1 cup kosher salt
1 cup ground oregano
1 cup chili powder
1/2 cup ground black pepper
1/2 cup cumin
1/4 cup garlic powder
1/4 cup cayenne pepper
37 1/2 pounds sirloin steak, cut into 1-inch cubes
18 3/4 pounds peeled and cleaned shrimp (16/20 count)
Oil, for grilling
Taco bar fixings of your choice, for serving

Steps:

  • Heat 2 very large grill pans or griddles to high heat.
  • Mix together the salt, oregano, chili powder, black pepper, cumin, garlic powder and cayenne pepper in a bowl.
  • Put the steak cubes and shrimp in separate large bowls. Sprinkle the spice mixture evenly over both and toss to ensure the steak and shrimp are well coated.
  • Add some oil to the grill pans and, working in batches, grill the shrimp on one grill pan until they turn from translucent to opaque, and the steak on the other grill pan to medium rare, 3 to 5 minutes per batch. Clean and re-oil the grill pans between batches.
  • Serve with the taco bar fixings of your choice.

MEXICAN STREET TACOS

Easy, quick, authentic carne asada street tacos you can now make right at home! Top with onion, cilantro + fresh lime juice! SO GOOD!

2 tablespoons reduced sodium soy sauce
2 tablespoons freshly squeezed lime juice
2 tablespoons canola oil, divided
3 cloves garlic, minced
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 1/2 pounds skirt steak, cut into 1/2-inch pieces
12 mini flour tortillas, warmed
3/4 cup diced red onion
1/2 cup chopped fresh cilantro leaves
1 lime, cut into wedges

Steps:

  • In a medium bowl, combine soy sauce, lime juice, 1 tablespoon canola oil, garlic, chili powder, cumin and oregano. In a gallon size Ziploc bag or large bowl, combine soy sauce mixture and steak; marinate for at least 1 hour up to 4 hours, turning the bag occasionally. Heat remaining 1 tablespoon canola oil in a large skillet over medium high heat. Add steak and marinade, and cook, stirring often, until steak has browned and marinade has reduced, about 5-6 minutes, or until desired doneness. Serve steak in tortillas, topped with onion, cilantro and lime.

4 (8-ounce) New York strip sirloin steaks
Steak seasoning
8 ounces clarified butter
12 raw shrimp, skewered (3 on each skewer)
16 ounces raw French fries
Salt
4 lemon wedges, for garnish

Steps:

  • Preheat a grill to high. Alternatively, preheat a broiler to high. Season the steaks liberally with the steak seasoning on both sides. Cook the steaks over high heat to order: about 2 minutes on each side for rare, 2 1/2 minutes on each side for medium-rare, 3 1/2 minutes on each side for medium, and 4 1/2 minutes on each side for medium well. Halfway through the cooking time on each side, turn each steak 45 degrees to make grill marks.
  • Add half the clarified butter to a large skillet and heat over high heat. Add the shrimp skewers and cook the shrimp on both sides until they are opaque throughout, about 1 to 2 minutes per side.
  • Fill a deep fryer with oil and heat it to 350 degrees F. Alternatively, heat oil in a large, heavy Dutch oven to 350 degrees F; do not fill pan more than halfway full with oil. Drop the fries into the fryer and cook until they are golden brown, about 5 minutes. Remove to a paper towel lined plate to drain and season the fries with salt.
  • To serve, place 1 steak on a plate, top the steak with skewered shrimp, and add some French fries. Garnish with a lemon wedge and serve with a small dish of clarified butter on the side. Serve immediately.
