- Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray. In large bowl, beat cake mix, water, oil and egg whites with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
- Bake 28 to 32 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack 20 minutes.
- Meanwhile, in medium bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Poke cake every inch with handle of wooden spoon or tines of meat fork halfway into cake. Carefully pour strawberry gelatin evenly over top of cake. Cool completely, about 1 hour.
- Spread frosting over top of cake. Drizzle red decorating gel over frosting. Cut into 4 rows by 3 rows. Garnish each piece of cake with strawberries.

- Preheat oven to 350°. In a large bowl, combine the cake mix, water, eggs and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes., Pour into 2 greased and floured 9-in. round baking pans. Bake until a toothpick inserted in the center comes out clean, 25-35 minutes. - Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan with cooking spray.

Now, usually that means opening a box of cake mix and Jello, but not now. I'm trying to make most of our food from scratch. Time to get creative...

- 1. ~*~*~ I put a cream cheese glaze on this cake, but it would be excellent with sweetened whipped cream or cool whip instead. ~*~*~
- 2. * Preheat oven to 350 degrees F.
- 3. Wash and hull strawberries. Cut in half into food processor. Pulse 8 short bursts for a rough chop.
- 4. Remove 1 cup of the strawberries and set aside. Now add the agave nectar or corn syrup and process till a nice and smooth puree.
- 5. Pour the puree into a fine strainer to remove seeds. Work puree back and forth with a spatula to push liquid on through. Set puree to the side.
- 6. Into a large bowl sift flour, sugar and baking powder. Add salt and mix well with a spoon or whisk to blend.
- 7. Make a hole in the center .
- 8. Now add the milk, coconut oil, eggs and vanilla.
- 9. Using a mixer, mix for about 1 minute. Now add in the rough chopped strawberries and mix just to blend together.
- 10. Pour into a 9x13 pan that has been sprayed with non-stick spray. Bake 20-25 minutes @ 350F until toothpick comes out clean.
- 11. While cake is still hot, poke holes into cake. I use the handle end of a wood spoon. Slowly pour the strawberry puree over cake. Cover and refrigerate.
- 12. Once cake is cold you can top with your favorite cream cheese icing, glaze or cool whip or homemade sweetened whipped cream. Store in refrigerator.
- 13. **** For an easy cream cheese glaze, use soften cream cheese (2 pks.) , mixed till smooth then add 1 tsp. of vanilla and 2 tbsp. lemon juice and a dash of salt. Mix well then add in 1 box of powdered sugar a little at a time, mixing on low. Add enough agave nectar or corn syrup to thin into a glaze.

Steps:
- 1. In a large bowl, beat the cake mix, water, eggs and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes.
- 2. Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 25-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely.
- 3. Using a serrated knife, level top of each cake if necessary. Return layers, top side up, to two clean 9-in. round baking pans. Pierce cakes with a meat fork or wooden skewer at 1/2-in. intervals.
- 4. Drain juice from strawberries into a 2-cup measuring cup; refrigerate berries. Add water to juice to measure 2 cups; pour into a small saucepan. Bring to a boil; stir in gelatin until dissolved. Chill for 30 minutes.
- 5. Gently spoon over each cake layer. Chill for 2-3 hours.
- 6. Dip bottom of one pan in warm water for 10 seconds. Invert cake onto a serving platter. Top with reserved strawberries and 1 cup whipped topping. Place second cake layer over topping.
- 7. Frost cake with remaining whipped topping. Chill for at least 1 hour. Serve with fresh berries if desired. Refrigerate leftovers.
STRAWBERRY POKE CAKE
This cake is super easy and so yummy.... everyone always loves it.... cover & refridgerate any leftovers

- 1. Make cake according to package directions. Place in a sprayed (greased) 13x9 pan. Bake according to package directions. Remove from oven and with a fork poke holes all over the top of the cake.
- 2. In a pyrex glass measuring cup heat water up in microwave until boiling. Pour in jello and stir until jello is dissolved. Pour evenly over hot cake. Place cake in fridge to cool uncovered (be careful pan is still really hot, I also put a towel on the fridge shelf to protect it. I usually let the cake sit for about 2 hours or until completely cool.
- 3. Remove cake from oven and frost with entire container of cool whip. Mix sliced strawberries with sugar and sprikle them over the cool whip mixture covering top of cake. Place back in fridge for around 30 minutes. Remove cake from fridge and cut into squares and serve. Cover and refridgerate any leftovers.... enjoy

- Prepare cake batter and bake as directed on package for 13x9-inch pan. Cool cake in pan 15 min. Pierce cake with large fork at 1/2-inch intervals.
- Add boiling water to gelatin mixes; stir 2 min. until completely dissolved. Stir in strawberries; spoon over cake. Refrigerate 2 hours.
- Frost with COOL WHIP. Refrigerate 1 hour.
