CRUST:
1/4 c unsalted butter softened
1/2 c brown suger splenda blend firmly packed
1 egg yolk
1 c all purpose flour
1/4 tsp salt
TOFFEE:
1/4 c unsalted butter softened
1 c brown suger splenda blend firmly packed
1/2 c light corn syrup
1/2 c evaporated milk
1 1/2 tsp vanilla extract
TOPPING:
3 1 ounce square unsweetened chocolate chopped
2 Tbsp brown sugar blend
1 c chopped pecans or walnuts toasted

Steps:

  • 1. Preheat oven to 350 degrees. Lightly spray a 13by9 baking pan with nonstick cooking spray.
  • 2. Beat 1/4 cup butter and 1/2 cup splenda brown sugar at medium speed with mixer until blended,. Add egg yolk and beat. When blended add flour and salt. beat at low speed until blended. Press mixture into bottom of pan.
  • 3. Bake crust 12 to 14 minutes or until light golden brown. Cool in pan on a wire rack.
  • 4. Prepare Toffee: Combine 1/4 cup butter, 1 cup splenda brown sugar,corn syrup,evaporated milk,and vanilla in medium saucepan. Cook over low heat stirring constantly. until brown sugar dissolves.
  • 5. Bring mixture to boil over medium heat and cook until candy thermometer reaches 265 degrees(about 10 minutes)Pour mixture over crust and spread evenly. Bake 10 additional 10 minutes. cool 5 minutes on wire rack.
  • 6. TOPPING: Combine chocolate squares and 2 tablespoons splenda brown sugar. blend in top of double boiler, bring water in boiler to a boil. Cook until chocolate melts and mixture is blended, Drizzle or spread over toffee.
  • 7. Cool completely on wire rack. When chocolate is firm. cut into bars or diamond shapes. Store in an airtight container.

Saw a simple recipe that called for sugar, I switched over to using the sugar substitute and got this simple and pleasing result.

2 tablespoons water
1 1/2 cups raw nuts
6 (1 g) packets Splenda sugar substitute (whichever you prefer) or 6 (1 g) packets Equal sugar substitute (whichever you prefer)

Steps:

  • Bring the water and sugar substitute to a boil over a medium heat.
  • When the sugar substitute is dissolved, add the nuts and stir.
  • After two minutes of stirring, turn off heat and continue to stir.
  • After candy coating has set on the nuts, put on a plate to cool.

1/2 cup light margarine
1 cup Splenda sugar substitute
2 egg whites
1 teaspoon vanilla
1 1/2 cups mashed bananas
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup cocoa

Steps:

  • Preheat oven 350.
  • Spray 13x9 pan with cooking spray.
  • Cream margarine and splenda.
  • Add egg whites and vanilla, beat until combined.
  • Blend in bananas.
  • Combine flour, baking soda, baking powder and salt.
  • Add to creamed mixture.
  • Divide batter in half and add cocoa.
  • Mix well, Spread cocoa batter into pan.
  • Spread remaining batter over this and swirl with knife
  • Bake 25-30 min till toothpick comes out clean.

I used the advice from the Splenda© website to make these pecan bars as diabetic friendly as possible without sacrificing taste or texture. They were a HUGE hit both at home and at work and no one knew they were healthified! This recipe calls for whole wheat flour which also adds a nice nutty flavor to the crust. If you do not use whole wheat flour often, you can freeze it so it will keep longer.

1/2 cup unsalted butter, cut into pieces (use cold from the rerigerator, 1 stick)
1 cup all-purpose flour, spooned into cup and leveled
1/2 cup whole wheat flour, spooned into cup and leveled
1/2 cup Splenda brown sugar blend, spooned into cup and leveled
1/4 teaspoon kosher salt
2 cups pecans
1/2 cup Splenda brown sugar blend, packed
1/4 cup Splenda granular
4 tablespoons unsalted butter, cut into pieces (1/2 stick)
1/4 cup honey
2 tablespoons heavy cream
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350°F; butter and 8-inch square baking dish, then line it with two criss-crossed sheets of parchment paper and butter that.
  • To make the crust, combine the ingredients in a food process and process until fine crumbs form; place crumbs in the prepared baking dish and press down evenly with your fingers (flour your fingers if the dough is too sticky).
  • Bake just until the edges begin to brown, about 25 to 30 minutes.
  • Meanwhile, prepare the filling: Spread pecans out on a fimmed baking sheet and toast in oven, tossing occasionally, until fragrant, about 6 to 8 minutes; coarsely chop (or buy them already coarsely chopped and toast them the same way, heh heh heh).
  • In a medium saucepan, combine the sugar, butter, honey, and cream; bring to a boil, reduce heat, and simmer until slighly thickened, about 4 to 5 minutes.
  • Stir in pecans and vanilla; spread over the baked crust and let cool in the pan for an hour.
  • Once cooled, lift out of the pan using the parchment overhang, and place on a cutting board.
  • Cut into 24 rectangles.
  • NOTE: These bars will remain fresh for 5 days if stored at room temperature in an airtight container. They also freeze well and can be frozen before they are cut, if you like (just bring to room temperature to before cutting).
