15-Minute Blueberry Compote image

This wonderfully flavorful blueberry compote is made with fresh blueberries and just a touch of sweetener.

Number Of Ingredients 4

1 cup fresh blueberries ((150 grams))
1 tablespoon water
1 teaspoon fresh lemon juice
1/2 teaspoon stevia glycerite ((equals about 1/4 cup sugar))

Steps:

  • Place the blueberries, water, lemon juice and stevia in a small saucepan and mix gently. Heat over low heat.
  • Cook, stirring occasionally with a wooden spoon, until the blueberries are very soft and starting to burst. This should take 10-15 minutes, depending on the level of heat you use.
  • Remove the saucepan from the heat. Allow to the compote to slightly cool and thicken, about 2 minutes. Serve alone in dessert bowls, or as a topping.

4 cups fresh blueberries
1/2 cup sugar
1/3 cup orange juice
3 slices lemons

Steps:

  • Add all the ingredients to a slow cooker insert; stir to combine.
  • Cover and let stand at room temperature 15 minutes or in the refrigerator for 1 hour to give the berries a chance to exude some liquid.
  • Cook on LOW for 3-4 hours.
  • Turn off the cooker; remove the lid and let the blueberroies cool a bit.
  • Serve warm or at room temperature.
  • OR transfer to a storage container, refrigerate, and serve chilled, ladled into dessert bowls.
  • The blueberries will keep, tightly covered, for 4 days in the refrigerator.

  • Put all ingredients in small pot.
  • Cook over medium heat until hot.
  • Turn heat to medium high.

1/4 cup sugar
Vanilla bean, split and seeds removed

  • Preheat the oven to 450 degrees F.
  • Place the strawberries, raspberries, blueberries and blackberries on a sheet pan and toss with the sugar and vanilla bean seeds. Roast in the oven for 20 minutes. Cool to room temperature before serving.

1/4 golden pineapple, peeled and large-diced
3 half-pints fresh raspberries, divided
2 half-pints fresh blueberries
1 1/2 cups sugar
3/4 cup water
2 tablespoons framboise (raspberry brandy), optional
2 pints good vanilla ice cream

Steps:

  • Place the pineapple in a medium saucepan, then add 2 half-pints of raspberries, all the blueberries, the sugar, and 3/4 cup water in a saucepan and bring to a boil. Lower the heat and cook uncovered over medium-low heat, stirring occasionally, for 5 to 7 minutes. The juice will become a syrup and the berries will be slightly cooked. Off the heat, stir in the remaining half-pint of raspberries and the framboise, if desired. Set aside until warm.
  • Place about 3/4 cup of fruit in each bowl and top with a scoop of ice cream.
