2 pints fresh strawberries
3 tablespoons butter
1/4 cup sugar
2 tablespoons water
3 slices lemon peel, 3 thin strips
1 tablespoon Grand Marnier
2 tablespoons brandy
1 quart vanilla ice cream

Steps:

  • Wash berries.Drain on towel and set aside.
  • In chafing dish,heat butter to bubbly.Add sugar,lemon peel and liqueur.Stir on high heat for 2-3 minutes,or until sugar dissolves,amd mixture is syrupy.
  • Warm brandy.Ignite and pour over syrup.
  • When flames die,stir in 1 scoop of ice cream until melted.
  • Add berries.
  • Poach for 1 minute.Continually spooning sauce over berries.
  • Spoon remaining ice cream into dessert dishes.
  • Top with berries and sauce.
  • Serve at once. And enjoy -- .

My mom made this recipe frequently when I was growing up. It is so easy and I always get rave reviews. I've used blueberry pie filling and fresh strawberries instead of cherry. My father-in-law always requested this on his birthday.

1 1/2 cups graham crackers, crushed
1/4 cup sugar
5 tablespoons margarine, melted
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar
1 (8 ounce) container Cool Whip
1 can cherry pie filling

Steps:

  • Mix in food processor, graham crackers and sugar.
  • Add melted margarine, process, and press into bottom of 13 x 9 pan.
  • In a mixing bowl, cream together the cream cheese and powdered sugar until smooth.
  • Add Cool Whip and blend.
  • Spread over prepared crust.
  • Top with cherry pie filling or filling of choice.
  • Cover and chill in refrigerator for at least 6 hours.

Warm, boozy cherries over ice cream is a classic dessert, and it's so easy to do. We like ours over chocolate ice cream (but when Bobby doesn't quite have the energy to make this, you know he's always got Cherry Garcia in the freezer).

Two 16-ounce cans whole cherries in juice, drained and juice reserved
1 tablespoon sugar
1 tablespoon cornstarch
1/4 cup kirsch, Cognac, or freshly squeezed orange juice
1 quart chocolate ice cream

Steps:

  • In a small bowl, whisk together 1/4 cup of the reserved cherry juice, the sugar, and cornstarch until the sugar and cornstarch dissolve.
  • Combine the remaining cherry juice and the cornstarch mixture in a large skillet over medium heat. Cook, stirring occasionally, until thickened, about 2 minutes. Stir in the cherries and kirsch and cook until the cherries are warmed through, about 2 minutes more.
  • Place 2 scoops of ice cream in each serving dish. Divide the warm cherry topping among the dishes and serve.

When I tell my guests that this is dessert, I often have to convince them that it really is acceptable to put vinegar on fresh berries. More than acceptable, actually, it is exquisite. Sweet-tart balsamic vinegar flavored with fruit is a perfect counterpoint to luscious, sweet strawberries. This is especially beautiful with large strawberries or with a combination of strawberries, raspberries, and blackberries.

Yield makes 4 servings

Number Of Ingredients 3

1 16-ounce container ripe strawberries, hulled and quartered, or a combination of strawberries, raspberries, and blackberries (about 4 cups)
1/2 cup dark cherry- or raspberry-flavored balsamic vinegar
Whipped cream

Steps:

  • In a medium mixing bowl, place the berries and pour the vinegar over them. Place in the refrigerator for 30 minutes.
  • Use a slotted spoon to divide the berries among 4 champagne glasses-let as much or as little vinegar into the glass as desired. Top with a spoonful of whipped cream. Serve cold.
  • Use fresh strawberries in season-remember they are only truly in season locally for about 3 weeks, depending on where you live. Underripe berries are not sweet enough to offset the tart vinegar.
