LIME PEAR GELATIN SALAD

Great and green, this light gelatin salad made with pears and reduced fat cream cheese and whipped topping is a staple at any holiday meal in our family.

1 (.6 ounce) package sugar-free lime Jell-O®
1 cup boiling water
1 (15.25 ounce) can pear halves in juice
1 (3 ounce) package reduced-fat cream cheese, softened
1 ½ cups reduced-fat frozen whipped topping, thawed

Steps:

  • Whisk together the lime gelatin and boiling water in a large bowl until the gelatin dissolves. Pour the mixture into the container of a blender, and add the pear halves and cream cheese. Cover and blend until smooth. Pour back into the bowl, and gently whisk in the whipped topping. Transfer to a mold or serving bowl, cover and refrigerate until firm, at least 4 hours. To unmold, dip the mold briefly into hot tap water to loosen the gelatin, then invert onto a plate.

EASY STRAWBERRY JELLO SALAD WITH COOL WHIP



Easy Strawberry Jello Salad with Cool Whip image

one 6 oz box regular (not sugar free) strawberry jello, prepared according to instructions
one 8 oz container of Cool Whip
2 cups or 1 pound fresh strawberries, diced or sliced how you prefer
optional add-ins include whipped cream for topping, strawberry jam at the bottom, or mini marshmallows to mix in

Steps:

  • Boil one cup water on stove top, and mix into bowl with jello powder in mixing bowl. Add in one cup cold water and stir. Chill jello, preferably in a shallow pan, for about 45 minutes or until it is completely cool, just starting to set. Pour the jello into a large mixing bowl. Mix the jello up vigorously, for about one minute. Using an electric mixer is great for this step. But watch out it splashes. This breaks up any jello bits that have started to set, and adds air to the mix. Then fold in the Cool Whip and then strawberries. Mix completely, but be gentle and don't deflate the mix by stirring too aggressively. If you want to add in mini marshmallows, do it now. Add them in about 1/2 cup at a time to make sure you don't overdo it. Transfer to a 9×13 pan for serving, or into individual dishes if you prefer. You can top with whipped cream and sliced strawberries if you prefer. If you want to dress up this dish, spread a spoonful of strawberry jam in the bottom of a glass dessert dish or shallow glass. Then add the salad mix. After the dish has chilled, dollop with some fresh whipped cream and a slice of strawberry.

These homemade strawberry gelatins will put you off the box version for good.

1 1/2 pounds strawberries
3/4 cup sugar
2 tablespoons fresh lemon juice
2 packages (1/4 ounce each) unflavored gelatin

Steps:

  • Hull and quarter 1 pound of the strawberries; combine in a medium bowl with sugar and lemon juice. Set aside, stirring occasionally, about 10 minutes. Place 1 cup cold water in a small saucepan; sprinkle gelatin over water. Let stand at least 5 minutes to soften.
  • Working in batches, puree strawberry mixture in a blender. Strain through a fine-mesh sieve into a large measuring cup after each batch (discard solids). Add enough water to strained juice to measure a total of 3 cups liquid. Set aside.
  • Heat softened gelatin over medium-high, just until it begins to bubble around the edges and gelatin has dissolved (do not boil), 2 to 3 minutes; stir into strawberry juice. Divide mixture among four serving glasses. Chill until firm, 3 to 4 hours.
  • To serve, hull and dice remaining 1/2 pound strawberries; spoon on top of chilled gelatins.

2 pints fresh strawberries, hulled
2 tablespoons cornstarch
1-1/2 cups cold water
1 package (.3 ounce) sugar-free strawberry gelatin
3 tablespoons sugar
1 reduced-fat graham cracker crust (9 inches)
2 cups reduced-fat whipped topping

Steps:

  • Set aside four whole berries for garnish. Slice remaining strawberries and set aside. In a large saucepan, combine cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat; stir in gelatin and sugar until dissolved. Stir in sliced strawberries. Pour into the crust. Cover and refrigerate for 2 hours or until firm., Cut reserved strawberries in half. Garnish each serving with whipped topping and a berry half.

Strawberry Gelée image

This brightly flavored jelly would make a delicious layer in a birthday cake. Pour it into the cake pan you're using for the cake and let it set.

Yield makes one 9x12-inch pan

Number Of Ingredients 6

1 1/2 pounds (680g) strawberries, hulled
4 1/2 teaspoons powdered gelatin (or 20.25g sheet gelatin; see page 276)
1/2 cup (120g) water
2 1/2 teaspoons (15g) agar
1/3 cup plus 2 tablespoons (90g) sugar, or more to taste
2 tablespoons (25g) Triple Sec (or other orange-flavored liqueur)

Steps:

  • Run a 9 x 12-inch rimmed baking sheet under cold water and shake off the excess. Line the damp pan neatly with plastic wrap. (The water will help the plastic stick to the pan.)
  • Cut enough of the strawberries into tiny dice to measure 1/4 cup.
  • Put the remaining strawberries in a food processor and process to a very smooth puree. Strain and measure out 2 cups.
  • Pour about 1/2 cup of the puree into a small bowl and sprinkle the gelatin over the surface. Let sit for at least 1 minute.
  • Pour the water into a saucepan and whisk in the agar. Add 1/2 cup of the strawberry puree and bring to a boil over medium-high heat. Add the puree with the gelatin and whisk for at least 1 minute to dissolve the gelatin. Remove the pan from the heat and add the remaining 1 cup puree, the sugar, the Triple Sec, and the diced strawberries. Taste for sugar and stir in more if needed.
  • Skim any froth. Pour into the baking sheet and refrigerate for at least 2 hours to set. To serve, turn out onto a cutting board and cut into small squares. Or use a whisk to break the gelée up into irregular shapes.

2 (15 ounce) cans pear halves
1 (3 ounce) package lime flavored Jell-O® mix
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • In a small saucepan, heat 1 cup reserved pear juice to boiling. Pour over lime gelatin in a small bowl; stir until dissolved. Set aside.
  • In a large bowl, beat cream cheese with milk until smooth. Blend in gelatin mixture. Chill in the refrigerator until partially thickened, about 20 to 30 minutes.
  • In a small bowl, mash pears until smooth. Fold pears and whipped topping into gelatin mixture. Pour into a mold. Chill until set, about 2 to 3 hours.
  • Dip mold in warm water for approximately 5 seconds. Invert onto a serving plate
