BERRIES IN THE SNOW DESSERT

A refreshing and creamy dessert that's topped with delicious fruit filling.

Yield 9 x 13 inch pan

Number Of Ingredients 5

1 prepared angel food cake (GF Option: use gluten-free angel food cake)
1 package (8-ounce) cream cheese, softened
1 cup powdered sugar
1 carton (16-ounce) heavy cream, whipped OR 1 (12-ounce) tub whipped topping
2 (21-ounce) cans cherry pie filling (GF Option: use gluten-free pie filling)

Steps:

  • Tear angel food cake into bite size pieces; place in large mixing bowl.
  • Beat together cream cheese and powdered sugar until smooth. Fold in whipped heavy cream.
  • Mix cream cheese mixture and cake together. Spoon into 9 x 13 pan. Top with cherry pie filling.
  • Refrigerate for 4 hours or overnight.
  • Cut into squares and serve.

This is an SCA replica of a popular 1500s recipe. It's a fluffy, sweet white mousse served with strawberries in spiced syrup.

Number Of Ingredients 9

8 egg whites
1 pint whipping cream
1/2 cup sugar
1 -2 tablespoon rose water
2 pints strawberries
1 cup red wine
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon ginger

Steps:

  • Whip cream and set aside.
  • Then beat egg whites until they form soft peaks.
  • Add egg whites to whipped cream and whisk together.
  • Add rose water and sugar - adding a little sugar at a time. This stuff will have a consistency something like Cool-Whip, but will taste lots better.
  • Clean strawberries and place into bowl.
  • Mix red wine, sugar, cinnamon, and ginger. Pour mixture over strawberries and allow to marinate for an hour or so.
  • Serve "snow" with strawberries on top and with a couple shortbread cookies on the side.

1 large angel food cake
8 oz cream cheese
1 pkg strawberry glaze
1 large cool whip
1 c confectioners' sugar
1 pkg strawberries

Steps:

  • 1. Combine berries and juice with pie glaze and confectioners sugar. Set aside. Cut cake in thin slices. Combine whipped topping and cream cheese in mixer. Put in 9 x 12-inch glass pan or pretty glass bowl. Layer it starting with topping, then cake. Alternately layer until cake is gone. Last add the strawberry mixture and chill overnight.

This trifle is so good, very rich, but can easily be made with low fat or fat free ingredients. Use a large trifle bowl, or clear bowl for the best presentation. It makes a big batch, so cut if half if you don't want to feed a crowd.

1 angel food cake, torn into bite size pieces
8 ounces cream cheese, softened
1 (8 ounce) can sweetened condensed milk
12 ounces Cool Whip
2 pints strawberries
1 cup sugar
2 tablespoons strawberry gelatin
3 tablespoons cornstarch
1 cup water

Steps:

  • Mix the water, sugar and cornstarch in a pan.
  • bring to a boil over medium high heat and boil for one minute.
  • remove from the heat and add the gelatin powder.
  • Stir until blended.
  • Allow the mixture to cool.
  • Slice the berries, add to the jello mixture.
  • In a separate bowl, using an electric mixer, blend the cream cheese and sweetened condensed milk.
  • In a large bowl, add 1/3 the angel food cake, drizzle with 1/3 of the cream cheese mixture, then spread 1/4 of the cool whip over the top.
  • Add 1/3 of the berries mixture to the bowl.
  • Continue to layer until all the ingredients are used, ending with a layer of berries.
  • Top with remaining cool whip.
  • Chill for at least 2 hours.
  • Best if eaten the same day, if it sits overnight, it will be too soggy.

This is a favorite of my pastors- It is light and low in sugar but delicious!

1 pkg whole pre-made angel food cake
1 large container of strawberries
2 box vanilla sugar free instant pudding
4 c milk
2- pkg or tubs of sugar free cool whip
2 pkg sugar free strawberry glaze

Steps:

  • 1. In a large 13x9 pan break into pieces the angel food cake and make a layer in the pan
  • 2. In a bowl mix together the 2 boxes of pudding and the milk till slightly stiff
  • 3. Add in softened Cool Whip and stir well until all lumps are gone- set aside
  • 4. Wash strawberries- take caps and ends off then slice or chop the strawberries. ( I chop - it makes more)
  • 5. Combine the glaze and the strawberries.
  • 6. Pour the vanilla pudding mix over the cake pieces, spread evenly all over. Now pour the strawberries and glaze mix on top of this- Let chill in refrigerator. Serve chilled.

You'll want an avalanche of this delicious snow. This recipe was given to me by a friend, Anne. It was a highlight of the menu for my oldest daughter's 21st birthday. Very easy and quick to make. For those who use imperial measure, 500 grams is just over a pound. Please see the note at the bottom.

500 g strawberries, hulled
2 large egg whites, at room temperature
1/2 cup caster sugar
1/2 cup whipping cream
1/4-1/2 teaspoon vanilla (or to taste)
6 -8 strawberries, sliced, for garnish
mint leaf (to garnish)

Steps:

  • Puree strawberries in a food processor or blender.
  • Combine strawberry puree, egg whites and sugar in a bowl and beat until stiff and glossy.
  • Add vanilla to cream, and whip mixture until peaks form.
  • Gently fold cream mixture into strawberry mixture.
  • Spoon into a serving bowl and garnish with strawberry slices and mint (if desired).
  • Cover with plastic wrap and refrigerate until you are ready to serve.
  • This can be made a day ahead. Good luck keeping everyone else in the house out of it.
  • Note: A recent reviewer had trouble getting the mixture to set like a pudding. I should have stated that this recipe does not work if you beat the egg whites separately. The strawberry puree, egg whites and sugar need to be beaten together for this to work properly. I know this only because I tried it the other way once by mistake.

This is a recipe given to me by one of my sister-in-laws.

1 pound(s) strawberries
1 pre cooked angel food cake
1 box(es) instant vanilla pudding
1 1- tub of sugar free cool whip
1 bag(s) sugar free strawberry glaze
2- cup(s) milk

Steps:

  • Pull apart angel food cake into chunks and layer in 9x13 pan
  • In a bowl mix together the pudding mix and milk. Add the softened bowl of cool whip- stir well. Pour this on top of the angel food cake.
  • Wash strawberries and cut top and bottom off. Then cut in 1/2 and slice . Put in a bowl with the strawberry glaze and mix well.
  • Pour this over top of the cake and pudding mix. Spread over evenly. Chill till served.
