Love this cake, so moist and easy to make. Note: You can use any flavor jello... if you make this as a layer cake you can use a different flavor jello for each layer... your choice.

1 box cake mix (yellow or white mix)
1 box of strawberry jello (regular or sugar free) using 1/2 cup less water
1 - 8oz thawed container cool whip topping

Steps:

  • 1. Bake cake mix according to box directions. Set cake aside to cool well. Prepare jello according to box directions using 1/2 cup "less" cold water... cool in refrigerator until jello is barely tacky (do not let it set up). Using a wooden skewer poke approx 40 holes throughout entire cake ... with a tablespoon pour into holes the jello water ... some will run over but that is ok. Cover cake with saran wrap, refrigerate until cool and jello is set up. Frost cake with Cool whip topping . Serve and Enjoy.
  • 2. Note: keep leftover cake refrigerated Suggestion: You can use any flavor jello ... if making a layer cake, you can use a different flavor jello for each layer.

Rhubarb is usually served in the spring however, I like to have some in the freezer and surprise my family with its bright flavor in the winter. This cake is DH's great Auntie Grace's recipe which she first made for me at the baby shower for my oldest son. It's delicious!

1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/3 cup butter (she used margarine)
1 egg, beaten
1/4 cup milk
4 cups rhubarb, cut in 1/2 to 1 inch pieces
1 (3 ounce) package strawberry Jell-O gelatin dessert
1/2 cup flour
1 cup sugar
1/4 cup butter

Steps:

  • Preheat oven to 375°F.
  • Lightly grease a 9x13-inch baking pan.
  • In a small bowl, sift together 1 cup flour, the baking powder. salt and 2 Tablespoons sugar.
  • Cut in 1/3 cup butter/margarine.
  • Stir in the beaten egg and milk; mix well.
  • Spread the mixture in the prepared pan.
  • In a small bowl combine the 1/2 cup flour, 1 cup sugar and 1/4 cup butter to make a crumb-like struesel.
  • Distribute the rhubarb evenly over the cake mixture.
  • Sprinkle the strawberry jello evenly over the rhubarb and cake.
  • Sprinkle the stuesel crumbs evenly over all.
  • Bake for 40 minutes or until a toothpick comes out clean.

This is a variation of a Lemon Jello Pound Cake I found on another recipe site. I'm experimenting with cake decorating/sculpting, and it carves rather nicely. It called for lemon jello instead of strawberry, lemon extract instead of vanilla, and apricot nectar instead of orange juice. I will continue to experiment with different flavors of jello, extracts, and juices. I would like to encourage you to do the same and post your variations in your reviews. NOTE: For my purposes, I used cupcake tins for my layers, so I've set the servings accordingly. UPDATE: Originally, I posted this with orange juice instead of strawberry-banana nectar, so the first 2 reviews reflect that. I have since tried strawberry-banana nectar, and I like it much better for the strawberry flavor. If you want to try what's been reviewed or can't find the nectar, try the OJ. It's just got a little bite to it where the nectar is a more mellow flavor.

I was making a cheesecake and talking at the same time and added way too much liquid, so a cream cheese glaze was born. That meant a cake was in order... a strawberry one to be exact ! Now, usually that means opening a box of cake mix and Jello, but not now. I'm trying to make most of our food from scratch. Time to get creative...

1 qt fresh strawberries, washed and hulled
1/2 c agave nectar or corn syrup
3 c cake flour, sifted
2 c sugar
3 tsp baking powder
1/2 tsp salt
1 c milk
3/4 c coconut oil, melted on very low heat
4 large eggs
2 tsp pure vanilla extract

Steps:

