3 1/2 lbs red potatoes, peeled,cut into 3/4 inch pieces
1/4 cup juice, from jar of sweet pickles
3/4 cup mayonnaise
1/3 cup buttermilk
4 teaspoons Dijon mustard
1 teaspoon sugar
1/2 teaspoon ground black pepper
3 hard-boiled eggs, peeled,chopped
1/2 cup chopped red onion
1/2 cup chopped celery
1/2 cup chopped sweet gherkin

Steps:

  • cook potatoes in large pot of boiling salted water until just tender, about 10 minutes.
  • drain; transfer to large bowl.
  • Drizzle pickle juice over potatoes and toss gently.
  • Cool to room temperature.
  • Whisk mayonnaise, buttermilk, mustard, sugar and pepper in medium bowl to blend.
  • Pour over potatoes.
  • Add eggs, onion, celery, and pickles and toss gently to blend.
  • Season to taste with salt.
  • Can be made 8 hours ahead.
  • Chill.

Fresh spinach with a creamy dressing that all my friends rave over. The dressing also makes a great vegetable dip.

1 cup slivered almonds
1 cup mayonnaise
½ cup milk
¼ cup white sugar
1 (3 ounce) jar bacon bits
½ cup grated Parmesan cheese
1 (10 ounce) bag baby spinach leaves
½ head cauliflower, chopped

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spread the slivered almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, 5 to 10 minutes. Watch the nuts carefully as they bake, because they burn quickly. Once toasted, set the nuts aside to cool to room temperature.
  • Mix together the mayonnaise, milk, and sugar in a large salad bowl. Stir in the bacon bits and Parmesan cheese until the dressing is well combined and creamy.
  • Place the spinach leaves, chopped cauliflower, and toasted almonds into the salad bowl, and stir lightly to coat with dressing.

A different twist on a spinach salad. The addition of orange juice gives this salad a unique flavor.

1 granny smith apple, thinly sliced
1 c orange juice
10 oz fresh spinach, torn, and chilled
1 medium tomato, cut into wedges
4 slice bacon, crisp-fried, and crumbled
1/3 c walnuts, chopped
1 c mayonnaise

Steps:

  • 1. Combine apple slices with orange juice in bowl. Place spinach in large salad bowl. Drain apple slices, reserving 1/2 cup orange juice. Arrange tomato wedges and apple slives over spinach. Sprinkle bacon and walnuts in center. Blend reserved orange juice with mayonnaise in bowl. Drizzle over salad. ENJOY!
