I am definitely a pie person, and there is nothing like a fruit pie in the summer time. Stone fruits are so delicious, and berries complement them so well.

1 (15 ounce) box refrigerated pie crusts
2 lbs plums, pitted, cut into 1/2-inch-thick wedges
1 quart strawberry, trimmed and quartered
1 cup sugar
1 1/2 teaspoons sugar
1/2 cup cornstarch
3/4 teaspoon ground cinnamon
1 egg

Steps:

  • Place baking sheet on center oven rack. Preheat oven to 375 degrees.
  • Fit single pie crust into a 9-inch pie pan.
  • Mix fruit, 1 cup sugar, cornstarch and cinnamon; spoon into pie shell.
  • Place remaining pie crust over fruit; flute edge. Cut slits and top and prick with fork to release steam. Brush on egg; sprinkle with remaining sugar.
  • Bake on sheet 1 hour, 20 minutes or until bubbly. (If crust browns too quickly, shield with strips or pieces of aluminum foil.).

Georges's Melon and Wild Strawberries with Sweet Wine image

2 ripe cavaillon melons
2 tablespoons superfine sugar
3/4 cup sweet muscatel wine, preferably Beaumes-de-Venise
Juice of 1/2 lemon
1/4 cup thinly sliced basil leaves
1 cup small strawberries, quartered
1 cup raspberries
Mint leaves, for garnish

Steps:

  • Using a stainless-steel knife, cut melons in half, creating a sawtooth edge. Scoop out seeds and stringy fibers. Using a melon baller, scoop flesh from melons. Place melon balls in a large bowl, and sprinkle with sugar. Add wine, lemon juice, and basil. Cover with plastic wrap, and transfer to refrigerator to macerate for 2 hours. Scrape remaining melon from shells until smooth, creating bowls. Cover with plastic wrap, and refrigerate until ready to use.
  • Spoon macerated melon balls into shells. Top with strawberries and raspberries. Garnish with mint, and serve immediately.

2 cups strawberries
3 small cantaloupe
1 cup sugar
1 cup dry marsala wine (Mavrodaphne, a red, greek dessert wine is excellent if available)

Steps:

  • Wash and hull the strawberries.
  • Cut each cantaloupe in half and remove the seeds.
  • With a round melon baler, scoop out the pulp.
  • Reserve the cantaloupe shells.
  • Put melon balls and strawberries into a large bowl.
  • Add 1/2-cup sugar and the Marsala wine; mix well.
  • Refrigerate for several hours.
  • Sprinkle the cantaloupe shells with the remaining sugar and refrigerate for several hours.
  • Fill cantaloupe shells with the marinated melon and strawberries.
  • Spoon some of the juice over the fruit.
  • Serve chilled.
