Perfect for lunch boxes, our Steak and Cheese Pizza Pockets are made with Bisquick, cooked steak, marinara sauce and mozzarella cheese.

3 cups Original Bisquick™ mix
2/3 cup very warm water (120°F to 130°F)
2 tablespoons olive oil
1/2 cup marinara sauce
1 cup chopped cooked steak
3/4 cup finely shredded mozzarella cheese (3 oz)

Steps:

  • Heat oven to 450°F. Line cookie sheet with foil; spray foil with cooking spray.
  • In medium bowl, stir together Bisquick mix, very warm water and olive oil until Bisquick mix is moistened. Let stand 15 minutes.
  • Knead dough slightly to form ball. Divide dough into 8 parts. Flatten and use rolling pin to roll each into circle about 1/8-inch thick. Place circles on cookie sheet.
  • Top each with 1 tablespoon marinara sauce, 2 tablespoons steak and 1 1/2 tablespoons cheese. Fold over, and pinch edges to seal.
  • Bake 15 to 20 minutes or until golden.
  • Enjoy hot, or cool completely, wrap in plastic wrap and freeze until ready to use.

My take on a homemade Philly cheese steak pizza! I'm loading up my homemade pizza crust with a quick garlic white sauce, lots of sautéed peppers, onions, and mushrooms. So why order out on Friday Night when you can make it at home?

1 tablespoon butter
1 tablespoon flour
½ cup cold milk
1-3 cloves garlic, pressed
1/8 teaspoon salt
a pinch of black pepper AND nutmeg
¼ cup parmesan cheese
½ recipe homemade
6 ounces of cooked ribeye, skirt,or flank steak, or roast beef (see notes for cooking instructions)
½ green bell pepper, sliced
3-5 mushrooms sliced
½ sweet onion, thinly sliced
3 teaspoons oil (optional)
1 ¼ cup shredded cheese (such as mozzarella or provolone)

Steps:

  • Position a rack in the center of the oven and preheat the oven to 475ºF. Roll the dough out into a 12 inch circle. Create a lip or rim by thickening the dough around the crust portion. This keeps the sauce in instead of running over the sides. Let dough rest for 15-20 minutes while you prepare the sauce.
  • Melt the butter in a small saucepan over medium heat. Whisk in the flour and let cook for 1 minute or until it smells like baked pie dough. Slowly stream in the cold milk while you whisk. Add the pressed garlic and allow the sauce to come to a gentle simmer. Season with salt, pepper, and nutmeg. Remove the sauce from the stove; whisk in the parmesan cheese. Allow the sauce to cool for 5-10 minutes, you can prep your veggies in that time.
  • The veggies can be used raw on the pizza if you prefer. I like to heat a skillet with a teaspoon of oil and cook each onions, peppers, and mushrooms for just a couple minutes separately. You'll use a total of 3 teaspoons of oil to do this. I sometimes let the onions go low and slow for a little longer to get them to sweeten up a bit more, however this is totally optional.
  • Top the dough with sauce, cooked steak, veggies, and shredded cheese. Bake for 12-15 minutes or until the crust is lightly browned and the cheese is bubbling and golden. For the last minute of baking, you can turn it to the broiler setting jus to get everything extra bubbly if you'd like. Slice pizza and serve!

1 tablespoon chopped onion

5 slices process American cheese

Steps:

  • Preheat oven to 400°. In a large skillet, cook beef, onion, salt and pepper over medium heat until meat is no longer pink; drain and cool. , Place 2 biscuits overlapping on a floured surface; roll out into a 5-in. oval. Place about 1/4 cup of meat mixture on 1 side. Fold a cheese slice to fit over meat mixture. Fold dough over filling; press edges with a fork to seal. Repeat with remaining biscuits, meat mixture and cheese. , Place on a greased baking sheet. Prick tops with a fork. Bake 10 minutes or until golden brown.

1 beef top sirloin steak (3/4 inch thick and 1 pound)
3/4 teaspoon salt
3/4 teaspoon pepper

1 prebaked 12-inch thin pizza crust
1/2 cup garlic-herb spreadable cheese (about 3 ounces)
2 cups chopped fresh spinach
1 cup sliced red onion
1 cup sliced fresh mushrooms
1-1/2 cups shredded part-skim mozzarella cheese

8 ounces beef sirloin, thinly sliced
butter-flavored cooking spray
1 (8 ounce) package sliced fresh mushrooms
1 onion, thinly sliced
1 green bell pepper, thinly sliced
1 (10 ounce) container refrigerated pizza dough
12 slices white American cheese
2 cups shredded Mexican cheese blend

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a skillet with cooking spray.
  • Cook and stir beef sirloin in the prepared skillet over medium heat until browned on the outside and slightly pink in the middle, 3 to 4 minutes. Transfer sirloin to a plate.
  • Spray the skillet with butter-flavored cooking spray. Add mushrooms, onion, and green bell pepper; cook and stir until just turning tender, about 5 minutes.
  • Roll pizza dough onto a baking sheet and top with American cheese. Spoon mushroom mixture and sirloin over American cheese layer and top with Mexican cheese blend.

My husband wanted something a little different for pizza night tonight. He wanted a pizza with beef and onions, and maybe a few mushrooms. It sounded to me like he might have been inspired by steak & mushroom pie (especially considering he'd just been to the British import shop & bakery!). So here is my interpretation!

4 tablespoons olive oil, divided
8 ounces sliced mushrooms
2 medium onions, thinly sliced
1 garlic clove, minced
salt, to taste
fresh ground pepper, to taste
1/4 teaspoon fresh thyme
1 -2 tablespoon balsamic vinegar
3/4 lb beef sirloin steak, cut into strips
1 -2 tablespoon flour
1 (12 inch) prepared pizza crust (not prebaked)
1/2 cup pizza sauce (or to taste)
2 cups shredded mozzarella cheese (or to taste)

Steps:

  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Add onions, mushrooms, and garlic and saute 1-2 minutes, or until starting to release juices. Add salt, pepper, thyme, and balsamic vinegar and stir-fry until onions are just turning brown, about 10 minutes. Remove from pan and set aside.
  • In same skillet, heat remaining 2 tablespoons olive oil. Add beef strips and stir-fry until browned, about 4-5 minutes. Add mushroom mixture back to skillet and cook until heated through. Add enough flour to thicken juices. Remove from heat and set aside.
  • Meanwhile, heat oven to 400* F. Spread pizza dough out into a 12 inch circle in a greased pizza pan. Bake at 400* F for about 10 minutes, or until just turning pale golden.
  • Spread sauce over crust. Top with about 1 cup of the mozzarella cheese (use more if desired). Place beef mixture evenly over cheese. Top with remaining mozzarella.
  • Return to oven and bake at 400* F for another 10-12 minutes, or until cheese is melted with golden brown spots.
