MELON AND APPLE BERRY CRUMBLE

4 large Granny Smith apples - peeled, cored and roughly chopped
3 tablespoons superfine sugar
2 cups granola cereal
2 cups pound cake or angel food cake, crumbled
1/4 cup all-purpose flour
1/3 cup brown sugar
1/4 teaspoon ground cinnamon
5 tablespoons butter, chopped into chunks and softened
1 small honeydew melon, rind and seeds removed, and diced small
1 cup fresh berries (blackberries, raspberries or blueberries)
1 lemon, juiced
1 pint vanilla ice cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the apples and half of the sugar into a saucepan and cook over a medium heat for approximately 10 minutes or until apples begin to soften. Drain them and set aside to cool.
  • Meanwhile combine the granola, crumbled cake, flour, brown sugar and cinnamon in a medium sized mixing bowl and mix thoroughly. Add the chopped butter and continue stir until the wet and dry ingredients are mixed well and resemble wet bread crumbs.
  • Add the melon, berries, lemon juice and the remainder of the sugar to the apples and place into a deep baking dish. Top the fruit with the crumble mix and bake until done, approximately 30 minutes. You may want to place some foil on the rack under the dish to catch any spills.
  • (Be careful when you remove this dish from the oven, as the bubbling fruit will be very hot.)

This simple, adaptable summer dessert is perfect when there's lots of juicy fresh fruits at the market. An easy streusel forms both the crust and crumble topping, and it's packed with whatever fruit (or combo of fruits) you like. It's especially wonderful with stone fruit like peaches, plums or cherries, but berries work well too.

Nonstick cooking spray, for the pan
1 cup old-fashioned oats
1 cup all-purpose flour
1/3 cup light brown sugar
1/2 teaspoon fine sea salt
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 stick (8 tablespoons) cold unsalted butter, cut into 1/2-inch cubes
1/3 cup granulated sugar
2 tablespoons all-purpose flour
Pinch fine sea salt
5 heaping cups fruit, such as stone fruit or berries, prepared as needed (seeds or pits removed, peeled if desired, chopped if large, left whole if small)

Steps:

  • For the streusel: Preheat the oven to 350 degrees F. Lightly grease a 10- or 11-inch tart pan with nonstick spray.
  • In a medium bowl, stir the oats, flour, brown sugar, salt, baking powder and cinnamon to combine. Drop the butter into the bowl and work it in with your fingertips or a pastry cutter until the mixture comes together to form large clumps. Press about two-thirds of the streusel into the base of the tart pan, taking care to press evenly on both the base and sides.
  • For the fruit filling: In a separate medium bowl, stir the granulated sugar, flour and salt to combine. Add the fruit to the bowl and toss well to coat.
  • Arrange the fruit in an even layer on top of the crust. Crumble the remaining streusel over the surface. Place the tart on a baking sheet. Bake until the fruit is juicy, maybe even bubbly, and the streusel is a deep and even golden brown, 45 to 50 minutes. Cool completely before serving.

I don't tack the word ultimate onto just any recipe. This berry well may be my favorite summer dessert, with the perfect balance of sweet and tart, tender and crisp, fruit and crumble. Some ice cream on the side is highly recommended.

2 cups all-purpose flour
¼ teaspoon fine salt
¾ teaspoon baking powder
¾ cup white sugar
¾ cup frozen unsalted butter
1 ½ teaspoons vanilla extract
2 large egg yolks
1 teaspoon apple cider vinegar, or as needed
1 cup blueberries
1 cup raspberries
1 cup blackberries
1 teaspoon lemon zest
2 teaspoons fresh lemon juice
⅓ cup white sugar
2 teaspoons cornstarch
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
  • Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.
  • Place about 1/2 of the crumble mixture into the bottom of a 2-quart baking dish. Press mixture down using a flat cup until well compacted. Spread the berries over the crust. Sprinkle the remaining crumble mixture on top, squeezing some of it into clumps.
  • Bake in the preheated oven until top is beautifully browned and berry syrup bubbles on the surface, 40 to 45 minutes. Let cool to room temperature, about 30 minutes.
