1 (15 ounce) can chunky tomato sauce
1 (10 3/4 ounce) can 98% fat-free cream of mushroom soup
1 tablespoon dried onion flakes
1 (2 1/2 ounce) jar sliced mushrooms, drained
1 1/2 cups shredded low-fat cheddar cheese
2 tablespoons dried parsley flakes
1/4 teaspoon pepper
3 cups hot cooked elbow macaroni

Steps:

  • In a large pan mix the tomato sauce, soup, onion flakes and mushrooms.
  • Stir in the cheese, parsley, and pepper.
  • Cook over medium heat, stirring ofte, until the cheese melts.
  • Add the elbow macaroni and mix it well.
  • Lower the heat and cover.
  • Simmer for 10 minutes, stirring occasionally.

Though made with the usual ingredients, the sauce is extra silky and glossy, and it clings to the macaroni without having to make make the sauce super thick because the pasta is cooked in the sauce. So there's no risk of gluggy Mac N Cheese or overcooked pasta.

50 g / 3 1/2 tbsp butter
3 tbsp flour
2 cups milk ((full fat preferred but low fat is ok))
2 1/2 cups water
250 g / 2 1/2 cups elbow macaroni (, uncooked)
3/4 cup mozzarella cheese (, shredded)
1 1/2 cups cheese (Cheddar, Colby, Gruyere) (, shredded (Note 1))
Salt and pepper
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp mustard powder

Steps:

  • Melt butter in a medium pot or large saucepan over medium heat. Add flour and cook for 1 minute.
  • Add about 3/4 cup of milk and mix into butter mixture - it will become a slurry pretty quickly.
  • Add remaining milk and mix so the slurry mixes in. Then add water and Seasonings.
  • Add macaroni and mix. Stir occasionally as it comes to heat. When you see wisps of steam as you stir, lower the heat down to medium low.
  • Stir regularly as it cooks for 9 - 10 minutes (it will bubble gently), or until the sauce thickens and the macaroni is just cooked - tender but still firm. It should still be saucey at this stage and thinner than you want.
  • Take it off the stove and stir the cheese in quickly. Adjust salt and pepper to taste.
  • Serve immediately!!

8 ounces elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 teaspoon mustard powder
1/4 teaspoon paprika
1 1/2 cups whole milk
1 1/2 cups grated sharp yellow Cheddar (about 4 ounces)
3 ounces sliced American cheese, diced (about 1/2 cup)
2 ounces cream cheese, cut into small pieces

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Reserve 1 cup cooking water, then drain.
  • Melt the butter in the same pot over medium heat. Whisk in the flour, mustard powder and paprika; cook, whisking constantly, until smooth and slightly darker, about 1 minute. Slowly whisk in the milk and continue to cook, whisking occasionally, until the sauce thickens slightly and comes to a simmer, 7 to 8 minutes. Whisk in the cheddar, American cheese and cream cheese until melted and remove from heat.
  • Add the pasta to the sauce; toss, adding some reserved cooking water as needed to loosen. Season with salt.

2 cups water
1 envelope onion soup mix
1 teaspoon Italian seasoning

2 cups uncooked elbow macaroni
1/2 cup grated Parmesan cheese
1 cup shredded part-skim mozzarella cheese

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add the tomatoes, water, soup mix, Italian seasoning and, if desired, pepper flakes. Bring to a boil. Stir in macaroni. Steps:

  • Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 cup of the pasta water. Set aside.
  • Heat the half-and-half and cayenne in a large saucepan over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Measurements are approximate as I don't follow a recipe and it can be adjusted for personal preference. Can use whole, crushed or diced tomatoes

2 -3 cups uncooked macaroni
1 (19 ounce) can tomatoes
salt and pepper

Steps:

  • Cook macaroni according to direcions.
  • Drain and return to pot.
  • Add tomatoes including juices and heat on low/medium until hot.
  • If using diced or whole tomatoes, crush.
  • Be careful macaroni doesn't stick to bottom of pot - stir frequently!
  • I have added butter and/or cheese whiz for additional flavour.
  • Depending on amount of macaroni cooked, I have used 28 oz can of tomatoes.
  • I have also used italian style tomatoes and chili tomatoes which give it a slightly different flavour, but plain tomatoes are best for our family preference. I have tried canned tomatoes with olive oil and spices (to be used for brushetta) and they are too oily and doesn't result have good results.

3 cups halved cherry tomatoes
cooking spray
1/4 teaspoon black pepper
1 1/2 cups breadcrumbs (italian or other seasoning)
1 teaspoon butter, melted
12 ounces large elbow macaroni
2 cups shredded extra-sharp cheddar cheese
1/4 cup egg substitute or 1 egg, sightly beaten
1 1/2 teaspoons kosher salt
1/4 teaspoon ground red pepper
1 (12 ounce) can evaporated low-fat milk

Steps:

  • Preheat oven to 375°.
  • Place tomatoes in a 13 x 9-inch baking dish coated with cooking spray. Sprinkle with black pepper. Bake at 375° for 30 minutes or until browned, stirring occasionally.
  • While tomatoes cook, Toss bread crumbs with melted butter. Sprinkle the crumbs on a baking sheet, and bake alongside the tomatoes for 12 minutes or until golden, stirring frequently.
  • Cook macaroni in boiling water 7 minutes; drain. Return macaroni to pan; place over medium-low heat, do not heat any higher or cheese and sauce will get grainy. Add cheese and remaining ingredients; cook until cheese melts, stirring constantly.
