepan, combine the sugar, cornstarch and crushed berries until blended. Bring to a boil; cook and stir for 2 minutes or until thickened.