  • 1. ~*~*~ I put a cream cheese glaze on this cake, but it would be excellent with sweetened whipped cream or cool whip instead. ~*~*~
  • 2. * Preheat oven to 350 degrees F.
  • 3. Wash and hull strawberries. Cut in half into food processor. Pulse 8 short bursts for a rough chop.
  • 4. Remove 1 cup of the strawberries and set aside. Now add the agave nectar or corn syrup and process till a nice and smooth puree.
  • 5. Pour the puree into a fine strainer to remove seeds. Work puree back and forth with a spatula to push liquid on through. Set puree to the side.
  • 6. Into a large bowl sift flour, sugar and baking powder. Add salt and mix well with a spoon or whisk to blend.
  • 7. Make a hole in the center .
  • 8. Now add the milk, coconut oil, eggs and vanilla.
  • 9. Using a mixer, mix for about 1 minute. Now add in the rough chopped strawberries and mix just to blend together.
  • 10. Pour into a 9x13 pan that has been sprayed with non-stick spray. Bake 20-25 minutes @ 350F until toothpick comes out clean.
  • 11. While cake is still hot, poke holes into cake. I use the handle end of a wood spoon. Slowly pour the strawberry puree over cake. Cover and refrigerate.
  • 12. Once cake is cold you can top with your favorite cream cheese icing, glaze or cool whip or homemade sweetened whipped cream. Store in refrigerator.
  • 13. **** For an easy cream cheese glaze, use soften cream cheese (2 pks.) , mixed till smooth then add 1 tsp. of vanilla and 2 tbsp. lemon juice and a dash of salt. Mix well then add in 1 box of powdered sugar a little at a time, mixing on low. Add enough agave nectar or corn syrup to thin into a glaze.

2 pkg jello strawberry-banana flavor
2 pkg banana supreme cake mix
3 c sliced bananas
1 c mashes bananas
3 c sliced strawberries
1 c mashed strawberries
16 oz cool whip

Steps:

  • 1. Make cake according to package instructions, adding the mashed bananas and strawberries to the mix. Pour half of the batter in pan, then add sliced strawberries and bananas in a single layer. Pour other half of batter in pan and bake according package.
  • 2. While the cake is cooling mix JELL-O according to packages.
  • 3. Poke holes in the cooled cake. Add a layer of sliced bananas and strawberries.
  • 4. Pour JELL-O over cake and chill until JELL-O is firm.
  • 5. Spread Cool Whip on top and serve.

1 large box Strawberry Jello
2 cups fresh strawberries, hulled and sliced in half
1 Angel Food cake

Steps:

  • In a large bowl big enough to hold a whole angel food cake inside, mix jello according to directions, MINUS 1/2 cup of cold water, until all jello is completely dissolved. Pour strawberries into jello. Place cake upside down into bowl, pushing down into jello/strawberries mixture, holding down with your hands for a few minutes, giving the cake a little time to absorb some of the liquid. Take something heavy enough to hold down cake almost completely in jello and place on top of cake in bowl. I usually use a few heavy plates that fit inside the top of the bowl well, about the size of the cake. Or if your bowl has a tight fitting lid that will hold your cake down in the jello, use that. Refrigerate until firmly set, I refrigerate mine until the next day. To release cake, fill sink with warm water, hold bowl down in water, making sure not to let it get in the bowl, for about 1 minute. Place large plate over top of bowl and invert, hold for a few seconds, if cake doesn't fall to plate, hold in water a few more seconds, repeat until cake falls out onto plate when inverted. Serve with whipped cream if desired.

1/4 teaspoon baking soda

1/4 cup unsalted butter- melted

1 large egg
6 tablespoons milk
1/8 cup plain Greek yogurt
1 teaspoon vanilla extract
For Cheesecake Filling:
8 oz. cream cheese-softened
1 cup heavy whipping cream
1 cup powdered sugar
1 1/2 teaspoon vanilla
1 1/2 Teaspoon gelatin
2 tablespoons cold water
For Strawberry Jello:
1 lb. fresh strawberries- hulled and sliced in half
1 (6 oz.) package strawberry jello
2 cups boiling water

Steps:

