A simple, healthy Strawberry Blueberry Smoothie made with almond milk, frozen berries and yogurt. Delicious, low calorie, and so fast and easy! Kids love it too.

3/4 cup unsweetened almond milk
1 cup frozen strawberries (about 10 medium/large berries)
1/2 cup frozen blueberries
1 5-ounce container nonfat vanilla Greek yogurt
¼ teaspoon ground cinnamon
Optional additions: a scoop of protein powder (chia or flax seeds, honey, or pure maple syrup for extra sweetness)

Steps:

  • Place all of the ingredients in a high powered blender in the order listed: almond milk, strawberries, blueberries, yogurt, and cinnamon. Blend until smooth.
  • If you'd like a thinner smoothie, splash in a bit more milk. For a thicker smoothie, add a few handfuls of ice. Enjoy immediately, or place in an airtight jar and refrigerate for a few hours.

2 cups strawberries
1 cup blueberries
1 cup coconut water
1 cup strawberry yogurt
Granola, for garnish
Fresh mint, for garnish

Steps:

  • Using the plastic straw, remove the white bitter interior and stem of each strawberry. You do this by centering the straw on the bottom pointed end of the fruit, pushing up through the inside to the top and popping off the stem in one smooth motion. Staying centered on the fruit with the straw is the key to quickly hulling and removing the bitter core of strawberries. (You can alternatively cut the stems and white bitter flesh out with a knife.)
  • In a blender, combine the strawberries, blueberries, coconut water and strawberry yogurt and cover with the lid. Press the setting for puree and let it run until the texture is nice and smooth, at least 30 seconds.
  • Pour into two 16-ounce Mason jars (or glasses), or four 8-ounce jars. Garnish with granola and mint leaves.

This is a fast vegan smoothie with a deep pink color and a rich, creamy texture. VERY filling, and perfect for people in a rush in the morning. You don't have to give up a good breakfast when it's this fast to make! I use vitamin fortified soy milk.

½ cup rolled oats
1 banana, broken into chunks
14 frozen strawberries
½ teaspoon vanilla extract
1 ½ teaspoons white sugar

  • In a blender, combine soy milk, oats, banana and strawberries. Add vanilla and sugar if desired. Blend until smooth. Pour into glasses and serve.
