2 medium carrots, sliced
2 celery ribs, chopped
1/2 cup chopped onion
2 tablespoons butter
4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
4 cups chicken broth
2 cups cubed fully cooked ham
1 teaspoon chili powder
1/2 teaspoon minced garlic
1/4 teaspoon pepper
1 bay leaf

Steps:

  • In a large saucepan, saute the carrots, celery and onion in butter until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cook for 15 minutes or until heated through. Discard bay leaf.

1 lb lean ham steaks, trimmed of fat
2 tablespoons olive oil
1 large white or sweet onion, chopped (1 cup)
1 bunch green onions, chopped (about 1 cup)
2 large carrots, chopped
2 stalks celery, chopped
1 tablespoon ham-flavored soup base (from a jar)
1/2 teaspoon pepper
2 cans (15 to 16 oz each) navy beans, drained, rinsed
2 cans (15 oz each) Progresso™ cannellini beans, drained
1 can (15 oz) black-eyed peas, drained
4 large Yukon Gold potatoes (about 2 lb), peeled, cubed
1 bag (6 oz) fresh baby spinach leaves

Steps:

  • Coarsely chop ham; reserve bone. In 6-quart Dutch oven, heat oil over medium-high heat. Cook chopped ham in oil 6 to 8 minutes, stirring occasionally, until browned.
  • Add white onion, green onions, carrots, celery, soup base and pepper. Cook 5 minutes, stirring frequently, until onion is tender.
  • Stir in reserved ham bone, the navy beans, cannellini beans, black-eyed peas and potatoes. Add enough water to cover. Heat to boiling; reduce heat to low. Cover; cook 45 minutes, stirring occasionally. Remove and discard ham bone. Stir in spinach just before serving.

Mom's Ham and Bean Soup image

I could not find the perfect recipe so this is my recipe that I came up with after comparing three different ones. I combined the ingredients that I liked and mom's ham and bean soup was invented. Enjoy!

1 ½ cups dried Great Northern beans
4 meaty ham hocks
5 cups water
1 ½ cups sliced celery
1 cup chopped onion
1 large carrot, chopped
3 cloves garlic, minced
½ teaspoon dried thyme, or more to taste
¼ teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Place Great Northern beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain water and transfer beans to a large stockpot.
  • Mix ham hocks, water, celery, onion, carrot, garlic, thyme, black pepper, and bay leaf with beans in the stockpot; bring to a boil. Reduce heat to medium low and simmer until ham is coming off the bones, about 2 hours.
  • Remove ham hocks from soup. Cut meat from bones, discarding fat and bones. Return meat to the pot. Continue cooking until beans reach desired softness.

This hearty soup is perfect for chasing the chills away! From a November 1988 Bon Appetit in the "Cook's Exchange" section.

1 lb assorted dried beans (such as great northern, red beans, black beans, lima beans, etc.)
2 tablespoons salt
6 cups water (or more)
3 hot Italian sausages
2 smoked ham hocks
2 large garlic cloves, minced
2 (16 ounce) cans whole canned tomatoes, undrained
1 large onion, chopped
1 3/4 tablespoons fresh lemon juice
1 teaspoon dried thyme, crumbled
1/2 teaspoon red pepper flakes
1/2 teaspoon garam masala
1/4 teaspoon allspice
1/2 cup chopped fresh parsley
1/2 cup chopped fresh cilantro
2 tablespoons dry sherry

Steps:

  • Rinse beans, place in large pot and add salt and enough water to cover beans by 2 to 3 inches; let soak overnight.
  • Drain beans and return to pot.
  • Add 6 cups water, sausages, ham hocks and garlic; bring to a boil, skimming surface occasionally.
  • Reduce heat, cover and simmer 1 1/2 hours, adding more water if necessary to keep the beans covered.
  • Add tomatoes with liquid,onion,lemon juice, thyme,pepper flakes, garam masala and allspice.
  • Cover and simmer until beans are tender, stirring occasionally, about 1 hour.
  • Remove sausages and ham hocks from pot.
  • Cut sausages into bite-sized pieces and remove meat from ham hocks, cutting into bite-sized pieces;return meat and sausages to pot.
  • (Can be prepared 2 days ahead. Cover and refrigerate. Rewarm over medium heat, stirring frequently.).
  • Stir in parsley,cilantro and sherry.
  • Adjust seasonings and serve.

7 cups water
1 ham bone
2 cups cubed cooked smoked ham
1/4 cup minced onion
1/2 tsp. salt
Dash pepper
1 bay leaf

Steps:

  • Rinse beans. Heat beans and water to boiling. Boil gently 2 minutes. Remove from heat. Cover and let stand 1 hour. Add remaining ingredients. Heat to boiling. Reduce heat, cover and simmer about 1 hour and 15 minutes or until beans are soft. Remove bay leaf and ham bone.
