2 large eggs
2 tablespoons 2% reduced fat buttermilk
1 teaspoon vanilla extract
¼ teaspoon almond extract
⅔ cup almond flour
1 tablespoon Splenda® Stevia Granulated Sweetener
1 teaspoon baking powder
Pinch of salt
½ cup frozen blueberries

Steps:

  • In a bowl, whisk eggs to blend. Add buttermilk and extracts and whisk to blend.
  • Add almond flour, Splenda Stevia Sweetener, baking powder, and salt; mix just until moistened.
  • Preheat a skillet or griddle; lightly oil surface.
  • Spoon 2-3 tablespoons batter onto skillet; when batter spreads, scatter blueberries on top.
  • Cook on medium heat until bubbles form on the surface, about 2 minutes. Flip and cook until golden brown on both sides.

2 1/2 cups all purpose flour
1/4 cup sugar
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 cups buttermilk
2 cups sour cream
2 large eggs
4 teaspoons vanilla extract
3 tablespoons unsalted butter
Additional unsalted butter
Blueberry Compote

Steps:

  • Whisk first 5 ingredients in large bowl. Whisk buttermilk, sour cream, eggs and vanilla in another large bowl. Add to dry ingredients. Stir until batter is just blended but still lumpy (do not overmix).
  • Melt 1/2 tablespoon butter on griddle over medium heat. Pour batter by 1/3 cupfuls onto griddle, spacing 2 inches apart. Cook until bubbles break on surface, about 3 minutes. Turn pancakes over. Cook until bottoms are golden, 3 minutes. Transfer to plates. Repeat with remaining batter, adding butter to skillet as needed.
  • Serve pancakes immediately with butter and Blueberry Compote.

Steps:

1/4 cup water
2 tablespoons Truvia (or another sugar alternative)
1 teaspoon cinnamon
1 tablespoon lemon juice, fresh
1/2 teaspoon almond extract
1-2 Tablespoons cornstarch (optional)
1-2 Tablespoons juice from blueberries

Steps:

  • Place clean blueberries in a medium saucepan with 1/4 cup of water over medium heat. Fold in Truvia, cinnamon and lemon juice. Bring to a boil. In a separate small dish whisk together until smooth the berry juice and cornstarch (optional). Add the slurry to the berry mixture and cook until the sauce thickens up (3-4 minutes). Remove from heat and stir in almond extract.
