SUGAR-FREE STRAWBERRY PIE
This is an adopted recipe. I am always looking for low fat, low sugar recipes, so I am excited about trying this one. The original introduction said: "I found this in our local paper. It is very simple and good! Hope you enjoy!"

Steps:
- In a saucepan, mix dry pudding and gelatin water.
- Stir over medium heat until mixture comes to a boil.
- Remove from heat.
- Cool until slightly thickened.
- Arrange strawberries in pie shell (whole or sliced).
- Pour cooled mixture over berries.
- Refrigerate until set.
- Serve with whipped topping if desired.
- Enjoy!

- 1. in small saucepan combine corn starch and water and cook till thickened. remove from heat and cool slightly. Stir in Jello and sweetener. Pour over the top of the berry's that fill a pie shell.
SUGAR FREE STRAWBERRY PIE
I love love love this pie, a weight loss buddy of mine gave me this recipe several years ago when the old point system was in affect and the WHOLE pie was 6 points; I haven't figured the new points out but it fits the bill for a sow fat, low sugar low carb dessert that taste great.

- 1. In a medium saucepan, stir together water and pudding mix. Heat to a boil. Remove from heat and immediately add the jello. Stir until dissolved. Set the pan aside and let the mixture cool to room temperature.
- 2. Place strawberries in the bottom of a deep dish pie plate. Pour cooled pudding mixture over the strawberries. Refrigerate until chilled. Let set well before slicing.
- 3. Note: I have made this with rasberry jello or chocolate pudding or even with lemon jello, it's fun to experiment with the flavors of jello, fruit, and pudding but pudding MUST be cook and serve.
SUGAR FREE STRAWBERRY PIE
This is a very good sugar free recipe! If you choose to use whipped topping, of course that will not be sugar free.

- In medium size sauce pan add the following ingredients: Sugar replacement, water, both boxes of sugar free jello. Separately, in a measuring cup place the cornstarch and just enough cold water to dissolve. Add to saucepan. Whisk all ingredients frequently. Once boiling, allow to boil for three minutes. Remove from heat source. Place on top of ice bath (this facilitates the cooling process). When cool, add extracts (if you are using them), and whisk to combine. This mixture MUST be completely cooled prior to adding to the fresh cut strawberries. As pictured, I cut the strawberries in very large pieces. Feel free to slice, or cut up as you like. Add cooled mixture to strawberries. Gently toss to coat well. Pour mixture into pre-baked pie crust and place in fridge. Using the ice bath technique to chill the gel mixture expedites this recipe! It will set up in about an hour. Top with whipped topping if desired.
- Ice Bath- Use a bowl much larger than the saucepan containing the gel mixture. Fill half way with ice. When gel mixture is removed from the heat source, place hot pan on top of the ice and continue to whisk.

- Cook soda and cornstarch to boiling.
- Remove from heat.
- Add jello and stir to dissolve.
- Add strawberries to mixture and stir until all the strawberries are coated.
- Fill pie shell and pour remaining juice over pie.
- Refrigerate until pie is set.

STRAWBERRY CREAM PIE (SUGAR FREE)
This is an alternative to my sugar free Key Lime Pie. I exchanged the lime jello, for strawberry, and the lime juice with strawberry flavoring. I think it turned out well.

- 1. microwave water on high for 45 secs up to 1 1/2 mins. until boiling. Whisk in gelatin until dissolved.
- 2. In a large bowl mix gelatin mixture and cream cheese until blended well. Add strawberry flavoring to this also.
- 3. Fold in Cool Whip, spread in crust and refrigerate until set. About 1 hour. Garnish with strawberries and Cool Whip.

- In a small saucepan mix water and cornstarch with a wire whisk.
- Bring to a boil, stirring constantly, for 1 minute.
- Remove from heat, cool slightly.
- Stir in gelatin and sweetener.
- Mix well, and gently stir in strawbrries.
- Pour into baked pie shell and refrigerate for about 2 hours.
- Top with Cool Whip OR Dream Whip right before serving.
- Garnish with strawberies if desired.
