Strawberry parfait is a delightful summer dessert that can be made so quickly and easily with fresh fruit, cream, and amaretto-soaked biscotti.

12 amaretti biscuits
2 tablespoons amaretto liqueur
2 cups fresh strawberries
1 1/2 cups heavy cream
1 teaspoon vanilla extract
2 tablespoons powdered sugar

Steps:

  • Gather the ingredients.
  • Place the amaretti biscuits in a plastic bag and gently crush using a rolling pin until they resemble coarse sand. Remove a couple of tablespoons and keep to the side for garnish. Spoon an even amount into the base of four glass dessert dishes or wine glasses. Press the crushed biscuit crumb firmly with the back of a spatula, then carefully, without disturbing the crumb, spoon over the amaretto. Pop the glasses into the refrigerator while you prepare the rest of the parfait.
  • Wash, hull , and dry the strawberries.
  • Choose three or four of the largest, well-shaped strawberries and slice as thinly as you can. Then, finely chop the remaining strawberries. Once the biscuit base is chilled, take the slices and lay evenly into the base and up the sides of the glasses in an even line. Repeat with a second row behind and overlapping with the previous fruit, reserving a few slices of strawberry for decoration. Fill the well in the middle of the sliced fruit with half of the chopped strawberries. Return the glasses to the refrigerator.
  • Whip the cream, vanilla extract, and confectioners' sugar using a stand or hand mixer to create stiff peaks. Take care not to overwhip the cream, which can soon become over-stiff and will be hard to pipe into the glasses.
  • Pipe the cream into each glass using a piping bag fitted with a large plain nozzle or layer using a spoon. Top with another layer of chopped strawberries and finish with more cream. Decorate with a few slices of strawberries and a little amaretti crumb.
  • Serve. If the parfaits are not to be eaten immediately, cover each glass with plastic wrap and keep in the refrigerator. They are best eaten the same day.

1/2 cup granulated sugar
2 tablespoons all-purpose flour
4 egg yolks
1 1/4 cups whole milk
1 vanilla bean, split and scraped
3 ounces marzipan
1/3 cup granulated sugar
Nonstick spray
1 3/4 cups slivered almonds, lightly toasted
Kosher salt
12 ounces fresh strawberries, hulled washed and quartered
1 tablespoon light brown sugar
1/2 cup heavy cream, lightly whipped

Steps:

  • In a medium bowl, whisk together sugar, flour and egg yolks until thick and smooth, 3 to 5 minutes.
  • In a medium pot, bring the milk and vanilla bean to a gentle boil. Pour about half of the milk mixture over the eggs whisking constantly. Pour the whole mix back into the pot and place the pot back over low heat, stirring with a wooden spoon, until the mixture thickens, 3 to 5 minutes. Note: you must stir this mixture constantly, scraping the bottom as you stir, so the flour doesn't stick to the bottom and burn.
  • Remove the pot from the stove and whisk in the marzipan. Pour the mixture onto a baking sheet lined with plastic wrap and cover it with a coating of plastic wrap. Place the tray in the refrigerator to cool.
  • In a medium skillet over low heat, melt the granulated sugar. Spray a tray with a light coating of nonstick spray. Spray the end of a wooden spoon as well. When the sugar turns light brown, add the almonds and stir to coat them with the sugar. Spoon the almonds on to the baking sheet and sprinkle lightly with salt.
  • When the almond cream has cooled, remove and discard the vanilla bean and place the pastry cream in a medium bowl. Whisk until it is smooth. In another medium bowl, toss the strawberries and brown sugar together.
  • Place 4 to 6 glasses on a flat surface. Begin by spooning a thin layer of almond cream in the bottom of each. Sprinkle with a few almonds. Add a layer of the whipped cream. Top with a layer of strawberries. Repeat the layers until the glasses are full. Refrigerate for a while before serving or enjoy immediately.

3 cups all-purpose flour
2 cups powdered sugar
1 cup finely chopped nuts
¼ teaspoon salt
2 cups unsalted butter, cold and cubed
1 cup all-purpose flour, or more as needed
¾ cup white sugar
½ cup unsalted butter, cubed
1 ½ cups strawberry jam

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, powdered sugar, nuts, and salt for base in a large bowl. Add butter and cut in with a pastry blender until mixture resembles cornmeal.
  • Transfer mixture to a 12x18-inch baking sheet and flatten with the palm of your hand into an even layer. You do not need to butter the pan; the dough has enough butter in it so it will not stick.
  • Bake in the preheated oven for 20 minutes. Remove from the oven and let cool for 15 minutes. Leave oven on.
  • Meanwhile, combine 1 cup flour and sugar for topping in a bowl. Add butter and cut in with a pastry blender until mixture resembles coarse crumbs; you do not want big clumps of butter.
  • Spread jam over the cooled base layer, then sprinkle on the topping mixture. Return to the oven and bake until topping is golden brown, 10 to 15 minutes.
  • Let cool for 15 minutes before cutting into 24 bars.

I have been making cobbler for my family for years using fresh berries we picked ourselves. As it is now just the two of us, I thought I would rework the recipe some to make it more like a crumble and incorporate some oats! Serve with vanilla ice cream.

3 cups sliced fresh strawberries
½ cup white sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
¾ cup all-purpose flour
¼ cup packed light brown sugar
2 tablespoons white sugar

1 ½ teaspoons ground cinnamon, divided
¼ teaspoon salt
½ cup unsalted butter, melted, divided
⅛ cup milk

Steps:

  • Preheat a convection oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Pour sliced strawberries for filling into a bowl. Add sugar, cornstarch, and cinnamon; mix to combine.

1/2 cup packed light-brown sugar
1/3 cup all-purpose flour
1/2 cup old-fashioned rolled oats
1/4 teaspoon ground cinnamon
1/8 teaspoon coarse salt
2 ounces pine nuts, toasted (1/3 cup)
4 apricots, pitted and cut into sixths (about 2 cups)
12 ounces strawberries (about 15), hulled and halved, or quartered if large (about 2 1/2 cups)
1/2 cup sugar
2 teaspoons fresh lemon juice
1 teaspoon cornstarch
Pinch of salt
1 pint strawberry ice cream

Steps:

  • Combine all crumble ingredients in a medium bowl and massage together with your fingers until butter is incorporated and mixture forms small clumps. Refrigerate until mixture is cold, at least 30 minutes and up to overnight.
  • Preheat oven to 350 degrees. Butter a 9 1/2-inch shallow round baking dish or pie plate. Combine all filling ingredients in another medium bowl. Transfer to baking dish and top with crumble.
