A simple and delicious dessert that can be made ahead of time. It can also be scaled down for fewer guests. From Bon Appetit Weekend Entertaining.

6 (12 ounce) containers fresh strawberries, hulled
1 1/4 cups creme de cassis or 1 1/4 cups strawberry liqueur
1/3 cup sugar
2 tablespoons fresh lemon juice
3 cups whipping cream, chilled
3 tablespoons powdered sugar

Steps:

  • Halve or quarter the berries, depending on their size.
  • Combine first 4 ingredients in large bowl. Let stand at room temperature 1 hour, stirring occasionally. (Can be prepared 3 hours ahead. Refrigerate.).
  • Whip cream and powdered sugar in large bowl until stiff peaks form. Spoon 2/3 cup fresh berries and some juices into each of 20 balloon glasses. Top each with spoonful of whipped cream and serve.
  • Serves 20.

This is a quick, easy way to prep strawberries for strawberry shortcake or just to serve with a thick creamy yogurt.

1/4 cup sugar

Steps:

  • Wash the strawberries and remove the green stems.
  • Cut the strawberries and place them in a bowl.
  • Toss them with the sugar and cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours and even overnight.
  • The sugar will draw moisture out of the berries and naturally make a sweet strawberry syrup.

2 teaspoons freshly ground black pepper
1 cup fresh basil leaves, torn into small pieces and loosely packed

1 tablespoon sugar
1/2 cup water

Steps:

  • Stem and wash the strawberries and drain.

  • Cook over medium heat until mixture is reduced to about half a cup. Chill.
  • Serve the berries in individual bowls and pour the syrup over them.
