My son works at Longhorn Steakhouse and told me the secret to how they pull off serving perfectly tender ribs throughout the day.Have you ever wanted to grill ribs for a crowd but thought it would be too time-consuming to cook numerous slabs on a grill? Here's how they do it. Note, these are best prepared the day before you need them, as the ribs need to cool down completely after this steaming technique.

1 pork rib rack (your choice, baby back, spare, st louis, etc)
dry rub seasonings, of your choice
barbecue sauce, of your choice

Steps:

  • Preheat oven to 325.
  • Season ribs with your choice of spices.
  • Place ribs on a rack in a roasting pan, and add enough water to the pan so that it just comes up to the ribs - you don't want the water touching the meat.
  • Cover the pan with heavy-duty foil to seal it completely.
  • Bake for 2 1/2 hours. Remove ribs and allow to cool in refrigerator overnight.
  • When ready to serve, heat grill to high; brush ribs with your favorite bbq sauce and grill, turning a few times, until completely heated thru, 5-10 minutes.
  • The ribs will be perfectly tender to the bite.

4 1 1/4-to-1 1/2-inch-thick boneless rib-eye or New York strip steaks (about 12 ounces each) or filets mignons (8 to 10 ounces each), trimmed
2 tablespoons canola or extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • About 20 minutes before grilling, remove the steaks from the refrigerator and let sit, covered, at room temperature.
  • Heat your grill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).
  • Transfer the steaks to a cutting board or platter, tent loosely with foil and let rest 5 minutes before slicing.

2 slabs pork spareribs (about 3 1/2 pounds)
1 1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes
1 to 3 cups white wine vinegar

Steps:

  • Rub salt, black pepper, and red pepper into ribs. Place in deep baking dish, cover, and refrigerate overnight.
  • Preheat oven to 375 degrees F. Pour vinegar over the ribs and bake 1 1/2 hours. Rotate ribs 2 or 3 times during cooking.
  • Remove ribs from baking dish and place in a single layer on baking sheets. Bake at 350 degrees for 1 hour.
  • Cut slabs between bones into individual ribs and place in a baking dish. Spoon sauce over them to coat lightly. Cover pan with aluminum foil and bake until heated through- about 20 minutes. Serve with original sauce on the side.
