1-1/2 pounds boneless beef round steak
1/4 cup chopped onion
1/4 cup butter, melted
2 cups fresh bread cubes
1/2 cup chopped celery
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon poultry seasoning
1/4 teaspoon pepper
1 cup all-purpose flour
2 tablespoons canola oil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/3 cups water
3/4 teaspoon browning sauce, optional

Steps:

  • Flatten steak to 1/3-in. thickness. Cut into six pieces. In a small bowl, combine the next eight ingredients. Place 1/3 cup on each piece of steak; roll up and fasten with a toothpick. Roll in flour. , In a large skillet, brown roll-ups in oil. In a small bowl, combine the soup, water and browning sauce if desired; pour over roll-ups. Cover and simmer for 2 hours or until meat is tender, turning occasionally.

1 lb flank steak, or skirt steak
½ cup soy sauce
3 cloves garlic, minced
1 tablespoon ginger, grated
2 tablespoons honey
1 lime, juiced
1 teaspoon sriracha sauce, optional
1 bell pepper, cut into matchsticks
1 carrot, cut into matchsticks
½ zucchini, cut into matchsticks
16 stalks asparagus, halved
1 red onion, sliced
sesame seed, for serving, to taste
toothpick, to skewer

Steps:

  • In a baking dish with the steak, mix the soy sauce, garlic, ginger, honey, lime juice, and Sriracha sauce (optional).
  • Lightly massage the marinade into the steak and cover. Refrigerate 1-4 hours.
  • Place toothpicks in a bowl and pour water over toothpicks until completely submerged. Water will prevent toothpicks from burning.
  • Once marinated, cut the steak into 8 equal rectangles. You may need to pound the steak thinner if using a thicker cut.
  • Place a few slices of each of the vegetables on a slice of steak, making sure they are all about the same length.
  • Roll the steak up over the vegetables and secure it with a toothpick.
  • In a small saucepan over medium heat, pour in the leftover marinade and bring to a boil.
  • Boil for about one minute, take off the heat, and set aside to use as a glaze.
  • In a grill pan or on the grill over medium high heat, place your steak roll-ups and cook for 2-3 minutes.
  • Flip the roll over and use a heat-safe brush to brush the glaze on each roll.
  • Cook for about one minute longer and remove from heat. Top with sesame seeds.
  • Enjoy!

One of my favorite ways to fix cube steaks! (Prep and cook times are estimates, but I think you could get these on the table within 30 minutes!)

4 -6 cube steaks
1 box Stove Top stuffing mix or 1 box your favorite prepared stuffing
flour, seasoned with
salt and pepper or seasoning salt
oil
1 (10 3/4 ounce) can cream of mushroom soup
1 packet dry onion soup mix

Steps:

  • Prepare stuffing according to package directions.
  • Onto each steak, place a generous helping of stuffing in center.
  • Roll up steak (s) and secure with toothpicks or skewers.
  • Dredge each roll-up in seasoned flour.
  • Brown meat in oil.
  • Remove meat and drain off any excess fat.
  • Combine mushroom soup and onion soup mix in small bowl.
  • Return meat rolls to pan and pour soup combination over meat.
  • Simmer on low heat until meat rolls are heated through and meat is done to your liking.
  • Remove toothpicks before serving.
  • Serve extra sauce over meat roll-ups (Sauce may be thinned by adding a bit of milk).
  • Note: You could probably stuff the meat with a rice-based stuffing if you'd like!

16 slices cooked OSCAR MAYER Bacon, crumbled
8 CLAUSSEN Kosher Dill Pickle Spear s
1 Tbsp. oil
1/2 cup dry red wine
1 WYLER'S Instant Bouillon Beef Flavored Cube
1 Tbsp. flour

Steps:

  • Place onions in slow cooker. Cut steak into 8 equal pieces. Spread with mustard; top with bacon and pickles. Roll up each steak piece, starting at one short side; tie with kitchen string to secure.
  • Heat oil in large nonstick skillet on medium heat. Add roll-ups; cook 3 to 4 min. or until evenly browned, turning occasionally. Transfer to slow cooker. Add wine and bouillon cube; cover with lid.
  • Cook on LOW 7 to 8 hours (or on HIGH 5 to 6 hours). Use tongs to transfer roll-ups to platter; remove and discard string. Cover roll-ups to keep warm. Add 2 Tbsp. liquid from slow cooker to flour in small bowl; whisk until smooth. Ladle remaining cooking liquid into medium microwaveable bowl. Add flour mixture; whisk until blended. This is an easy, quick way to prepare cube steaks. Cube steak is an inexpensive cut of beef, which I've used in the past for salisbury steak. I wanted to cook these steaks but not in a heavy gravy, so this is how lightened them up. You could also substitute flank steak if you can't find cube steaks. DH raved over these and thought I had spent much more time preparing than I actually did. Note: If you cannot find Dale's Steak Seasoning, a good substitute is whisking together 1 tbs. soy sauce and 1 tbs. Worcestershire sauce.

