Number Of Ingredients 4

2 cans (14 ounces each) whole-berry cranberry sauce
1 can (20 ounces) crushed pineapple, drained
1 package (14 ounces) frozen unsweetened sliced strawberries, thawed and drained
1/2 cup chopped walnuts

Steps:

  • In a large bowl, gently mix cranberry sauce, pineapple and strawberries until blended. Refrigerate, covered, 1-2 hours or until cold. Just before serving, stir in walnuts. Freeze option: Do not add walnuts. Freeze relish and walnuts separately in freezer containers. To use, thaw in refrigerator overnight. Stir in walnuts just before serving.

6 salmon fillets (4 ounces each)
1 tablespoon butter, melted
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
RELISH:
1-1/4 cups finely chopped fresh strawberries
1 tablespoon minced fresh basil
1 tablespoon honey
Dash freshly ground pepper

Steps:

  • Brush fillets with melted butter; sprinkle with salt and pepper. Heat a large skillet over medium-high heat. Add fillets, skin side up, in batches if necessary; cook 2-3 minutes on each side or until fish just begins to flake easily with a fork., In a small bowl, toss strawberries with basil, honey and pepper. Serve salmon with relish.

Just found this recipe and plan on making this for our Thanksgiving dinner. Leftovers can be used on toast as a jelly. Make this the day before your dinner. It sounds wonderful!

1 (10 ounce) package frozen sliced strawberries in syrup, thawed
1/2 cup sugar
1 (12 ounce) bag fresh cranberries (about 3 cups)

Steps:

  • Drain syrup from strawberries into a 1 cup measuring cup and set strawberries aside.
  • Add water to syrup to make 1 cup liquid.
  • In a 3 quart saucepan over high heat, heat syrup mixture, sugar and cranberries to a boil, stirring constantly.
  • Reduce heat to low and simmer, uncovered for 10 minutes or until cranberries pop.
  • Stir strawberries into mixture and spoon into bowl.
  • Cover and refrigerate overnight or at least for 3 hours.

1/2 cup packed brown sugar
1 tablespoon water
1/2 cup raspberry vinegar
1 medium tart apple, finely chopped
1 tablespoon finely chopped jalapeno pepper
1 teaspoon minced fresh gingerroot
1 garlic clove, minced
1/4 teaspoon minced fresh cilantro
1/8 teaspoon salt
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon pepper
2 cups fresh strawberries, divided

Steps:

  • In a large saucepan over medium heat, cook and stir brown sugar and water for 5 minutes. Add vinegar and apple; bring to a boil. Reduce heat; add the jalapeno, ginger, garlic, cilantro, salt, cinnamon, cloves and pepper. Simmer, uncovered, for 10-15 minutes or until apple is tender.   • Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Finely shred lime peel. Peel, section, and chop lime; set aside. In a small bowl, combine lime peel, the 1/4 teaspoon salt, and the cayenne pepper. Sprinkle mixture evenly over both sides of each fish steak; rub in with your fingers.

1/4 teaspoon(s) salt

RELISH:
1 small lime (from above), peeled, cut into sections & chopped
1 cup(s) strawberries, fresh or frozen, chopped
1/4 cup(s) poblano chile pepper, seeded & finely chopped
2 teaspoon(s) cilantro, dried
1/2 teaspoon(s) cumin seeds, toasted
1/8 teaspoon(s) salt

Steps:

  • In a medium bowl, combine chopped lime, strawberries, chile pepper, cilantro, cumin seeds & salt. Set aside in refrigerator for flavors to marry.

1/4 cup grapeseed oil
Four to six 8-ounce chicken breasts, skin on
1 tablespoon Cajun spice
4 tablespoons butter, at room temperature
1 tablespoon grapeseed oil
1/4 cup diced red onion
1/3 cup small diced, blanched potatoes
2 tablespoons rice wine vinegar
Juice of 1 lemon
1 cup strawberries, quartered
1/2 cup avocado, medium diced
1/2 cup grape tomatoes, quartered
1 teaspoon sea salt
1/2 teaspoon ground white pepper

Steps:

  • For the chicken: Preheat the oven to 375 degrees F. Heat a large skillet over medium-high heat with the oil; allow the skillet to warm. During this time, sprinkle both sides of the chicken with the seasoning. Add the chicken to the heated oil, skin side first. Allow the chicken to sear on the skin side for 3 to 4 minutes, then reduce the heat to medium and continue to cook for 2 minutes. Flip and repeat the process for 4 to 5 minutes, then finish the chicken in the oven until it reaches 160 degrees F internally. Once cooked, remove the chicken from skillet and allow to rest. Then add the butter and stir into the pan sauce.
  • For the relish: Over medium heat, warm a saute pan and the oil. Then add the onions and potatoes, cooking for 2 minutes. Next, add the vinegar and lemon juice, then cook to reduce the liquid for 1 minute. After reducing, add the strawberries, avocado, tomatoes, salt and pepper, and cook for final 1 minute. Remove and portion to platter or plates. Place the chicken atop the relish to serve and finish with butter sauce.
