Scones:
1/2 cup diced fresh strawberries
1/4 cup half and half
2 cups all purpose flour
1/2 teaspoon salt
1/4 cup granulated sugar
1 tablespoon baking powder
6 tablespoons cold butter, cut into pieces
1 large egg
2 teaspoons vanilla extract
2/3 cup diced fresh strawberries
Topping:
3 tablespoons granulated sugar
1-1/2 teaspoons water
1-1/2 teaspoons vanilla extract

Steps:

  • Preheat your oven to 375 degrees. Lightly grease (or line with parchment) two baking sheets, or a full-size or mini-scone pan. To make the scones: In a blender or food processor, process 1/2 cup of the strawberries with the half and half or cream until the mixture is smooth. Set it aside. In a large bowl, whisk together the flour, salt, sugar, and baking powder. Cut in the butter, using your fingertips, a fork or a pastry blender. In a separate bowl, whisk together the strawberry/half and half mixture, the egg, and the vanilla extract. Stir this mixture into the dry ingredients. Add the 2/3 cup diced strawberries and stir just until everything is well-combined. This is a wet, sticky dough, good for drop scones. Drop the dough by heaping tablespoonfuls onto the prepared baking sheets; each scone should be about the size of a golf ball. A tablespoon cookie scoop is exactly the right size for this task. Or divide the dough among the compartments of the scone pan of your choice. Bake the scones until they're golden brown, 15 to 16 minutes (on a baking sheet or in a mini-scone pan), or 18 to 20 minutes (in a standard scone pan). Remove the scones from the oven when they're beginning to brown around the edges. Break one open, just to be sure; they should be moist, but not gummy, at the center. To make the topping: As soon as you remove the scones from the oven, make the topping. Combine the sugar and water in a very small (e.g., 1/4- to 1/3-cup size) microwave-safe bowl, stirring until the sugar is moistened. Heat in the microwave for 20 to 30 seconds, until the mixture is bubbly. Carefully remove from the microwave (sugar syrup is very hot), and stir in the vanilla. Stir until the mixture is smooth. Drizzle or brush the topping over the hot scones.

Created this recipe so hubby could eat fresh strawberries in bread pudding which cuts the acidity down. Serve hot or cold with whipped topping or ice cream. This recipe can be cut in half if desired

10 slices dry hard honey-wheat bread or 10 slices of dry hard whole grain bread
1 (8 ounce) package cream cheese
4 eggs
1 cup milk
2 teaspoons vanilla
1/2 teaspoon salt
3/4-1 cup white sugar
2 1/2 cups sliced fresh strawberries
2 1/2 cups sliced frozen strawberries, drained (optional)
Pam cooking spray

Steps:

  • Lay out 10 slices of bread on board. Usually overnight until it is dry and hard.
  • Break into two or three inch pieces. Set aside.
  • In medium mixing bowl add eggs, milk, vanilla and salt. Wisk to whip and mix.
  • In large mixing bowl add cream cheese and sugar. Mix well.
  • Add egg milk mixture a little at a time until cream cheese and egg milk mixture is totally mixed.
  • Fold in 2 cups sliced strawberries, reserving 1/2 cup for the top.
  • Add the hard bread pieces and mix.
  • Preheat oven 350*.
  • Spray Pam into two quart casserole.
  • Put mixed bread mixture in casserole.
  • Sprinkle 1/2 cup reserved strawberries on top.
  • Bake 40 to 50 minutes, covered.

I love all things strawberry so when I was asked to make bread pudding I decided to try adding strawberries. The results were heavenly. I have never liked bread pudding... until now that is. I will definitely be adding this to my list of favorites.

2 tablespoons butter, melted
7 (1 ounce) slices day-old bread, torn into small pieces
¾ cup chopped fresh strawberries
3 eggs
1 ¼ cups milk
¾ cup light cream
¼ cup strawberry preserves
¾ cup white sugar, or to taste
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter the bottom and sides of an 8 inch square baking dish with the melted butter.
  • Toss bread with the chopped strawberries, and place into the prepared pan. Beat the eggs, milk, cream, strawberry preserves, sugar, and vanilla in a medium bowl until frothy. Pour over the bread and lightly press down with a spatula until the bread has absorbed the milk mixture.
  • Bake in the preheated oven for 40 to 45 minutes, or until the top springs back when lightly tapped.

1/2 c butter, softened
3/4 c sugar
3 eggs
1/2 c sour cream
1 tsp vanilla
2 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1 1/2 c chopped fresh strawberries
1/2 c chopped walnuts, toasted

Steps:

  • 1. Cream butter and sugar till fluffy. Beat in eggs, one at a time. Add vanilla.
  • 2. Combine dry ingredients. Add the flour mixture in (3 additions) and the sour cream in (2 additions) alternately starting and ending with flour. Mix only until combined.
  • 3. Fold in strawberries and nuts.
  • 4. Pour into a greased and floured 9 X 5 inch loaf pan.
  • 5. Bake at 350 degrees for 60-65 minutes.
  • 6. Cool 10 minutes; remove from pan to a wire rack to cool completely.

Beat in sour cream, vanilla, and almond extract. Stir into flour mixture only until dry ingredients are moistened. Fold in strawberries and nuts. Grease a 4x8-inch loaf pan. Turn mixture into pan. Bake at 350° for 60-65 minutes, or until wooden pick inserted in center comes out clean. Let stand in pan 10 minutes. Turn out onto a rack to cool