  • The cake will be about 2 ½ to 3 inch tall so you'll need 9 or 9 ½ x 3 inch ring from springform pan to asseamble the cake and to have enough room for jello!!! Preheat oven to 350F, line 9 or 9 ½ inch round cake pan with parchment paper, grease with cooking spray, set aside. In a bowl combine flour, baking powder, baking soda and salt, set aside. Melt the butter in a small sauce pan over low heat and set aside to cool. Transfer melted butter to a large bowl and using electric mixer on a low speed mix in sugar (it will be grainy), then mix in egg, milk, yogurt and vanilla. Slowly add dry ingredients into egg mixture and mix on low speed until combined spread the batter into prepared pan and bake 18-20 minutes (until the toothpick inserted in the center comes out clean). Let it cool in the pan for 10 minutes then transfer to a rack to cool completely. Transfer cooled cake onto serving plate. And place the ring from 9 or 9 ½ x 3 inch springform pan around the cake. You can do the following or see comments in the description above for another alternative. Dissolve 1 ½ tsp. gelatin in 2 Tbsp. cold water and let it set for a few minutes, then microwave or place into a hot water bath to dissolve completely, set aside to cool. Beat cream cheese until light and fluffy. Beat heavy whipping cream until soft peaks form, gradually add powdered sugar and continue beating until stiff peaks form. Mix in vanilla and dissolved gelatin, than add cream cheese and mix to combine. Spread onto cooled cake and place in the fridge for 30 minutes. Prepare Jello with 2 cups boiling water and set aside to cool to room temperature. Wash, hull and halve the strawberries lengthwise, then line around the edges of the cheesecake layer. Line up the next row by stacking slightly on top of the strawberries in the first row, and continue to cover the whole cheesecake layer. Pour the room temperature Jell-O over strawberries(the cheese cream will melt if the jelly liquid is too warm). Refrigerate until jello is set than run a thin knife around the cake and release the springform pan ring and serve.

  • In a large mixing bowl that can be sealed, dissolve jello in boiling water. Add frozen strawberries that have been thawed, and stir until well blended. Turn Angel Food cake upside down and push down in the jello mixture. Cover with lid and seal tightly. Turn bowl upside down two or three times to distribute the strawberries. Turn right side up and push cake down in the jello one more time. Place in the refrigerator until jello has set, approximately 4 hours or overnight. Check after thirty minutes to make sure the cake is submerged in the jello. (Sometimes I have to lay a plate on top to get it to submerge.) Set out on the counter for a few minutes to reach room temperature. Invert cake on a serving platter. Frost with whipped cream or cool whip and serve immediately. Store leftover cake in the refrigerator. Notes: If you do not have a big enough bowl with a seal, you can use a large bowl and place a plate on top of the cake and seal with a plastic wrap or foil. This cake can be made with a sugar free angel food cake, sugar free jello, and unsweetened strawberries.

Steps:

  • Preheat the oven to 350 degrees.
  • Mixing the cake mix, eggs and vegetable oil together, and pour cake mixture into a coated cake pan. Bake for 30 minutes or until cake is done.
  • Remove from oven and poke holes in cake (using a large fork). This is so the Jello can absorb into the cake. In a separate bowl combine Jello with one cup of boiling water. Mix until jello is dissolved.

1 container Coolwhip (light or regular)
1 large package strawberry Jell-O
1 box frozen, sweetened strawberries, drained

Steps:

  • Prepare cake mix as directed. Bake in 13 x 9 cake pan as directed. Remove from oven and poke holes in cake with fork. Every two to three time you poke the cake, turn the fork so as to make bigger holes. (If the holes are not big enough, the Jello will not seep down into the cake). Make sure you poke all the way to the bottom if possible. Prepare Jello using one-half the amount of water. Pour Jello over the top of the cake, covering it completely. Place in refrigerator to cool. Add thawed, sweetened, drained strawberries to the Coolwhip (can dice strawberries smaller if desired). Place in refrigerator. Once the cake has completely cooled, frost with the Coolwhip mixture and top with fresh sliced strawberries if desired.

GLAZE:
1 stick(s) butter or margarine

Steps:

  • For the cake: mix ingredients together and pour into a Bundt pan (or 9x13 glass baking dish).
  • Bake at 350 degrees for 30 minutes or until toothpick inserted in center comes out clean.
  • Remove cake from oven and cool on wire rack for app. 15 minutes before inverting onto cake plate. Make the glaze.
  • For the glaze: In a saucepan, combine ingredients and cook over medium-high heat until margarine has melted. Drizzle over cake.
