1/2 teaspoon unflavored gelatin
1 tablespoon whipping cream
1 cup sliced fresh strawberries
1/2 cup powdered sugar
1/2 cup whipping cream
1/2 teaspoon vanilla
24 miniature dessert or cordial chocolate cups

Steps:

  • In small bowl, sprinkle gelatin over 1 tablespoon whipping cream; set aside to soften gelatin.
  • In food processor, place strawberries and powdered sugar. Cover; process until smooth. Pour mixture into 1-quart saucepan; add softened gelatin. Cook over medium heat, beating with whisk occasionally, until mixture comes to a simmer and gelatin is dissolved. Remove from heat; cool 30 minutes.
  • In small bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. On low speed, beat strawberry mixture into whipped cream until blended.
  • Place mousse in decorating bag fitted with small star tip. Pipe mousse into chocolate cups. Refrigerate until set, about 30 minutes, or up to 2 hours before serving. Garnish with fresh sliced strawberries, if desired.

This delightful combination of fresh strawberries, JELL-O and COOL WHIP is sure to become a new family favorite.

Yield Makes 12 servings, 1/2 cup each.

Number Of Ingredients 5

1-1/2 cups boiling water
1 pkg. (6 oz.) or 2 pkg. (3 oz. each) JELL-O Strawberry Flavor Gelatin
1 cup cold water
1-1/2 cups sliced strawberries
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in cold water. Place strawberries in 6-cup mold; cover with 2 cups gelatin. Refrigerate 30 min. or until gelatin is set but not firm.
  • Meanwhile, refrigerate remaining gelatin 30 min. or until slightly thickened. Whisk in 2 cups COOL WHIP until well blended. Spoon over gelatin layer in mold.
  • Refrigerate 4 hours or until firm. Unmold. Serve topped with remaining COOL WHIP.
