3 ½ cups vegetable broth
3 cups (1-inch) potato chunks
1 teaspoon salt, or to taste
1 teaspoon dried oregano, or to taste
1 teaspoon dried parsley, or to taste
1 teaspoon dried cilantro, or to taste
½ teaspoon ground black pepper, or to taste
¼ cup finely chopped red bell pepper
¼ cup finely chopped white onion
¼ cup finely chopped leek
¼ cup finely chopped carrot
¼ cup finely chopped celery
4 garlic cloves, minced

Steps:

  • Combine vegetable broth, potatoes, salt, oregano, parsley, cilantro, and pepper in a saucepan over medium-high heat. Bring to a boil; cook until potatoes start to soften, about 5 minutes. Stir in garlic. Add red bell pepper, onion, leek, carrot, and celery; simmer until potatoes are very tender when pierced with a fork, about 10 minutes more.

Great savory waffle to use as a side dish or substitute for the bread to make a great chicken and waffle sandwich.

1 cup all-purpose flour
1 ⅓ cups instant potato flakes
2 teaspoons baking powder
½ teaspoon salt
2 ¼ cups milk
2 eggs, lightly beaten
1 tablespoon canola oil
1 cup shredded Cheddar cheese
6 slices crispy cooked bacon, cut into bits
3 green onions, minced

Steps:

  • Combine flour, potato flakes, baking powder, and salt together in a large bowl.
  • Preheat a waffle iron.
  • Whisk milk, eggs, and oil together in a small bowl. Stir into the flour mixture until just moistened. Fold Cheddar cheese, bacon, and green onions into the batter.
  • Pour batter into the preheated waffle iron. Bake according to manufacturer's directions, until golden brown, about 6 minutes. Repeat with the remaining batter.
