Sweet onions cooked in butter and hard apple cider until tender and flavorful make a sweet and sassy complement to your favorite frank-on-a-bun! Use tongs to serve on hot dogs or other sausages in buns with spicy mustard.

1 tablespoon butter
2 large sweet onions, sliced lengthwise
¼ teaspoon garlic sea salt (such as Morton's®)
½ cup hard cider (such as Woodchuck® Amber)
⅛ teaspoon ground black pepper
1 pinch white sugar, or to taste

Steps:

  • Melt butter in a large skillet over medium heat. Add onions and garlic salt; cook and stir until tender and just starting to brown, 5 to 10 minutes. Add hard cider and black pepper; simmer, covered, until flavors combine, about 10 minutes.
  • Uncover skillet and cook until cooking liquid evaporates, about 5 minutes. Add sugar as needed.

Treat yourself to a homemade TV dinner of sticky sausages topped with fried onions

8 good-quality pork sausages
2 tbsp sunflower oil
2 onions , thinly sliced
1 tsp yellow or black mustard seeds
2 tbsp maple syrup
4 part-baked mini baguettes (or cut a French stick into 4 pieces)
1 tbsp Dijon mustard
large pinch brown or muscovado sugar
2 tsp wine or cider vinegar

Steps:

  • Heat oven to 200C/180C fan/gas 6. Place the sausages in a non-stick baking tray and roast for 20 mins. Meanwhile, heat the oil in a frying pan and cook the onions and mustard seeds together for 10-15 mins until softened and golden.
  • Remove the sausages and brush with maple syrup. Pop the baguettes onto the same baking tray. Increase the oven to 220C/200C fan/gas 7 and return the tray for 5-8 mins until the sausages are dark, shiny and cooked through. Stir the mustard, sugar and vinegar into the onions until the sugar has melted. Cut the baguettes open across the top and put 2 sausages into each. Spoon over the mustardy onions and serve.

22 rashers unsmoked streaky bacon , 6 halved
16 Cumberland sausages
12 chipolatas
3 white onions , sliced
3 red onions , sliced
3 tbsp olive oil
5 tbsp wholegrain mustard
5 tbsp tomato ketchup
5 tbsp dark muscovado sugar
2 tsp Worcestershire sauce
soft rolls , to serve
oven fries , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Wrap a whole bacon rasher around each Cumberland sausage and a half rasher around each chipolata. Spread out in 1-2 large, shallow baking trays.
  • In a large roasting tin, toss the sliced onions with the oil, then roast on the top shelf of the oven with the sausages below for 20 mins. Mix together the mustard, ketchup, sugar and Worcestershire sauce with some seasoning. After 20 mins, stir this into the onions. Roast for 10 mins more until sticky, then remove from the oven and keep warm. The sausages should be cooked by now, but if they're not browned and crisp, tip off any juices and grill until done to your liking.
  • Split the buns and serve with the crisp bacon-wrapped sausages, sticky roasted onions and oven fries, if you like.

CHEESEBURGER HOT DOGS WITH STICKY SWEET & SOUR ONIONS



Cheeseburger hot dogs with sticky sweet & sour onions image

Combine two barbecue favourites in one with these cheeseburger hotdogs. Serve simply or 'fully loaded' with our homemade burger sauce and onions

500g 15-20% fat beef mince
vegetable oil, for brushing
4 slices of your favourite cheese
4 hot dog buns
1 gherkin, sliced (optional)
2 tbsp sunflower oil
4 onions, finely sliced
1 tsp golden caster sugar
1 tbsp cider, malt, red or white vinegar
4 tbsp mayonnaise
2 tsp mustard (American or English, depending on your preference)
1 tsp ketchup

Steps:

  • If making your own burger sauce, mix all the ingredients together in a small bowl, cover and chill until needed. Can be made up to two days ahead. Tip the mince into a bowl and season well with salt and pepper. Use your hands to scrunch everything together, then divide the mince into four portions. Mould each portion into a sausage slightly longer than the hot dog buns. Roll gently on a tray to neaten, then cover and chill for at least 1 hr. Will keep chilled for up to 24 hrs.
  • Light a barbecue and wait until the coals are ashen, or set a gas barbecue to high. For the onions, heat the oil in a cast iron pan set over the barbecue (or do this in a frying pan on the hob). Scatter in the onions along with a generous pinch of salt and the sugar, and cook for 20-25 mins, stirring now and then until the onions are golden and slightly burnt in places. Carefully splash in the vinegar and cook for a few minutes more until the onions are jammy. Remove from the heat and set aside.
  • Brush a little oil over the hot dogs and barbecue for 10 mins until just cooked through, with char marks on all sides. Drape the cheese over the hot dogs and continue to cook for a few minutes until the cheese has melted - if your barbecue has a lid, close it to melt the cheese quickly. Meanwhile, toast the cut sides of the buns if you like. Stuff the buns with the hot dogs, then top with the sticky onions, gherkins and burger sauce, or whatever your favourite condiments are.
