2 pounds sliced zucchini
2 garlic cloves, minced
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper

Steps:

  • In a large skillet, saute the zucchini and garlic in oil until zucchini is crisp-tender, about 5 minutes. Sprinkle with seasonings. Serve immediately.

Sliced zucchini, sweet onion, and diced tomatoes are stir-fried with garlic for a quick and easy Italian-tasting vegetable side dish. Goes great with grilled chicken breast, fish, or pasta. Ever since I have been making it, my husband can eat almost all of it in one sitting!

1 tablespoon olive oil
1 tablespoon minced garlic
1 large sweet onion, thinly sliced
2 medium zucchini, halved and sliced
1 (14.5 ounce) can diced tomatoes
1 pinch Italian seasoning, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Heat oil and garlic in a large skillet or wok over medium heat. Add onion and cook until almost translucent, about 5 minutes. Add zucchini and cook until zucchini is slightly crisp, but not mushy, stirring constantly, about 10 minutes. Add diced tomatoes and cook for 5 minutes more. Add Italian seasoning, salt, and pepper. Serve immediately.

1 lb small, fresh zucchini
1 lb small, fresh crookneck yellow squash
1 large yellow onion
3 teaspoons margarine
3 teaspoons water
salt and pepper

Steps:

  • Rinse zucchini and squash.
  • Cut into thin slices, discarding stems and bottoms.
  • Slice onion into thin rings.
  • Spray a wok or large, covered frying pan with cooking spray.
  • Melt butter in pan over medium-high heat.
  • Add zucchini, squash and onion.
  • Stir-fry for several minutes, until tender-crisp.
  • Season with salt and pepper, to taste.
  • Add 3 T water and cover.
  • Reduce heat and simmer for 6-8 minutes or until mixture meets your criteria for doneness (We like ours slightly soft, others may prefer either crisp or very soft).

I came across this recipe somewhere and wrote it down on paper during my mission to find a zucchini recipe that my oldest son (who hates zucchini) would like. I'm sorry to say I haven't found that recipe yet, but for my husband and I, who like zucchini, this was the best fried zucchini recipe we've ever tried!

1 large zucchini, sliced
1 medium onion, sliced
1/2 cup flour
1/2 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1 cup vegetable oil

Steps:

  • Mix the zucchini and onions together in a gallon-size ziplock bag.
  • In a small bowl, mix the flour, cornmeal, salt, pepper, and garlic powder.
  • Pour the dry mix into the bag, seal and shake well. Let it sit about 30-45 minutes, shaking periodically. A batter will form to coat the vegetables.
  • In a large skillet, heat the oil over medium to medium-high heat. When hot enough, add the vegetables and fry till evenly browned.
