This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

Steps:

  • In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
  • Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
  • In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

LIME GELATIN
6 oz box lime jello gelatin
2 c boiling water
2 c mini-marshmallows
2 c sprite or 7-up or lemon=lime soda
20 oz can crushed pineapple ,undrained
2 large bananas, sliced
TOPPING
2 large eggs
1/2 c granulated sugar
3 Tbsp all purpose flour
1 c orange juice, fresh
8 oz tub of cool whip,thawed
1/4 c nuts, chopped- optional

Steps:

  • 1. Lime Gelatin: Dissolve gelatin in boiling water. Add marshmallows and stir to dissolve. Add soda, slowly and the pineapple with juice and the banana slices-Pour mixture into a 9x13-inch pan. Chill until set. about 4 hours.
  • 2. Topping: In a medium saucepan, mix eggs, sugar, flour and juice. Cook until thick. Cool until cold. Fold in and blend the thawed cool whip. Spread on the set jello mixture. Sprinkle with nuts, if desired.Freeze until needed. To serve, let rest at room temperature for about 15 minutes before cutting and serving...

1 cup boiling water

6 ounces cream cheese, softened
2 cups lemon-lime soda, chilled
1 carton (12 ounces) frozen whipped topping, thawed

Steps:

  • Microwave 2 cups soda on high until hot, 1-2 minutes. Place hot soda and gelatin in a blender; cover and process until gelatin is dissolved. Add cream cheese; process until blended., Transfer to a large bowl; stir in chilled soda. Whisk in whipped topping. Pour into a 3-qt. trifle bowl or glass bowl. Refrigerate, covered, until firm, about 4 hours.

This is a delicious and refreshing salad that my family begs for when the weather warms up. Perfect for spring and summer! The topping really makes the dish delicious!

2 sm. box orange or lime jello
1 1/2 c boiling water
1 can(s) sprite or 7 up
1 20 oz can(s) crushed pineapple (reserve juice)
2 bananas, sliced
1 c marshmallows, mini
1 can(s) mandarin oranges, drained
TOPPING:
3 Tbsp flour
1/2 c sugar
1 egg, beaten
1 c reserved pineapple juice
2 Tbsp butter

Steps:

  • 1. For Jello: Dissolve the jello in boiling water (I heat it in the microwave to save time) in a large bowl. Add Sprite & refrigerate until thick but not set. The consistency should resemble syrup. Add bananas, pineapple, marshmallows, and oranges. Pour into 13x9 dish. Refrigerate until firm.
  • 2. For Topping: Cook ingredients over medium heat until thickened. The consistency should resemble custard. Let cook.
  • 3. When the jello is set and topping is completely cool, spread topping over jello & enjoy!

This was my favorite when I was a teenager many years ago. Dining at the cafeteria was a real treat and I always had "my" green salad. Later found this recipe at Cooks.com and it's a match to my old favorite. Hope you enjoy. It's really easypeasy!

1 lg. x box lime jello
1(8 oz) pkg cream cheese(*softened)
1 large crushed pineapple, drain most of liquid
2 (10) oz sprite (i just measure out 10 oz in measureing cup)
3/4 c nuts, chopped (iuse pecans)
1 c water

Steps:

  • 1. Dissolve Jello in 1 Cup boiling water. Stir in cream cheese until it is in small pieces. Add crushed pineapple. Add Sprite and nuts. Pour into desired container, refrigerate until set. I use a jello mold, but have also used a 9x13 casserold, cut into squares and served on a leaf of lettuce. ENJOY!

Congealed salads have long been a part of our family's holidays. This one was served first at my husband's parents' holiday table. It was such a hit with everyone, that it became the standard for our gatherings and continues today. So simple, my husband's aunt had given it to them and yet I found a way to simplify it more by using the blender. This is good even using the sugarfree Jello and lite cream cheese, etc. We love it and have even been known to have it for dessert or....breakfast!!!

1 (8 ounce) package cream cheese
1 (20 ounce) can crushed pineapple
1/2 cup pecans, broken

Steps:

  • Dissolve Jello in 1 Cup hot water.
  • Break up cheese in hot Jello.
  • Pour the cheese and Jello mixture into blender, blending until smooth.
  • Add 1 1/2 Cups cold water, blend til smooth.
  • Pour into 8" square Pyrex dish.
  • Then add un-drained crushed pineapple.
  • Add pecans.
  • Cover with plastic wrap while chilling in the refrigerator.