2 cube steaks (approximately 4-inch x 4-inch sized pieces)
2 tablespoons Dale's Steak Seasoning, reduced sodium blend (or 1 tbs. soy sauce and 1 tbs. Worcestershire sauce)
1/4 teaspoon black pepper, freshly ground
1/2 cup Baby Spinach, whole leaves
1/4 cup basil, whole leaves
1/4 cup red bell pepper, sliced thin
1/4 cup goat cheese, crumbled

Steps:

  • Preheat broiler to medium heat or move oven rack to second position under the broiler (depending on what type of oven you have).
  • Pound cube steaks to 1/2-inch thickness (if they aren't already thin enough). Drizzle Dale's Steak Seasoning evenly over both sides of each steak (a little goes a long way) and season with black pepper.
  • Layer baby spinach leaves, basil leaves and sliced red bell pepper atop each steak. For easier rolling, make sure pepper slices are arranged parallel to the direction you plan to roll the steaks. Sprinkle with goat cheese atop these layers to 1/2-inch from outside edge of each steak.
  • Roll each steak up (like a jelly roll), being careful not to spill out the stuffing, and secure open ends with toothpicks.
  • With toothpick-secured sides up, broil steaks for five minutes. Turn over and broil for another five minutes or until desired doneness.
  • Carefully remove toothpicks. This may be served sliced cross-wise and arranged on each plate or whole for each person to slice his/her own.

  • In a large skillet, saute the mushrooms, onions and pepper in butter until tender. 1/4 c moore's steak sauce marinade
4 to 6 slice bacon

  • 1. Marinate steaks in Moore's just a few minutes as they will fall apart if you leave them more than a few minutes. I usually pour the sauce in a gallon zip lock add the steaks and lay flat on counter then flip the bag to finish.

2 lbs flank steak pounded thin (about 1/2 inch)
whole milk mozzerella cheese shredded
1/2 cup sundried tomatoes mushed up
several cloves of garlic crushed (we love garlic so we use alot)
1/2 cup onion chopped super fine
MARINADE AND RUB
olive oil
mccormicks grill mates montreal steak seasoning

Steps:

  • 1. Coat steak with olive oil and season well with Montreal Steak seasoning. Let sit several hours in frig.
  • 2. Mix tomatoes, garlic and onion together.
  • 3. Cover steak with a good layer of mozzerella cheese. Then add the tomatoe garlic and onion mix evenly over cheese.
  • 4. Roll the steak up tightly making sure the stuffing stays even. Tie steak in middle and on both ends to ensure it does not come undone while grilling.
  • 5. Place steak on heated grill and roll every 5 minutes or so to ensure even cooking. Continue to grill until no blood runs from steak when cut in center.
  • 6. remove from grill and let sit for about 5 minutes. Cut into slices and serve.
  • 7. Serve with my butter and onion baked potatoes, grilled fruit and/or grilled onions

1 lb fresh asparagus
(4) 8oz steak fillets (new york strip preferred)
(3) fresh garlic cloves (minced)
4 TS fresh creamery butter (unsalted and softened)
1 ts salt
1 TS ground pepper
2 TS fresh grated parmesan cheese.

Steps:

  • Preheat oven (Bake) to 375 deg. Pound ea. 8oz steak fillet down to aprox. 1/4 inch thick with a mallet. In mixing bowl - mix together fresh creamery butter, salt, ground pepper, and parmesan cheese. Spread butter mixture onto one side of each steak fillet evenly. Steam fresh asparagus for aprox. 5 min. or until slightly firm and remove. Place aprox. 4 asparagus stalks on top of each steak fillet and roll steak tightly around. Pin together with 2-3 toothpicks and set into non-greased casserole dish. Bake for aprox. 15 min. or until desired color. Serve with hollandaise sauce drizzled over the top. Compliment meal with a fresh arugala and tear-drop tomato salad with rice wine vineagar dressing and a glass of cabernet sauvignon.

4 Skirt Steaks
1-2 cup Spinach
6 cloves garlic
2 tablespoon olive oil
1 small onion
1/4 cup Romano Cheese
2 can 28 ounce cans of crushed tomatoes
1 tablespoon sriracha

  • Chop/Mince garlic, onions and spinach and bacon
  • sauté bacon, garlic, onions and then add spinach and parmesan
  • Remove from pan
  • pound steaks and salt and pepper on both sides
  • Put filling in steaks and roll up, tie with string

  • Put steak roll-ups into slow cooker
  • Deglaze pan with 1/4 cup of water, add to slow cooker
  • Add tomato cans (used slightly less than two whole cans) to slow cooker
  • Add Siracha
  • Cook on HIGH for 6 hours

Steps:

  • Cut meat into 8 pieces and pound until 1/4 inch thick.
  • Combine flour, leave in 1 teaspoon salt, and pepper. Dredge seasoned flour into each piece of meat.
  • Mix together bread crumbs, onion, squash, green pepper, celery, 1 teaspoon salt, egg, and 2 tablespoons melted margarine.
  • Spread squash mixture evenly over each piece of meat, roll and fasten with a toothpick.
  • Brown meat rolls on all sides in 1/4 cup margarine in a 4- or 6-quart pressure cooker.
  • Remove rolls from pan.
  • Place 1 cup water and cooking rack or steamer basket in pressure cooker.
  • Put rolls on rack or in basket.
  • Close pressure cooker cover securely. Cook for 15 minutes, at 15 pounds pressure. Cool cooker at once.
  • Remove beef rolls to warm serving platter. Pan juices may be thickened for gravy.

4 stick mozzarella cheese (i used string cheese)

Steps:

  • 1. Butterfly each steak by cutting horizontally through the center, not quite through the other side. Pound flat. Place into marinade. (Steaks can be marinated 30 minutes or up to 48 hours in the refrigerator)
  • 2. Preheat oven to 400*. Place a wire rack into a baking dish.
  • 3. Place 1 flattened steak onto work surface. Spoon 1 tablespoon pesto onto center of steak. Place cheese onto pesto. Roll long ways, folding in the outside edges. Wrap 2 slices of bacon around steak roll, securing with toothpicks.
  • 4. Repeat with all ingredients. Place steak rolls into baking dish. Bake 20-25 minutes. Broil on High last 5 minutes to crisp bacon.
