½ pound raspberries
3 tablespoons white sugar, divided
1 tablespoon water
1 teaspoon lemon juice
¼ cup amaretto liqueur
1 cup heavy whipping cream
1 (8 ounce) container mascarpone cheese
1 cup crushed amaretti
4 whole amaretti cookies

Steps:

  • Reserve 6 raspberries for garnish. Place remaining raspberries in a saucepan and add 2 tablespoons sugar, water, and lemon juice. Bring to a simmer over low heat and cook, stirring occasionally, until raspberries break down, 5 to 7 minutes. Drain through a fine mesh sieve set over a bowl to remove seeds and reserve raspberry sauce.
  • Combine amaretto liqueur, heavy cream, and remaining sugar in a mixing bowl. Whip until soft peaks form. Add mascarpone cheese and blend thoroughly.
  • Place 1 or 2 tablespoons crushed amaretti in the bottom of a serving glass. Add whipped mascarpone mixture and a layer of raspberry sauce. Repeat layers and top with 1 reserved raspberry and 1 whole amaretti cookie. Repeat with remaining ingredients.

3 eggs, separated
2 ounces sugar
One 8-ounce container mascarpone
Salt
1 1/2 cups roughly crumbled amaretti cookies
1 shot brandy
Cocoa powder
Shaved dark chocolate, for garnish
Fresh seasonal berries, for garnish
Fresh mint, for garnish

Steps:

  • Mix the egg yolks with half the sugar until you obtain a creamy light mixture. Work the mascarpone in a separate bowl using a wooden spoon, making sure you eliminate any lumps, then add to the eggs and continue to mix well.
  • In another bowl, mix the egg whites with a pinch of salt and the remaining sugar until they reach a somewhat firm peak, and then fold them into the mascarpone.
  • Add the cookies to a medium bowl and stir in the brandy (just until moistened, you don't want them soggy). Add a dash of cocoa powder. Divide the cookie crumbles into the bottom of 6 glasses.
  • Add the mascarpone cream to a pastry bag and pipe the cream into each glass. Top with a sprinkle of cocoa powder and shaved dark chocolate. Garnish with a few berries and a sprig of mint.

6 tablespoons sweet Marsala (preferably imported)
3 tablespoons whipping cream
3 tablespoons sugar
3 cups sliced hulled strawberries (about 15 ounces)
2 1/4 cups coarsely crumbled amaretti cookies (Italian macaroons; about 4 1/2 ounces)*

Steps:

  • Combine mascarpone, 3 tablespoons Marsala, cream, and 2 tablespoons sugar in medium bowl. Stir gently until well blended. Combine strawberries, remaining 3 tablespoons Marsala, and 1 tablespoon sugar in another medium bowl; toss to blend. Cover mascarpone and berry mixtures; refrigerate 30 minutes.
  • Place 2 tablespoons crumbled cookies in each of 6 goblets. Divide strawberry mixture with juices among goblets. Top berries with mascarpone mixture, then remaining cookies. Cover and chill at least 30 minutes and up to 2 hours.

4 tablespoons balsamic vinegar
4 tablespoons sugar
2 tablespoons sugar
3 egg yolks
4 teaspoons Amaretto
8 ounces mascarpone cheese
5 ounces whipping cream
2 tablespoons toasted almonds, chopped fine
amaretti cookies or ladyfinger

Steps:

  • Strawberries:.
