5 ounces baby spinach
1 1/2 cups sliced strawberries
1 medium shallot, thinly sliced
1 tablespoon sliced almonds
4 slices bacon, chopped
1 teaspoon whole-grain mustard
1 teaspoon sugar
2 1/2 tablespoons red wine vinegar
1 tablespoon olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Put the spinach, strawberries and shallots in a large bowl.
  • Toast the almonds in a small skillet over medium heat, stirring until golden brown, about 2 minutes. Transfer to a bowl or plate and set aside to cool.
  • Put the bacon in a cold medium skillet; cook over medium heat, stirring occasionally, until browned and crisp, about 10 minutes. With a slotted spoon, transfer to a paper-towel-lined plate; leave the bacon fat in the pan.
  • Take the skillet off the heat and stir in the mustard and sugar until the sugar is dissolved. Add the vinegar and then whisk in the olive oil. Season with 1/4 teaspoon salt and pepper to taste.
  • Add the bacon and almonds to the salad, pour over the bacon vinaigrette, and toss to coat. Serve immediately.

1 pint fresh strawberries, sliced
8 bacon strips, cooked and crumbled
1/4 cup chopped red onion
1/4 cup chopped walnuts
1 cup mayonnaise
1/2 cup sugar
1/4 cup raspberry vinegar

Steps:

  • In a salad bowl, combine the spinach, strawberries, bacon, onion and walnuts. In a small bowl, combine the mayonnaise, sugar and vinegar. Serve with salad.

12 oz fresh pre washed baby spinach
4 large eggs, boiled quartered & set aside
1/2 c real bacon bits or fry your own (extra as garnish if desired)
8 large strawberries quartered or cut into eights for the larger ones
1/2-3/4 c feta cheese crumbles, as desired
1 bottle garlic vinaigrette dressing (or dressing of your choice)
2 Tbsp honey, more or less as desired for taste

Steps:

  • 1. Boil eggs, cool, peel then quarter and set aside till needed.
  • 2. Pour bottled dressing in a small bowl drizzle in the honey, then whisk together till blended. Then add in the bacon bits and whisk or stir again.
  • 3. Add spinach to a large bowl, then drizzle in about 1/2 to 3/4 of the salad dressing, tossing as you coat the spinach leaves. Save remaining dressing for extra if desired.
  • 4. Pour spinach onto a large platter, add the strawberry slices, over top of the entire salad.
  • 5. Add the feta cheese crumbles. Then arrange egg quarters over the surface of the salad and around the outer edge of the salad.
  • 6. Add additional bacon crumbles if desired. Serve and enjoy.

You’ll need:
6 strips bacon
2 tbsp finely minced shallot (about 1 large)
2 tbsp balsamic vinegar
1 tsp Dijon mustard
1 tsp honey
sea salt
2 tbsp extra virgin olive oil
1 bunch spinach, trimmed, rinsed well, and rough chopped
1 pint strawberries, hulled and quartered
black pepper

Steps:

  • Set a medium-sized skillet over medium heat. Cook the bacon until crisp. Set on a paper towel-lined plate to cool. Reserve 2 tablespoons bacon grease. Pour 2 tablespoons warm bacon grease into a small bowl with minced shallot. Use a fork to whisk in the balsamic, Dijon, honey and a pinch of sea salt. Gradually whisk in the olive oil. It’s just fine if the dressing doesn’t emulsify completely. Chop the bacon. Place spinach in a large salad bowl. Drizzle with several tablespoons dressing and toss to coat. Scatter strawberries and bacon, add another drizzle of vinaigrette, and finish with a pinch of sea salt and several twists freshly ground black pepper. Serve right away.
