GRILL BASKET STIR-FRY BEEF AND VEGGIES



Grill Basket Stir-Fry Beef and Veggies image

This is an easy dish to throw together to make in a grill basket on your outdoor barbecue!! You can slice your own beef but purchasing the pre-cut stir-fry beef strips from the grocery store makes it so much faster and easier! Feel free to use your own favorite stir-fry sauce in place of the soy sauce/oyster sauce mixture. Serve this on hot cooked rice.

1/2 cup low sodium soy sauce
2 tablespoons oyster sauce
1/2 teaspoon black pepper (or to taste)
1 -2 tablespoon fresh minced garlic
1 lb boneless beef roast (cut into strips or slices)
1 (8 ounce) package fresh mushrooms, sliced
1 onion, cut into 1/2-inch wedges
1 (7 ounce) can baby corn

Steps:

  • In a small bowl combine the soy sauce, oyster sauce, garlic and black pepper; set aside.
  • When the grill is heated, place an oiled grill basket on the grill over medium heat; add in the steak, mushrooms, onions and corn, cook annd stir frequentely for about 10-15 minutes or until meat is desired doneness.
  • During the last 5-6 minutes of cooking add in a couple tablespoons at a time of the sauce mixture while stirring.
  • Serve oven rice.

2 zucchini, halved lengthwise and sliced into 1/4- to 1/2-inch-thick half-moons
1 fennel bulb, trimmed and cut into thin 1/2-inch wedges
8 ounces cremini mushrooms, cut in half, or quartered if large
1 pound asparagus, trimmed and cut into 2-inch pieces
extra-virgin olive oil
salt and pepper
chopped herbs

Steps:

  • 1. In a large bowl, combine 2 zucchini, halved lengthwise and sliced into 1/4- to 1/2-inch-thick half-moons; 1 fennel bulb, trimmed and cut into thin 1/2-inch wedges; 8 ounces cremini mushrooms, cut in half, or quartered if large; and 1 pound asparagus, trimmed and cut into 2-inch pieces. Drizzle over enough extra-virgin olive oil to coat the vegetables, tossing. Sprinkle with salt and pepper and any chopped herbs you choose.
  • 2. Place the veggies in a grill basket and cook on the hot grill for 15 to 20 minutes, tossing and flipping the basket occasionally, until they're tender and slightly charred at the edges.

How can a stir-fry be grilled, you ask? Easy! Thinly sliced beef and veggies get the high heat grill treatment, adding a bit of char for extra flavor!

Number Of Ingredients 5

1/2 cup KRAFT Peppercorn Ranch Dressing
1/2 tsp. curry powder
1 lb. boneless beef sirloin steak, cut into thin slices
2 cups assorted cut-up fresh vegetables (mushrooms, broccoli and onions)
4 cups hot cooked rice

Steps:

  • Preheat grill to medium-high heat. Combine dressing and curry powder.
  • Place large stir-fry pan on grate of grill. Add 2 Tbsp. of the dressing mixture and the steak to pan. Cook and stir 5 min. or until steak is evenly browned.
  • Add remaining dressing mixture and the vegetables to pan. Cook and stir 5 to 10 min. or until vegetables are crisp-tender and steak is cooked through. Serve over the rice.
